SAGE DRESSING PATTIES

These pretty little patties are loaded with flavor and hold their shape well. Celery, onion, bread crumbs and seasonings cook up tender.

Number Of Ingredients 9

1 medium onion, chopped
3/4 cup chopped celery with leaves
3 tablespoons butter, divided
6 slices day-old bread, toasted and crumbled (about 3 cups)
3/4 to 1 cup chicken or turkey broth
2 tablespoons minced fresh sage or 2 teaspoons rubbed sage
2 teaspoons minced fresh parsley
2 teaspoons minced chives
1/2 teaspoon dried basil

Steps:

  • In a large skillet, saute onion and celery in 1 tablespoon butter until tender. Add the bread, broth and seasonings. Shape into six patties. , In another large skillet, melt remaining butter over medium heat. Cook patties on both sides until lightly browned.

1 (9 x 13 inch) pan cornbread
1 (12 ounce) can refrigerated biscuit dough, baked
¾ cup chopped onion
1 cup chopped celery
1 cup chopped mushrooms
⅛ teaspoon celery salt
⅛ teaspoon poultry seasoning
ground black pepper to taste
2 cups turkey broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one baking sheet.
  • Saute vegetables in butter until soft.
  • Break up cornbread and the biscuits into a very large mixing bowl. Mix in the sauteed vegetables and seasonings to taste. Add lots of turkey broth until very moist and will hold it's shape when formed. Shape into patties and place on the prepared baking sheet. Bake at 350 degrees F (175 degrees C) until lightly browned.

I may have mentioned somewhere else that my mother-in-law used to make fried patties from leftover dressing. Well, here they are and they are delicious! 11-27-15

2 c leftover sage dressing (or whatever kind you have)
all purpose flour
2 Tbsp butter or cooking oil

Steps:

  • 1. Shape leftover dressing into patties. If dressing is moist, you won't need to add anything--they should shape right up easily. If they are too dry to hold together, beat in an egg or a little milk.
  • 2. Coat the patties in flour. Heat butter or oil in a large skillet and add the patties, one at a time. Cook on one side over medium heat, about five or ten minutes. Turn patties once and cook on other side.
  • 3. When golden brown, remove to a paper towel to drain. Serve plain or with leftover gravy.

I had some leftover turkey, dressing and gravy and I didn't want the same old boring leftovers. This is what I came up with. This can be doubled very easily. You can even use chicken instead. For the dressing use your favorite. Posted August 29th 2005.

1 cup leftover cooked turkey, cubed
1 1/2 cups turkey stuffing
1 1/4 cups turkey gravy
1/4 cup breadcrumbs
oil (for frying)

Steps:

  • Mix together turkey, dressing, and enough gravy to hold mixture together. If needed add enough bread crumbs to be able to make patty shaped.
  • In a medium sized skillet, heat oil until hot but not smoking.
  • Shape turkey mixture into two patties.
  • Add to skillet, fry until golden brown, about 5 minutes on each side.
  • Remove to serving plate, add rest of warmed up gravy over patties.

1 9x13 pan cornbread
1 12 ounce can refrigerated biscuits, baked
3/4 c chopped onion
1 c chopped celery
1 tsp or to taste rubbed sage or poultry seasoning
ground black pepper to taste
2 c chicken broth. (add until patties will hold shape. may be more or less than 2 cups.)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Lightly grease baking sheet.
  • 3. Saute vegetables in butter until soft.

  • 5. Mix in the sauteed vegetables and seasonings to taste.

TUNA PATTIES WITH RANCH DRESSING

I got this recipe from a Starkist tuna recipe booklet and it's so good. I think the Ranch dressing and cheese make them extra good.

Number Of Ingredients 9

2 (6 ounce) cans tuna, drained
1 1/4 cups breadcrumbs
3/4 cup shredded cheese (mozzarella or cheddar)
1/4 cup mayonnaise or 1/4 cup Miracle Whip
1 egg
1/3 cup ranch dressing (low-fat works fine)
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
vegetable oil

Steps:

  • Set aside 3/4 cup of the breadcrumbs.
  • Combine all ingredients, except oil and reserved breadcrumbs.
  • Form 8 patties, coating each side with the reserved bread crumbs.
  • Heat appx.
  • 1 tbl.
  • oil in nonstick skillet over medium heat.
  • Cook 4 patties for 4-5 minutes on each side.
  • You may need to add additional oil when you're frying them.
  • Add more oil and cook remaining 4 tuna patties.
  • Serve immediately.

1/2 teaspoon salt
1/3 cup basmati rice
2 tablespoons olive oil
1 red onion, chopped
2 garlic cloves
2 teaspoons curry powder
1/2 teaspoon dried chili pepper flakes, crushed
1 small red bell pepper, deseeded and diced
1 cup frozen peas
1 small leek, chopped
1 tomatoes, ripe, skinned, and deseeded
11 ounces garbanzo beans, drained and rinsed
1 1/2 cups breadcrumbs
2 tablespoons cilantro, chopped
1 egg, lightly beaten
vegetable oil, for cooking
salt, to taste
pepper, to taste
1 cucumber, sliced to garnish
lime wedge, to garnish
1/2 cup tahini
2 garlic cloves
1/2 teaspoon ground cumin
1 pinch cayenne pepper
5 tablespoons lemon juice
1 dash extra virgin olive oil
1/2 cup water (estimate)

Steps:

  • To make the dressing, blend the tahini, garlic, cumin, cayenne, and lemon juice in a food processor until creamy. Slowly poor the oil, then gradually add water to make a creamy dressing.
  • Bring a pan of water to a boil. Add the salt and sprinkle in the rice; simmer for 15-20 minutes, or until the rice is just tender. Drain and rinse, then set aside.
  • Heat the olive oil in a large pan. Add the onion and garlic, and cook until they begin to soften. Stir in the curry powder and chili, and cook for 2 minutes. Add the pepper, peas, leek, and chopped tomato flesh, and cook gently for 7 minutes, or until tender. Set aside.
  • Process the garbanzo beans in the food processor until smooth. Add half the vegetables and process again. Transfer to a large bowl and add the remaining vegetable mixture, bread crumbs, chopped fresh cilantro, and egg; mix well. Stir in the rice and season well. Chill for 1 hour, then shape into 4-6 patties.
  • Cook the patties in oil for 6-8 minutes, or until golden, and serve with the dressing, garnished with slices of cucumber and wedges of lime.
