Nothing like a one skillet meal. Not only can you have a tasty meal loaded with your favorite meat and vegetables, you have an easy clean up as well. Hope you enjoy!

2 medium baking potatoes, peeled and cut into 1/8-inch slices
1 lb lean boneless sirloin steak
olive oil, extra virgin
1 carrot thinly sliced
1 celery stalk, thinly sliced
1/2 c onion, chopped
2 clove garlic, minced
2 Tbsp all-purpose flour
3/4 tsp thyme, dried
salt and pepper to taste
1 (16-oz) can diced tomatoes
1 (15.25-oz) can kernel corn, drained
1/2 c beef broth

Steps:

  • 1. Cook potatoes in boiling water for about 3 minutes until tender crisp; drain and set aside.
  • 2. Trim visible fat from steak and slice in 1-inch pieces. Heat 2 Tbsp olive oil in ovenproof skillet over med-high heat until hot. Add steak and cook turning occasionally until browned. Remove from skillet and set aside.
  • 3. Add carrots to skillet and saute 4 to 5 minutes, stirring frequently. NOTE: may need to add additional EVOO. Add onion, carrots, celery and garlic; saute until vegetables are tender.
  • 4. Combine flour, salt, pepper and thyme; stir well. Add flour mixture to vegetable and cook 1 minute, stirring constantly. Add beef, tomatoes, corn and beef broth, stirring frequently. Bring to a boil; reduce heat and simmer for 5 minutes, stirring occasionally.
  • 5. Remove skillet from heat and arrange potato slices over top of beef mixture covering completely. Brush potatoes with EVOO; sprinkle with salt and pepper, if desired. Broil 5 1/2-inches from broiler about 15 minutes or until potatoes are lightly browned.

1-1/2 pound ground beef
1/2 cup chopped onion
2 cans (8 ounces each) tomato sauce
1 cup water
1 package (7 ounces) macaroni
1/2 cup chopped green pepper
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet over medium-high heat, cook beef and onion until the meat is no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, covered, until macaroni is tender, stirring occasionally, 20-25 minutes. Add more water if needed.

1 cup Mexican-style corn

1 1/2 cups quick-cooking rice

Steps:

  • Brown beef and onion in a large skillet until no longer pink, drain.

¼ cup medium salsa (such as Pace®)
½ tablespoon Greek seasoning (such as Cavender's®)

1 (15 ounce) can Southwestern-style beans, undrained (such as Ranch Style®)

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and bell pepper and cook until onion is softened and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.

3 cups uncooked yolk-free whole wheat noodles
1 pound lean ground beef (90% lean)
1 medium green pepper, finely chopped
1 can (15 ounces) tomato sauce
1 tablespoon Worcestershire sauce
1-1/2 teaspoons Italian seasoning
1 teaspoon sugar, optional
1 package (16 ounces) frozen mixed vegetables, thawed and drained
1/4 cup minced fresh parsley

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a large nonstick skillet, cook beef and pepper over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. , Add tomato sauce, Worcestershire sauce, Italian seasoning and, if desired, sugar to beef mixture; bring to a boil.
