Number Of Ingredients 8

3/4 cup sugar
4 tablespoons cornstarch
1/2 cup all-purpose flour
4 cups frozen strawberries, unsweetened, partially thawed in refrigerator
1 (11-ounce) box pie crust mix
1/3 cup strawberry nectar, cold, plus 1 tablespoon
1 egg
Sugar, for sprinkling

Steps:

  • Preheat oven to 450 degrees F.
  • Filling:
  • Sift sugar, cornstarch and flour together into a medium bowl. Stir and combine with partially thawed strawberries.
  • In a separate bowl, combine pie crust mix and cold strawberry nectar. Stir until a soft dough forms. Divide into 2 pieces, form into balls, and flatten into disks.
  • On a lightly floured surface, roll 1 of the disks out to an 11-inch circle. Fold in half, place in a 9-inch pie plate, and unfold. Press into plate, but do not stretch. Trim dough 1/2-inch from edge of plate. Roll out second disk and fold in half. Pour filling into pastry-lined plate. Place top crust on top of filling and unfold. Press along rim to seal and trim edges. Press fork into edges or crimp to make decorative edge. Cut vent slits or punch center with small decorative cutter or knife.
  • In a small bowl, lightly beat egg, with 1 tablespoon water and 1 tablespoon strawberry nectar. Brush atop crust and then sprinkle with sugar. Place pie on sheet pan* and place in oven.
  • Bake for 10 minutes, then lower heat to 350 degrees F and continue baking for an additional 50 to 60 minutes; the filling should be bubbling and top crust golden brown. Cool completely before cutting.
  • *TIP: preheat sheet pan in oven for crisper bottom crust.

1 sheet refrigerated pie crust
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries
Whipped cream, optional

Steps:

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.

A little like a baked Alaska in a pie shell, this delight would have once been an early summer treat. With modern supermarkets, fresh berries are available year round. This recipe is also wonderful with peaches or raspberries. From the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

1 pie shell, baked (either store bought or your own recipe)
16 marshmallows
2 tablespoons strawberries, crushed
red food coloring
2 egg whites
1/4 cup sugar
1/4 teaspoon salt
1 quart vanilla ice cream (tempered in the refrigerator to soften slightly...about 1/2 hour)
1 cup fresh strawberries, sliced
whole berries, for garnish

Steps:

  • Heat marshmallows with crushed strawberries slowly, folding over and over until half melted.
  • Remove from heat and continue folding until mixture is smooth and fluffy.
  • Add a drop or two of food coloring (you're looking for a pleasing pink color).
  • Beat egg whites until they hold a peak, add sugar slowly, beating constantly; add salt.
  • Blend lightly with marshmallow mixture.
  • Pile ice cream into pie shell, cover with sliced strawberries and top with fluffy marshmallow meringue swirled attractively.
  • Brown quickly under broiler or hot oven just until the tips of the meringue turn golden, about 30 seconds.
  • Remove pie from oven, tuck whole berries in swirls; serve immediately.

1 cup graham cracker crumbs
6 tablespoons (3/4 stick) butter, melted
2 tablespoons sugar
1 pint strawberry ice cream, slightly softened
1 pint vanilla ice cream, slightly softened
1 16-ounce package frozen unsweetened strawberries, thawed, undrained
16 large marshmallows
2 egg whites, room temperature
1/4 cup sugar
1/8 teaspoon salt

Steps:

  • Preheat oven to 400°F. Combine graham cracker crumbs, butter and 2 tablespoons sugar and press into 9-inch-diameter pie pan with 1 1/2-inch-high sides. Bake until edges begin to darken, about 8 minutes. Cool completely.
  • Spoon strawberry ice cream evenly into crust. Freeze 25 minutes. Spread vanilla ice cream over. Cover tightly and freeze until firm, about 1 hour. (Can be prepared 1 week ahead.)
  • Strain 2 tablespoons juice from strawberries. Stir marshmallows with juice in heavy small saucepan over low heat until melted. Cool completely.
  • Meanwhile, beat whites in medium bowl to soft peaks. Gradually add 1/4 cup sugar and salt and beat until stiff but not dry. Fold in cooled marshmallows. Spread over ice cream. Cover and freeze until ready to serve. (Can be prepared 1 day ahead. Refrigerate thawed berries.) Serve pie, topping each piece with spoonful of strawberries.
