The secret ingredient in this easy-to-work dough is potato-it provides just the right texture and flavor as well as potassium. You'll need a ricer to ensure smooth potatoes for your dough, but we love this gluten-free recipe so much that we think you'll agree it's worth the small investment.

Yield 1 1/2 pounds pizza dough (4 servings)

2 large all-purpose potatoes (about 14 ounces)
1/3 cup warm water (110 degrees F)
2 teaspoons agave syrup or honey
One 1/4-ounce package active dry yeast
1 cup white rice flour
1/2 cup tapioca starch
Kosher salt
1 large egg white
1 tablespoon extra-virgin olive oil

Steps:

  • Cover the potatoes with water in a medium pot. Bring to a boil and cook until fork-tender, about 25 minutes; remove. Once the potatoes are cool enough to handle, remove the skin and work the potatoes through a ricer set over a large bowl (should have about 2 cups). Set aside.
  • Stir together the warm water, agave and yeast in a measuring cup or small bowl. Let sit until a small layer of foam develops at the top, 3 to 5 minutes. (If this doesn't happen, discard and try again with new yeast.)
  • Add the potatoes, rice flour, tapioca starch and 3/4 teaspoon salt to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until the mixture is combined and forms a fine, crumbly meal. Continuing to mix on medium, add the egg white and oil, slowly drizzle in the yeast mixture and mix until the dough comes together (it will be slightly tacky). Cover the bowl tightly with plastic wrap and set in a warm place until the dough increases by half, about 1 1/2 hours.
  • Form the dough into two or four balls, for small or medium pizzas, then either cook them as desired or wrap them well and freeze for up to 1 month. Thaw frozen dough at room temperature, then shape and cook.

2 heaped tsp golden caster sugar
2 tsp gluten-free baking powder
1 tsp fine salt
1 heaped tsp xanthan gum
5 tbsp olive oil

Steps:

  • Mix the flour, sugar, baking powder, salt and xanthan gum in a large mixing bowl. Make a well in the centre and pour in 250ml warm water and the olive oil. Combine quickly with your hands, to create a thick, wet, paste-like texture, adding an extra 20ml warm water if the dough feels a little dry. Soooo good! And only 70calories per slice (at an average of 8 slices, and sauce that has 60cal. per 1/2 cup), it's fantastic. Although I did burn the bottom of the pizza the first time I made it, this pizza tastes just as good as the market restaurant I went to in central Toronto; a thin crust delight that's sure to please. (Note: Add 1/2 a tsp. more yeast for bigger crust)

2 1/3 cups whole wheat flour
1/2 teaspoon sugar substitute
1 teaspoon salt
1 teaspoon yeast
1 tablespoon milk
1 cup warm water
1/2 teaspoon sage (optional)
3/4 teaspoon paprika (optional)
1/4 teaspoon garlic powder (optional)
1/4 teaspoon pepper (optional)
1/2 teaspoon oregano (optional)
1/2 teaspoon basil (optional)

Steps:

  • Combine warm water, milk, and yeast in small bowl and let sit 5 minutes.
  • In larger bowl, combine flour, sugar, salt and optional seasoning ingredients.
  • Thoroughly mix in wet ingredients until at dough like state (or, if bread machine available, choose dough setting and place all ingredients in machine).
  • If mixed by hand, let rise in warm area for 1/2 to 1 hour.
  • Preheat oven to 445-460 degrees farenheit (based on the thickness of your pizza).
  • Divide dough in half, shape into two 9 to 10 inch pizzas. You may want to allow the dough to rise for 5-10 extra minutes.
  • Spread o 3/4 to 1 cup sauce.
  • Set in oven for 10-12 minutes.

1/4 cup cornmeal

INGREDIENTS TO MAKE SELF-RISING FLOUR:

1 cup Bob's gluten-free self-rising flour
1 cup of dairy-free plain yogurt

Steps:

  • If you do not have self-rising flour make your own by combining the 1 cup of all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt. In a bowl, combine self-rising flour and yogurt, and bring together to form a ball. Knead 5 to 8 minutes. Roll into a pizza shape and add toppings. Preheat oven to 350°F. Place the pizza with toppings in the oven and bake for about 15 - 20 minutes, or until crust is cooked and toppings to your preference. If the dough seems a little wet when you mix it, just add a sprinkling more flour. The more you knead it the better it comes together.

