DRAGON BOWL SAUCE

A famous vegetarian restaurant in Vancouver (the Naam) makes an amazing Dragon bowl stir fry with loads of tofu and veg and an amazing sauce. I think there are lots of versions of the dish out there, but one of the best I ever found was posted on www.thestraight.com, originally from 'Ripe From Around Here'. This is my adaptation, a few other favourite ingredients thrown in and lighter in oil. Serve over hot rice and steamed veg or some tofu. I like to stir fry veg and udon noodles in about half of the sauce, and then toss in the remaining sauce when done. Some recipes include less tamari and use miso. Lots of variations you could do, and lots of ways to use it.

1/4 cup nutritional yeast
1 teaspoon turmeric
2 garlic cloves, roughly chopped
2 tablespoons water
2 tablespoons maple syrup
2 tablespoons tamari
1 tablespoon rice vinegar
1 teaspoon flax seed meal (optional)
1 tablespoon grapeseed oil (any light oil, or use flax oil if you're not going to heat the sauce)

Steps:

  • Combine all ingredients in a small food processor or blender. Blend until smooth, although a few chunks of garlic won't hurt.
  • Toss over some sauteed tofu, veg and/or noodles. I like to use about 1/2 the sauce in the pan while everything cooks, and then add remaining sauce once everything is cooked.
  • Store any leftovers in a sealed glass jar in the fridge for up to 1 week.

10 cups water
1 teaspoon salt
1 pound uncooked medium shrimp, peeled and deveined
1 cup ketchup
2 tablespoons lemon juice
2 teaspoons grated lemon zest
4 teaspoons prepared horseradish
1/4 teaspoon Worcestershire sauce
1/8 to 1/4 teaspoon hot pepper sauce
Lemon wedges, optional

Steps:

  • In a large saucepan, combine water and salt; bring to a boil. Add shrimp. Reduce heat; simmer, uncovered, for 2-3 minutes or until shrimp turn pink, stirring occasionally. Drain. Cool in ice water; drain. Refrigerate until serving. , Meanwhile, in a small bowl, combine the ketchup, lemon juice, zest, horseradish, Worcestershire sauce and pepper sauce. On a serving platter, arrange shrimp in groups of three to resemble dragon claws. Serve with sauce; garnish with lemon wedges if desired.

1 1/2 lbs chicken wings (I get Foster Farms )
5 habanero peppers, finely minced
4 tablespoons butter
1 large onion, Chopped
5 garlic cloves, Minced
2 small limes (for about a tsp of very finely minced lime skin and all the juice and the soft pulp)
1/3 cup honey
Frank's red hot sauce

Steps:

  • I make the Dragon Wing sauce the day before, and fridge it overnight. Gives it a chance to meld.
  • Sauce:.
  • Take care when finely mincing the Habeneros (use gloves or a plastic bag to cover your hands). After cutting them open, you can scrape out the pith and seeds for a little less fire.
  • Saute the onions on medium heat in half the butter till translucent. Add in the garlic, habaneros and the rest of the butter. Saute for about 5 more minutes. In the meantime, slice off some of the skin of the limes, and super finely mince. Add all the lime juice and softer parts of the lime pulp and the minced lime zest. Let this simmer until it is thick (5 more minutes). Now add in the honey, and let this simmer until it gets thick again (about 5-10 minutes).
  • Now put in small food processor and saucify it. Fridge it overnight.
  • When making the wings, do it however you prefer. Bake 20 mintues at 500 degrees, or deep fry em first then bake. If you like, before baking, mix the dragon wing sauce with equal parts Franks. Franks lends a nice color and some flavor, and dilutes the fire of the Dragon sauce.

1 tbsp. garlic powder

Steps:

  • Pour 1/2 cup rice vinegar, 1/8 cup white vinegar and 2 tablespoons of chili sauce into a large mixing bowl. Select the amount of chili sauce based on how hot you want the final sauce to be.
  • Stir the vinegars and chili sauce to blend them well.
  • Add 1/2 cup sugar, 2 tablespoons minced garlic, 1 tablespoon crushed red chili peppers, 2 tablespoons onion powder, and 1 tablespoon garlic powder to the bowl.
  • Whisk all the ingredients for 5 minutes, or until the sugar dissolves into the vinegar.
  • Allow the sauce to marinate by allowing it to sit for at least 30 minutes before using it in your recipe.
