Steps:
- Preheat the oven to 400°F (200°C).
- In a medium 8-inch (20-cm) cast-iron skillet, press down half of the ground beef with a spatula to mold into a patty. Season with salt and pepper.
- Place the cast-iron skillet over medium-high heat and sear the patty until browned, about 4 minutes on each side.
- Remove the patty from the skillet and set aside. Repeat with remaining beef.
- Return the pan to low heat and add the onion. Cook, stirring occasionally, until the onion is caramelized, about 20 minutes.
- Add the garlic and spinach, stirring until the spinach is cooked down, about 5 minutes.
- Lay one sheet of puff pastry on a baking sheet and top with 1 patty.
- Layer 4 slices of cheese over the patty, then top with the caramelized onion mixture.
- Top with the remaining 4 slices of cheese and the other patty.
- Cover with the other sheet of puff pastry.
- Trim the edges of the pastry with a knife and discard.
- Crimp the edges of the pastry, then press with a fork to seal.
- Brush the top and sides of the pastry with the beaten egg and sprinkle with sesame seeds.
- Bake for 30 minutes, or until the pastry is golden brown and cooked through.
- Slice and serve with additional toppings of your choice.

- Preheat the oven to 350°F. In a medium skillet, cook the bacon over medium heat until limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve it.
- In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup. - Preheat oven to 350°F.
- In a large bowl combine beef, bread crumbs and milk. Pouring milk directly over bread crumbs. Add 2 tablespoons ketchup, Worcestershire and steak seasoning. Set aside.
- In a small bowl, crack egg and beat it slightly. This helps prevent overworking the meat while combining, resulting in a tougher meatloaf. Add egg to large bowl with meat mixture. Combine well with hands, do not overwork the meat mixture.
- Gentle press meatloaf into bowl and divide in half. Place first half into 7x10" baking dish and form into a flat meatloaf Gently press the center in to create a rim around the outside of the meatloaf. Add shredded cheese i nto the center of the meatloaf.
- Form remaining half of meatloaf in the bowl into a size similar to the meatloaf in the pan. Set op top and press the sides together to seal in the cheese. Form into a loaf shape about 1½ - 2" tall.
- You may notice cracks in the loaf. Run your hands under warm water and then across the meatloaf to smooth the cracks out. Set meatloaf aside.
- In a small bowl combine 4 tablespoons ketchup and 1 tablespoon brown sugar. Mix well with a fork. Apply glaze evenly all over your meatloaf (except the bottom).
- Arrange bacon slices over the top of the meatloaf. Start by wrapping a piece of bacon across the front side and a second piece of bacon across the back side. Arrange remaining bacon over the top. Tuck the ends of the bacon under the meatloaf (this prevents curling).
- Place meatloaf in the oven and bake until bacon is crispy, about 1 hour.
- Remove from oven. Allow to rest uncovered for 20 minutes. Serve and enjoy!

- Heat oven to 350 degrees. In a medium pan, cook bacon just until limp. Remove from pan and set aside. Remove most of the grease and saute the onions just until soft, cool, and set aside.
- In a small bowl, mix the eggs, mayo, pickles, onions, dry mustard, salt, & pepper, just to combine. Place meat and bread crumbs in a large bowl, and mix in the egg mixture. Mix well. With your hand, score the meat into 3 equal sections, just eyeball it if you want. Take one section of the meat mixture and shape it into an oval about 1 inch thick. This is the bottom layer of the meat loaf. Place 3 slices of the cheese on top of this loaf making sure that they are not hanging over the edge of the meat loaf. You don't want it to melt and run out. Take the next 1/3 section of meat, place it on top of the cheese layer and mold it to the same size as the bottom layer. Lay the last 3 slices of cheese on this layer contuning to keep the cheese away from the edges. Place the rest of the mixture on the top and shape to the rest of the meat loaf. Smooth the sides of the loaf with a little water on your fingers so that you can't see that it was done in layers, and to make sure the cheese won't ooze out when it melts. It may seem like alot of fuss, but it is WELL worth the little extra effort. Spread the ketcup or chili sauce over the top, then place the bacon strips across the meatloaf sideways instead of the length, covering the entire loaf. Bake for 1 hour, or until it reaches an internal temp of 160. Remove from oven and tent with foil for about 10 minutes to set. When you slice this, you will be able to see the 2 cheese layers. This sets up nicely and will be great for leftover sandwiches -- .

When a Steven and Chris viewer challenged me to create a healthy pizza, I wanted to make one that tasted like junk food but was actually good for you. Lots of pizza joints have bacon double-cheeseburger pizza, so that was the perfect choice! I cut some of the fat in the beef by swapping half of it for cremini mushrooms and using my mom's burger-enhancing secret ingredient, Worcestershire sauce, along with steak spice to amp up the beefy goodness. The Greek yogurt-mustard sauce brings the whole dish together. The result? The S&C crew gobbling it up faster than I've ever seen, and everyone exclaiming that it tasted like a fast-food burger, but better! Mission accomplished.

- Position rack in bottom third of oven and preheat oven to 500 degrees F.
- In a food processor, finely chop mushrooms, yellow onion and garlic.
- Heat a large non-stick skillet over medium-high heat. Add beef and steak spice and cook, stirring and breaking up meat with a wooden spoon, for 8 minutes or until meat is no longer pink and no liquid remains in bottom of pan. - Heat a grill pan over medium-high heat until lightly smoking. Oil the pan and saute the onions with a pinch of salt until browned, about 4 minutes. Turn the heat to medium and cover the onions to steam for an additional 2 minutes. Remove from the heat.
- Roll two 4-ounce balls of meat and flatten into patties. Sprinkle with salt and garlic powder and brush with mustard. Flip the patties and repeat.
- Turn the heat back to medium-high and when slightly smoking, coat with olive oil. Grill the patties until browned, about 1 1/2 minutes per side. - In a medium bowl, combine cubed chuck roll, salt, black pepper, thyme, and sliced garlic. Stir to coat. Cover and refrigerate to cure overnight.
- Prepare the sauce: in a small mixing bowl, combine the mayonnaise, ketchup, relish, vinegar, lemon juice, salt, and pepper. Whisk together. Refrigerate to bring flavors together.

- Flip the burgers and continue to cook until the second side just begins to brown. Top with cheese and remove from the skillet.
- To assemble: Spread the burger sauce onto both halves of a toasted potato bun. On the bottom bun, layer lettuce, tomato, and a sprinkle of salt. Add one burger patty, thinly sliced onions, then the second burger patty. Place 4 pickles onto the top bun and place on top of the burger.

- Preheat the grill and gently place the patties on the grill. Set to low and cover. This should only take about 2-3 minutes on one side and 2 on the other. Each grill is different so keep your eye on it.
- Meanwhile coat each side of the kaiser bun lightly with butter and warm it on the stovetop or in a cool part of the grill just until the inside begins to crisp up.
- Coat each side of the bun with half the mayo and half the ketchup. When the meat is cooked, layer the burger like this: Bottom bun, one slice, american cheese, first patty, second slice of american cheese, second patty, lettuce leaf, 4 large pickle chips, one slice of tomato (or two if the tomato doesn't cover the whole burger), one slice of red onion, top bun.

- Sauté hamburger and red onion till desired doneness (rare, medium, etc.). Break into 8 pieces. Add 10 ounces heated rigatoni. Toss and heat for one minute. Place 2 ounces BBQ Marinara on bottom of bowl and place pasta and meat on top. Add cheese sauce. Garnish with sesame seeds, lettuce, tomato slices, potato sticks, and pickles.
