CHILAQUILE CASSEROLE image

Number Of Ingredients 11

2 tbs EVOO
2 poblanos, seeded and in thin strips
3 cloves garlis, fine chop
3 c mild tomatillo salsa (1 frasco TJ and water or chicken broth)
1/3 c chopped cilantro approx or less
salt
9 corn tortillas? or more? i forget. Passed thru hot oil
10 oz monterrey jack cheese shredded
1 can black beans rinsed. i think I used 2
1 avocado, sliced
onion

Steps:

  • Preheat oven 400. Heat evoo, add chiles and cook till start to brown about 5 mins. Add garlic and cook 20 seconds. Stir in salsa and simmer. Remove from heat. Stir in the cilantro and season with salt. Put half the tortillas in square baking dish. Top with half salsa, half cheese and half beans. Repeat. Bake until hot and cheese melts, about 20 mins. Top with avocado and garnish with cilantro. Serve with sour cream? Can add chicken?
