How to doctor canned refried beans with Mexican chorizo

1 20.5-ounce can of refried pinto beans (frijoles refritos pintos o bayos)
4 ounces Mexican chorizo

Steps:

  • In a frying pan, cook the chorizo over medium heat, breaking up the meat with a spatula or wooden spoon until it's crumbled and cooked through.
  • Transfer cooked chorizo to a dish and set aside.
  • Reduce the heat and use a paper towel to remove most of the grease left behind from the chorizo.
  • Open the can of refried beans and drain most of the liquid out, leaving just a little bit (a tablespoon or less). Turn the heat back to medium and spoon the beans from the can into the frying pan. Stir occasionally until the beans are heated through.
  • Add the cooked chorizo and stir to fully incorporate. Heat for another minute, then remove pan from heat and serve.

1 teaspoon garlic powder

cayenne pepper
1/4 teaspoon cumin (optional)
1 tablespoon olive oil
1/2-3/4 cup chicken broth
1/2 cup parmesan cheese or 1/2 cup romano cheese

Steps:

  • Place mashed beans in a bowl& add spices/oil.
  • Mix in chicken broth and heat in microwave.
  • Stir until smooth and bubbly.
  • Sprinkle w/ cheese and serve on a heated platter.
  • Also tasty cold and used as a dip.

2 tbsp butter
1/2 cup white onion, diced
Sauté until translucent
Add garlic over medium heat. Cook until Fragrant
Add 1 can (16 oz) refined beans
1/4 cup half and half
1/4 cup sour cream
Salt
Pepper
Cumin
Cheese

Steps:

  • Melt butter in a skillet.
  • Add onion and saute until translucent. Add garlic and cook until fragrant over low heat.
  • Add refried beans, break up and combine with butter, onion, and garlic.
  • Add half and half, stir.
  • Add sour cream
  • Season with salt, pepper and cumin to taste (I used 1 teaspoon of each).
  • Add cheese.

1/3 cup salsa
3 scallions (chopped)
1/2 cup cheddar cheese (divided) or 1/2 cup monterey jack cheese (divided)

Steps:

  • Mix refried beans, salsa and scallions in a microwave safe bowl.
  • Cover with plastic wrap and heat on high for 2 minutes. Stir and add half of cheese and microwave for another minute.
  • Depending on your microwave they should be very hot.
  • Add remaining cheese to top and heat for another 30 seconds.

1/4 cup dark brown sugar
8 slices sliced black pepper bacon
2 (15 ounce) cans baked beans
1 few dashes hot sauce (more if you like things spicy)
4 -5 scallions, sliced

Steps:

  • Preheat oven to 400°F.
  • Sprinkle the brown sugar on each slice of bacon to generously coat each strip. Arrange the coated bacon strips on a baking sheet and bake until golden brown and crispy, 12 to 15 minutes. Let cool and crumble up.
  • Place a medium pot over medium-high heat with the baked beans and hot sauce. Heat the beans through, add the scallions and portion onto dinner plates topped with the crumbled bacon.

1 teaspoon cumin
1 teaspoon chili powder

½ lime, juiced

Steps:

  • Heat canola oil in a heavy skillet over medium heat.
  • Cook garlic cloves in hot oil, turning once, until brown on both sides, 4 to 5 minutes.
  • Smash garlic cloves in skillet with a fork.
  • Stir pinto beans, cumin, chili powder, and salt into mashed garlic and cook until beans are thoroughly heated, about 5 minutes. Stir occasionally.
