1 stick unsalted butter
1 cup all-purpose flour
1 cup whole milk
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons melted butter
1/4 teaspoon kosher salt
2 tablespoons bourbon (optional)
1 1/2 cups pecan pieces
Maple syrup for brushing (optional)

Steps:

  • Preheat oven to 375°F. Place a 9-inch or 10-inch cast-iron skillet in the oven to heat with the oven. Once preheated, add 1 stick butter to hot skillet and allow to rest in oven until melted.
  • Meanwhile, combine the remaining Cobbler Batter ingredients in a bowl; set aside.
  • In a separate bowl, make the Pecan Filling by combining the brown sugar, egg, vanilla, salt, melted butter, bourbon, and pecans. Stir until sugar is partially dissolved.
  • Carefully remove skillet from oven. Pour batter over melted butter (do not stir-the batter should be separated from the butter). Pour Pecan Filling in center of skillet. Transfer to oven and bake until browned and edges slightly pull away from pan, 30 to 35 minutes. Brush with maple syrup, if desired. Serve warm.

Pecan pie cobbler is an easy and delicious dessert, especially for the Thanksgiving and Christmas holidays. The easy pecan pie cobbler recipe features a double layer of pecan pie and is perfect with a scoop of vanilla ice cream right on top.

2 rolled refrigerated pie crusts (2 come in a package)
2-1/2 cups brown sugar
1/2 cup butter, melted + 1 Tablespoon
2-1/2 cups light corn syrup
4 teaspoons vanilla extract
6 eggs, beaten lightly
2 cups chopped pecans
1-1/2 cups pecan halves

Steps:

  • Roll out one pie crust into a rectangular shape and place it in the dish (it does not have to be perfect and does not need to go all the way up the sides of the casserole dish).
  • Add the brown sugar, melted butter, corn syrup, eggs, and vanilla extract to a large bowl. Mix well.
  • Add the 2 cups of chopped pecans and mix well.
  • Pour half of the mixture over the pie crust.
  • Roll out the second pie crust and place it on top of the mixture (again, the crust does not need to be rolled out perfectly).
  • Brush or spoon the tablespoon of melted butter over the crust and bake for approximately 15 minutes or until the crust is golden brown.
  • Remove from oven and turn the oven down to 350 degrees.
  • Stir the remainder of the pecan pie mixture and pour over the cooked crust.
  • Add the 1-1/2 cups of pecan halves to the top of the cobbler. (Either sprinkle the pecans randomly or place in order).
  • Bake again for 30 minutes.
  • Allow the pecan pie cobbler to cool for at least one hour before serving.
  • OPTIONAL: Add a scoop of vanilla ice cream to the top of the warm cobbler.

1/2 cup butter, cubed
1 cup plus 2 tablespoons all-purpose flour
3/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
2/3 cup 2% milk
1 teaspoon vanilla extract
1-1/2 cups coarsely chopped pecans
1 cup packed brown sugar
3/4 cup brickle toffee bits
1-1/2 cups boiling water
Vanilla ice cream, optional

Steps:

  • Preheat oven to 350°. Place butter in a 13x9-in. baking pan; heat pan until butter is melted, 3-5 minutes. Meanwhile, combine the flour, sugar, baking powder and salt. Stir in milk and vanilla until combined., Remove baking pan from oven; add batter. Sprinkle with pecans, brown sugar and toffee bits. Slowly pour boiling water over top (do not stir). Bake, uncovered, until golden brown, 30-35 minutes. Cool on wire rack for 30 minutes (cobbler will thicken upon cooling). Serve warm, with ice cream if desired.

6 tablespoons unsalted butter
1 ½ cups self-rising flour
1 ½ cups white sugar
⅔ cup milk, or more as needed
1 teaspoon pure vanilla extract
1 ½ cups packed light brown sugar
1 tablespoon ground cinnamon
1 cup pecan halves
1 ½ cups hot water

Steps:

  • Place butter in a 9x13-inch cake pan or casserole dish and put in the oven. Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, sugar, milk, and vanilla in a bowl. Stir to combine but don't overmix; batter must be of pouring consistency. If batter is too thick, add more milk.
  • Mix brown sugar and cinnamon together in a small bowl.
  • Remove melted butter from the oven and sprinkle pecans over top. Without mixing or stirring, pour batter over the pecans, sprinkle with brown sugar mixture, and carefully pour hot water over top.
  • Bake in the preheated oven until golden brown, 30 to 35 minutes.
