See's is a candy shop here in California that makes wonderful chocolates. Whether this is really a copy of their fudge I don't know. I got it from my mother-in-law, Grandma B, over 30 years ago and use it every time we get the chocolate urge.

2 tablespoons butter
10 large marshmallows
1 cup evaporated milk
2 cups sugar
1 1/2 cups chocolate chips
1 cup chopped walnuts or 1 cup pecans
2 teaspoons vanilla
6 tablespoons butter

Steps:

  • Butter a 9/13-inch pan.
  • In top of double boiler, melt 1/4 cube butter.
  • Add 10 marshmallows, cut in fourths and melt with butter.
  • In large pan, mix 1/2 large can evaporated milk (7/8 cup) and sugar.
  • Bring to a rolling boil and then boil for 6 minutes, watching closely so that it doesn't burn.
  • In a large bowl, combine chocolate chips, walnuts, vanilla and butter.
  • Pour marshmallow mix and hot syrup mix over chocolate chips and nuts.
  • Stir until well blended.
  • Pour into buttered pan and cool.
  • When cool, cut into squares with a sharp knife.
  • Store covered in refrigerator.

½ cup butter
1 cup semisweet chocolate chips
1 teaspoon vanilla extract
2 cups white sugar
5 ounces evaporated milk
10 large marshmallows
1 cup chopped walnuts

Steps:

  • Butter an 8x8 inch dish.
  • Place butter, chocolate chips and vanilla in a mixing bowl. Set aside.
  • In a medium saucepan over medium heat, combine sugar, milk and marshmallows. Bring to a boil, stirring frequently. Reduce heat to low and cook 6 minutes more, stirring constantly. Remove from heat.
  • Pour marshmallow mixture over contents of mixing bowl. Beat entire mixture until it thickens and loses its gloss. Quickly fold in nuts and pour into prepared pan. Refrigerate several hours until firm.

2 cups semi-sweet chocolate chips
1 (11 ounce) bag milk chocolate chips
1 (14 ounce) can sweetened condensed milk
2 tablespoons cream or 2 tablespoons milk
2 teaspoons vanilla extract
1 cup chopped walnuts (optional)

Steps:

  • In a saucepan, over low heat, melt semi-sweet chocolate chips with 2/3 cup sweetened condensed milk, 1 tablespoon cream and 1 teaspoon vanilla.
  • Remove from heat; stir in 1/2 cup walnuts.
  • Spread evenly into foil-lined 9-inch square pan.
  • In another saucepan, over low heat, melt milk chocolate chips with remaining sweetened condensed milk, 1 tablespoon cream and 1 teaspoon vanilla.
  • Remove from heat; stir in remaining walnuts. Spread over fudge in pan.
  • Chill for 2 hours, or until firm.
  • Turn fudge onto cutting board; peel off foil and cut into squares.
  • Store loosely covered at room temperature.

4 teaspoons plus 1/2 cup butter, divided
4-1/2 cups sugar
1 can (12 ounces) evaporated milk
1 teaspoon salt
16 ounces German sweet chocolate, chopped
2 cups semisweet chocolate chips
1 package (11-1/2 ounces) milk chocolate chips
2 jars (7 ounces each) marshmallow creme
4 cups chopped pecans or walnuts, toasted
2 teaspoons vanilla extract

Steps:

  • Line two 13x9-in. pans with foil and grease the foil with 4 teaspoons butter. In a heavy Dutch oven, combine sugar, milk, salt and the remaining butter. Bring to a boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads 234° (soft-ball stage)., Remove from the heat. Stir in chopped German chocolate and the chocolate chips until smooth. Fold in the marshmallow creme, pecans and vanilla. Spread into prepared pans., Refrigerate for 1 hour or until firm. Using foil, lift fudge out of pans. Discard foil; cut fudge into 1-in. squares. Store in airtight containers.

This fudge is easy to make and very delicious. Enjoy this with your loved ones. For best results be sure to use a candy thermometer.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.
