2 cups all-purpose flour
¾ cups cocoa powder (unsweetened)
¾ cup brown sugar (packed, dark or light)
1 tablespoon baking powder
½ teaspoon salt
1¾ cup chocolate chips (or chocolate chunks, I used dark)
¾ cup sour cream (or plain yogurt)
¼ cup butter (unsalted, melted)
¼ cup vegetable oil
½ cup milk
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Prep the oven and muffin pan. Preheat your oven to 425°F. Butter a 12 muffin baking pan or line it with muffin liners.
  • Combine the dry ingredients. In a large bowl, mix the flour, cocoa powder, brown sugar, baking powder and salt.
  • Make the batter. In another bowl, combine the sour cream, melted butter, vegetable oil, milk, eggs, vanilla extract and whisk until well incorporated. Add the wet mixture to the flour mixture and using a spatula mix everything until flour is moistened, please note the batter will be a bit lumpy. Fold in the chocolate chips using a rubber spatula.
  • Bake. Spoon the muffin batter equally into the muffin cups, filling them all the way to the top. Transfer the muffins to the oven and bake for 5 minutes at 425°F then reduce the heat to 350°F and bake for an additional 15 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
  • Cool. Cool the muffins in the pan for about 10 minutes, then transfer them to a cooling rack to finish cooling.

1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup bittersweet chocolate chips
3/4 cup milk
1/2 cup packed light brown sugar
4 tablespoons unsalted butter, melted
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F. Line 12 muffin cups with paper liners.
  • Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Stir in the chocolate chips. In a medium bowl, whisk together the milk, brown sugar, butter, oil, vanilla and eggs until smooth.
  • Quickly fold the milk mixture into the flour mixture with a rubber spatula. Divide the batter evenly among the prepared muffin cups. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Transfer the muffins from the pan to a wire rack to cool.

2/3 cup coarsely chopped dried apricot

Steps:

  • Preheat oven to 350°F.
  • Grease or put paper liners in 12-cup muffin pan.
  • In a small bowl, mix together flour, cocoa powder, baking powder and salt.
  • In a large bowl, mix together sugar, eggs, milk, oil and vanilla. Mix in dry ingredients just until combined. Fold in chocolate and apricots. Scoop batter into prepared muffin cups.
  • Topping: sprinkle with sugar.

Steps:

  • Combine apricot pieces and lemon juice. Cream shortening and sugar, beat in egg and stir in apricots.

1 cup dried apricots, cut up
1 cup boiling water
1/2 cup butter, softened
1 cup sugar
3/4 cup sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange zest
1/2 cup chopped nuts
TOPPING:
1/4 cup sugar
1/4 cup orange juice

Steps:

  • In a small bowl, combine apricots and water. Let stand 5 minutes. Drain well and set aside. In a large bowl, cream butter and sugar until fluffy. Add sour cream and mix well. Combine dry ingredients and add to butter mixture. Mix on low only until combined. Fold in orange peel, nuts and apricots. Batter will be very stiff. Spoon into well-greased muffin tins, filling each cup almost to the top. Bake at 400° for 18-20 minutes or until done. Combine sugar and orange juice; dip tops of warm muffins in mixture.
