Steps:
- Brown garlic in olive oil.
- Add onions and gently saute until crunchy and brown.
- When onions are almost done, add parsley and saute until limp.
- Cook pasta in boiling water until al dente.
- While pasta is cooking, beat eggs, cheese, and basil together.
- Drain pasta and place in serving bowl.
- Fold egg mixture into hot pasta.
- Add onion mixture and mix well.
- Sprinkle with pepper and top with additional parsley, basil and Parmesan.

THE BEST CRAB CAKES
When we set out to make the "best" crab cakes, opinions in the test kitchen were strong and varied. But we could all agree on plenty of fresh, high-quality crabmeat with very little filler. After some tinkering, we created these decadent cakes-generously sized and highly seasoned-with plenty of lemon juice, fresh herbs and spices. The jumbo lump crabmeat is front and center, so splurge on the best and freshest you can find.

- Preheat the oven to 400 degrees F.
- For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
- Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
- Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
- Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula. Continue to cook until lightly golden, about 1 1/2 minutes then transfer the pan to the oven. Cook until the crab cakes are completely heated through, about 10 minutes.
- Serve the crab cakes with the tartar sauce and lemon wedges.
THE ITALIAN SCRAMBLE
From Dom DeLuise. Be sure not to overcook the eggs. The original does not say what kind of grated cheese to use on top. I chose Parmesan, but you can use whatever you want. Serve with hot Italian bread.

- Heat olive oil in a large frying pan and add the potato. Cook over medium heat, stirring occasionally.
- Remove sausage casings and crumble meat into the pan. Cook, stirring, until lightly browned.
- Add onion and peppers. Cook until onion is softened and potatoes are done.
- Beat eggs, milk and oregano together.
- Add egg mixture, tomato and mozzarella all at once.
- Reduce heat and cook, stirring lightly, until eggs are soft and fluffy.
- Top with grated cheese and parsley.

OVEN-ROASTED CRAB CAKES
We had about a bunch of king crab left over and my hubby wanted me to make crab cakes with it. I'd never made them before so I did some research. This recipe is a combination of a few different ones - but came out GREAT! He was VERY happy and it is now going to be a repeat recipe! Hope you enjoy it too!

Steps:
- Sort through crab and discard any bits of shell. Press out moisture with paper towels.
- In a large bowl, combine celery, minced chives, mayonnaise, egg, mustard, and Old Bay; mix well with a fork.
- Add crab and 1/4 cup panko; stir gently just to mix.
- Put in fridge for 1/2 an hour or more if time permits.
- Put remaining panko in a shallow bowl.
- Shape crab mixture into about 6 cakes about a 1/2 inch thick.
- Place each cake in panko to coat on each side - place on baking stone or dish and reform into shape. Should be sort of flat across - about a 1/2 inch thick - and formed around the edges.
- Bake in a 475°F regular or convection oven until golden brown, 15 to 18 minutes.
- With a spatula, transfer crab cakes to a platter. Add any sauce you want - but they turned out great without any sauce.

WALLEYE CRAB CAKES
My husband fishes often and I always try to come up with new ways to prepare what he catches. This is one of our all time favorites. I was told by family and friends it is fabulous!!! The lemon dill sauce recipe I am also submiting is a wonderful compliment. Hope you enjoy!

- Mix all, form into small patties(smaller for appetizers/larger for entree), roll in crumbs, put on a well greased cookie sheet. Bake in oven on top rack at 350 degrees for about 15 minutes, flipping once, until golden on both sides.
- Alternative: Instead of baking, I have also greased a pan and browned the cakes on the top of the stove. Medium heat. Just cook for about 4-5 minutes on each side.
- Serve immediately with lemon dill sauce on the side.

BALTIMORE-STYLE CRAB CAKES

- Finely crush the saltine crackers in your hands and place in a large bowl. Add the crabmeat, reserving any crab juice in a separate small bowl.
- To the bowl with the crab juice, add the mayonnaise egg, mustard, Worcestershire sauce and hot sauce; whisk until smooth. Season with black pepper.
- Gently fold the mayonnaise mixture into the crab and saltines. Refrigerate for at least 1 hour.
- Scoop the crab mixture into six patties, about 1 1/2-inches thick. Be careful not to handle the mixture too much.
- In a large skillet, heat the oil over moderately high heat until shimmering. Add the crab cakes and cook until deeply golden and heated through, about 3 minutes per side. Transfer the crab cakes to plates and serve with lemon wedges.
MY SISTER ANNE'S STUFFED MUSHROOMS

- Preheat oven to 350°F.
- Remove stems from mushrooms and set caps aside.
- Mince mushroom stems.
- Heat oil in a skillet and saute onion, garlic, mushroom stems and 1 cup of the bread crumbs.
- Remove from heat.
- Add crab meat, sprinkle with pepper, and mix well.
- Stuff mushroom caps with mixture.
- Place in a casserole dish.
- Top with remaining bread crumbs and the cheese.
- Bake for 20 minutes.

MAMMA'S ESCAROLE SOUP
That's Dom DeLuise's Mamma. The recipe originated in Spinosa, Italy. If you want a carnivorous variation, you can some spareribs and/or Italian sausages with the garlic, and brown well before adding anything else. To make this completely vegetarian, use vegetable stock in place of chicken stock. You can add water or a little more broth if the soup is too thick. Serve with hot Italian bread.

- Heat olive oil in a large saucepan and brown the garlic.
- Add onion, carrots, and potato (if using). Cook 1 minute.
- Add broth.
- Add escarole, cover, and bring to a boil.
- Reduce heat to low and simmer for 1 hour.
- Spoon into bowls and sprinkle with grated cheese.