1/4 c. canola oil
1/4 c. shredded mozzarella cheese
1/4 c. shredded cheddar cheese

  • Preheat oven to 375 F. Combine first five ingredients (all but milk) in a large bowl. Beat on medium speed for 2 minutes. Very slowly and gradually add a little milk until a sticky dough is formed. You probably won't use the entire 1/4 c. of milk, but if you need more, add more. Bake at 375 F for 18 minutes or until golden brown around the edges. Top with high quality pizza sauce and your favorite toppings and bake for another 12-16 minutes or until cheese is bubbly.

This pizza has no flour, perfect for low carbs recipe lovers, a total delicious punch of vitamins. Crust free, flour free, gluten free.

FOR THE PIZZA FILLING:
2 eggs
1 tbsp creme fraiche
150 g cheddar cheese (grated)
10-12 small broccoli florets
1 small courgette
1 small red onion
1 small leek (or 2 baby-leeks)
1/2 red pepper
1 tbsp olive oil (to drizzle over the veggies)
80 g feta cheese (crumbled) (tro sprinkle over)
FOR THE PIZZA BASE:
1 egg
2 carrots
1 sweet potato
1/2 tsp himalayan salt (or kosher salt)
2-3 springs thyme (fresh) or parsley, or dill
1/2 tsp italian herbs (dried)
1/2 tsp sesame seeds
1 pinch pepper (freshly ground)

Steps:

  • 1. Preheat the oven at 190 C and prepare two oven dishes. One for the base (approx 20 cm) to be baked in and the second to bake all the vegetables that will be used in the filling or topping, however you want to call it. i will call it filling only because there will be an extra topping which is the feta cheese.
  • 2. Try and prepare base and filling at the same time so they can simultaneously go in the oven otherwise the cooking time will differ. So, wash, peel and chop all the veggies that go into the filling (onion, pepper, courgette, leek and broccoli). Put all in prepared tray and drizzle the olive oil. Wash, peel and, in a larger bowl, grate (on big holes) the sweet potato and the carrot(s).
  • 3. Prepare the base by adding an egg and the remainder of the ingredients (salt, pepper, the dry and fresh herbs to the grated sweet potato and the carrot. Mix well and spread this in the oven dish lined with parchment paper. Make sure it is evenly spread and form some edges.
  • 4. Place both the filling and the base in the preheated oven and bake for 20-25' at 200 C.
  • 5. Meanwhile in a bowl, beat the 2 eggs, add the creme fraîche, the salt, pepper and the grated cheddar cheese.
  • 6. When baking is finished take both out.
  • 7. Place the filling baked vegetables on to the base by spreading them around evenly.
  • 8. Pour the egg mix over the veggies.
  • 9. Sprinkle the feta cheese over and place back into the oven. Bake further at 190 C for approximately 15 minutes.
  • 10. When ready, take out and serve.

2 teaspoon xanthan gum
1/2 teaspoon table salt
1 tablespoon olive oil
3/4 cup warm water
1 teaspoon sugar
1 egg
2 teaspoon active dry yeast
2 teaspoons cornmeal

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper and sprinkle with cornmeal; set aside.
  • Combine dry ingredients in separate bowl.
  • Combine yeast, sugar and water in the bowl of a stand mixer and let stand about 5 minutes.
  • Add egg and oil to wet ingredients to the stand mixer bowl, then add dry ingredients. Mix with the paddle attachment for a minute to thoroughly combine. The dough will be a bit runny, almost like a thick cake batter consistency.
  • Scoop dough onto prepared parchment lined baking sheet and using a spatula, spread out the dough to form pizza crust. Once formed, allow crust to rest for 15-20 minutes uncovered.
  • After crust has rested, cover with your favorite pizza sauce and toppings.
  • Bake at 425F for 15-20 minutes or until top is browned to your preference.
