Time 20m

Number Of Ingredients 17

2 tablespoons fresh lemon juice (from 1/2 large lemon)
2 tablespoons Champagne vinegar
1 teaspoon whole-grain mustard
1/2 teaspoon kosher salt
5 grinds black pepper
1/4 cup grapeseed oil
1/4 cup walnut oil (plus more for drizzling, if desired)
2 large or 4 small heads Little Gem lettuce* (cored, leaves left whole or torn in half, if large)
1/2 cup loosely packed flat-leaf parsley leaves
1/4 cup roughly chopped dill
3 large radishes (very thinly sliced)
2 tablespoons minced shallot
8 chives (cut into 1-inch (2.5-cm) pieces)
1/2 cup walnuts (toasted and chopped)
1/4 cup walnut vinaigrette (plus more, to taste)
Kosher salt and freshly ground black pepper
1 ounce ricotta salata cheese

Steps:

  • In a small bowl, whisk together the lemon juice, vinegar, mustard, salt, and pepper. Still whisking constantly, slowly drizzle in both oils and continue to whisk until the dressing is completely emulsified. (Alternatively, place all the vinaigrette ingredients in a small jar, screw on the lid, and shake until completely emulsified.)
  • In a large bowl, gently toss the lettuce, parsley, dill, radishes, shallot, chives, and walnuts.
  • Drizzle the salad greens with the walnut vinaigrette and gently toss again. Season with salt and pepper and toss one last time, making sure each leaf is coated with the vinaigrette. Taste and add more vinaigrette or salt and pepper, if needed. (If you have leftover vinaigrette, you can refrigerate it in a lidded jar for up to several days.)
  • Transfer the salad to a large platter or serving bowl. Using a vegetable peeler, shave strips of ricotta salata over the top. Finish, if desired, with a drizzle of walnut oil. Serve immediately.

LITTLE GEM SALAD WITH GARLICKY ALMOND DRESSING

Little Gem Salad With Garlicky Almond Dressing image

This tart, garlicky dressing is made with toasted almonds and sherry vinegar for a simple but delicious green salad. Little Gem lettuce, a cross between romaine and butter lettuce, has become justly popular for a crunchy salad. Crisp and bright green with small crinkly leaves, it won't immediately wilt when dressed. If unavailable, look for similar small sturdy heads of lettuce or choose hearts of romaine.

Yield 4 to 6 servings

Number Of Ingredients 6

CHARRED LITTLE GEMS CAESAR SALAD

Provided by Food Network

Categories     side-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 13

1 cup Greek yogurt
1/4 cup capers, plus more for sprinkling
2 tablespoons lemon juice
1 tablespoon Dijon mustard
2 small cloves garlic
Kosher salt and freshly ground black pepper
1/4 cup olive oil
1 cup croutons
1 1/2 cups shaved aged Parmesan, or as much as you like
2 tablespoons blended oil
6 heads Little Gem lettuce, quartered and ends trimmed
1/2 large red onion, sliced 1/4-inch thick
1 tablespoon red wine vinegar

Steps:

  • Add the yogurt, capers, lemon juice, Dijon, garlic, 1 1/2 teaspoons salt and 1 teaspoon black pepper to a blender. Turn on the blender and slowly stream in the olive oil until combined, about 1 minute. Pour into a small dish and refrigerate until ready to serve.
  • In a small food processor, dump the croutons and 1/2 cup Parmesan and pulse until in rough bits, then set aside for later.
  • Heat a 14-inch cast-iron skillet over medium heat and add 1 tablespoon blended oil. Once heated add the Little Gem wedges cut-side down and sear until the undersides are medium to dark brown, 3 to 5 minutes. Remove and set aside. (Do this in batches if necessary to not crowd the skillet.)
  • Add the remaining tablespoon blended oil to the same skillet over medium heat. Add the red onions and cook until brown, about 5 minutes. Add the red wine vinegar and cook until the liquid is absorbed, about 30 seconds. Remove from the skillet and place in a small bowl.
  • Use a paper towel to wipe out the skillet, then return to medium-high heat. Add the crouton-cheese mixture and heat until warmed through and evenly browned, about 2 minutes. Remove from the heat.
  • Put a spoonful of dressing on each of 4 to 6 plates and spread in a circle with the back of the spoon. Arrange 4 to 6 pieces Little Gem on each plate. Drizzle with more dressing, then sprinkle on capers, charred onion and thinly shaved Parm all over those babies. Sprinkle your warm cheesy crumbs over the top to finish.

