CORN SALAD

Number Of Ingredients 9

4 tablespoons mayonnaise
2 tablespoons red wine vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 (11-ounce) cans white shoepeg corn, drained
4 green onions (chopped)
1 (4-ounce) can chopped green chilies, drained
2 Roma tomatoes (seeded and chopped)

Steps:

  • In a small bowl, make the dressing by whisking the mayo, vinegar, salt, pepper, and garlic powder together. Set aside.
  • In a large bowl, combine the corn, onions, chilies, and tomatoes. Add the dressing and stir to combine. Refrigerate for an hour or 2 to allow the flavors to develop. Served chilled.

I know there are similar recipes for corn salad but none just like Dotty-boos. This is such a refreshing salad and so easy to put together. It's great in the summer. Cook time is actually chill time.

2 (11 ounce) cans white shoepeg corn, drain 1
1 medium tomatoes, seeded and diced
1/4 cup green onion, chopped small
1/3 cup mayonnaise
2 tablespoons lemon juice (or more)
salt, season to your liking
white pepper, season to your liking

Steps:

  • Combine corn, mayonnaise, lemon juice, and salt and pepper in a bowl. Stir well.
  • Add tomatoes and green onions and mix gently.
  • Cover and refrigerate over night.
  • When ready to serve, give it a good stir and then watch it disappear from sight!

In the South, any kind of vegetable side dish can be called a salad. We like to say that if you add mayonnaise and celery to something, you've got a salad. While this "salad" has neither mayo nor celery, it can be served cold or hot, so I think that counts, right? Sweet summer corn is sautéed with pork belly, red onion, bell pepper and tomatoes for a colorful and savory side.

Four 6-by-1/2-inch-thick slices pork belly (about 1/2 pound)
2 tablespoons unsalted butter
1 red onion, finely diced (1 3/4 cups)
1 small green bell pepper, finely diced (3/4 cup)
Kosher salt and freshly ground black pepper
4 cups fresh corn kernels (from 6 ears of corn)
One 14.5-ounce can diced tomatoes, drained

Steps:

  • Heat a large cast-iron skillet over medium heat. Add the pork belly and cook until crispy, about 3 minutes per side. Remove from the skillet to paper towels to drain, reserving the drippings in the skillet.
  • Increase the heat to medium-high. Add the butter and heat until melted. Add the onion and bell pepper. Season with salt and cook until the vegetables are softened and begin to brown, 4 to 5 minutes. Stir in the corn and season with salt and pepper, then chop the pork belly. Add the pork belly and tomatoes and cook until the corn is softened and the tomatoes begin to release their liquid, about 5 minutes more.

5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  • Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

2 (15 1/4 ounce) cans whole kernel corn, drained
1/2 cup green pepper, minced
1/2 cup onion, minced
1 cup shredded cheddar cheese
1 cup mayonnaise
1 (10 ounce) bag Fritos corn chips, chili cheese corn chips crushed

Steps:

  • Mix first 5 ingredients together in bowl.
  • Chill.
  • Just before serving, stir in crushed Fritos.
  • I use a mixture of red and green pepper to give it good color.