LITTLE GEMS, ASPARAGUS, AND PEAS WITH CREAMY MUSTARD VINAIGRETTE

Little Gems, Asparagus, and Peas with Creamy Mustard Vinaigrette image

This pretty composed salad is oh so very spring. It's a tumble of asparagus, peas, and Little Gem lettuces, which have the crunch of romaine but small enough leaves that you can serve them whole. The make-ahead tangy mustard vinaigrette has a surprise ingredient: nigella seeds. They provide a delicate allium note-like scallions, only subtler.

Time 20m

Number Of Ingredients 10

1 small bunch asparagus (12 ounces), cut into 1-inch pieces (2 cups)
Kosher salt and freshly ground pepper
1 cup shelled fresh or unthawed frozen peas
2 tablespoons heavy cream
1 tablespoon fresh lemon juice
1 tablespoon white-wine vinegar
1 tablespoon Dijon mustard
2 teaspoons nigella seeds
3 tablespoons extra-virgin olive oil
4 heads Little Gem lettuces, leaves separated

Steps:

  • Prepare an ice bath. Cook asparagus in a small pot of generously salted boiling water 1 minute. Add peas; cook 15 seconds more. Drain vegetables and transfer to ice bath until cold. Drain and pat dry.
  • In a jar with a resealable lid, combine cream, lemon juice, vinegar, mustard, nigella seeds, and oil; generously season with salt and pepper. Seal lid and shake vigorously until thick and creamy. Toss asparagus and peas with enough dressing to lightly coat.
  • Toss lettuce leaves with more dressing to lightly coat and arrange on a platter in a single layer. Top leaves evenly with asparagus mixture, and serve with remaining dressing alongside.

TARTIFLETTE

This potato-cheese gratin may sound like some ancient Alpine classic, but it's rather more modern than you'd expect.

Categories     HarperCollins     Side     Christmas     Casserole/Gratin     Easter     Potato     Cheese     Pork     Bacon     Garlic     Milk/Cream     Dinner     Soy Free     Peanut Free     Wheat/Gluten-Free

Yield 4 servings

Number Of Ingredients 9

1kg (about 2 lbs.) Maris Piper potatoes, peeled and cut into slices about 1.5cm thick
2 tablespoons sunflower oil
1 large Spanish onion, thinly sliced
250g (about 2 cups) pancetta, sliced into strips
4 garlic cloves, chopped
100ml (about ½ cup) dry white wine
1 bay leaf
200ml (about 1 cup) heavy cream
450g (about 1 lb.) Reblochon cheese, cut into ½ cm (about ¼ in.)-thick slices, don't remove the rind

Steps:

  • Cook the sliced potatoes in a large pan of boiling salted water for 10-12 minutes, until just tender but not breaking up. Drain and set aside.
  • Meanwhile, heat the oil in a large, ovenproof frying pan (or an ovenproof dish), then add the onion and cook for 8-10 minutes until translucent. Add the pancetta and cook for another 5 minutes, then stir in the garlic. Continue on the heat, stirring occasionally, until the bacon is cooked through and the onions turn lightly golden.
  • Drain off any excess fat. Raise the heat, then pour the white wine into the pan and add the bay leaf. Cook for a couple of minutes, stirring to deglaze the pan, until the wine has reduced by about a third. Add the cream and simmer until that has reduced by about a third too. Remove the pan from the heat and add the potatoes, stirring carefully to coat them with the creamy mixture - it doesn't matter if they start to break up a little. Remove the bay leaf and season the mixture to taste.
  • Nestle about two-thirds of the chunks of cheese in among the potatoes and onions, then scatter the rest over the top. Transfer the pan to the oven and bake for about 15 minutes at 180°C/Gas Mark 4, until golden brown and bubbling.
  • Leave to settle for a few minutes, then serve with a salad of vinaigrette-dressed Little Gems and a few cornichons to cut through the creaminess of the Reblochon.
  • Enjoy with a Burgundian oaked Chardonnay such as St Véran.
