Easy Dirty Rice with Shrimp - A healthy twist on a Cajun classic. The addition of shrimp turns this into a fabulous main dish. Easy to make and very flavorful!

1 1/2 cup uncooked rice
1 bay leave
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon + 1/2 tsp paprika
1/8 teaspoon + 1/2 tsp thyme
1 lb medium shrimp (peeled and deveined)
1 medium onion (chopped)
2 cloves garlic (minced)
2 celery stalks (chopped)
2 bell peppers (I used 1 green & 1 orange)
1 lb ground beef (or ground pork sausage)
salt and pepper to taste
1/2 teaspoon cumin
2 scallions (chopped)

Steps:

  • Cook brown rice according to package directions in water along with 1 bay leaf, 1/4 tsp salt, 1/8 tsp cayenne, 1/8 tsp paprika and 1/8 tsp thyme.
  • When the rice is almost ready, heat oil in a skillet over medium high heat, and cook shrimp until done, about 5 minutes. Set aside.
  • Discard liquid from shrimp in the skillet, and heat oil over medium high heat. Add onion, garlic, celery, and bell peppers. Saute on medium heat until soft about 5 minutes. Season with salt, freshly ground black pepper, cumin, remaining cayenne, paprika and thyme. Add ground beef and cook for about 10 - 15 minutes until cooked through.
  • Add cooked rice and shrimp to the skillet, toss, cover and cook for a couple of minutes. Serve warm and sprinkle some scallions on top. Enjoy!

A healthier twist on a Cajun classic, the addition of shrimp turns this "dirty brown rice" into a fabulous main dish. I'd like to think of this as a Cajun shrimp fried rice. With Mardi Gras ending tomorrow, I thought this would be the perfect timing to share this recipe from the archives because I LOVE this dish!

1 1/2 cups uncooked brown rice
chicken bouillon cube (Knorr)
2 bay leaves (divided)
1/8 + 1/4 tsp cayenne (divided)
1/8 + 1/2 tsp paprika
1/8 + 1/2 tsp thyme
1 tsp oil
1 onion (diced)
2 celery (diced)
1 green pepper (diced)
1 clove garlic (minced)
1/2 lb 96% lean ground beef (Laura's lean beef)
salt and fresh pepper (to taste)
1 lb medium shrimp (peeled and deveined)
2 scallions (chopped)

Steps:

  • Cook brown rice according to package directions in water along with a chicken bouillon, 1 bay leaf and 1/4 tsp salt and 1/8 each of salt, cayenne, paprika and thyme.
  • When the rice is almost done cooking, heat a large heavy saucepan on medium-low heat.
  • Add the oil, onions, green pepper, celery, bay leaf and garlic. Sauté on medium-low heat until soft, about 5 minutes.
  • Add beef, salt, black pepper, remaining paprika, thyme and cayenne pepper.
  • Sauté until browned, about 10-15 minutes; add shrimp, cover and cook 5 more minutes.
  • When the rice is done, toss with beef and shrimp and combine well. Top with scallions and serve.

2 tablespoons cooking oil
1/2 lb ground pork
1 onion, chopped
2 celery ribs, diced
1 green bell pepper, diced
1 garlic clove, minced
1/4 teaspoon cayenne
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1 bay leaf
1 3/4 teaspoons salt
1/4 teaspoon fresh ground black pepper
1 1/2 cups long grain rice
3 cups canned low sodium chicken broth (can use homemade stock)
1 lb medium shrimp, shelled and halved
2 scallions, including green tops chopped

Steps:

  • Heat 1 Tbsp of oil at medium. Add pork and cook until no longer pink (2 minutes).
  • Reduce heat to medium low and add remaining oil. Add onion, celery, bell pepper and garlic. Cover and cook, stirring occasionally, until veggies start to soften (about 5 minutes).
  • Stir in cayenne, paprika, oregano, bay leaf, salt, black pepper and rice. Cook and stir for 1 minute.
  • Add broth. Bring to boil, reduce heat and simmer, covered for 15 minutes.
  • Turn heat back up to medium and stir in shrimp. Cover and cook for 2 minutes.
  • Remove pan from heat and let stand covered until rice and shrimp are done (about 5 minutes).
  • Remove bay leaf and stir in scallions.

1 small green bell pepper, diced
3 garlic cloves, minced

4 Italian sausages, sliced

Steps:

  • Heat oil over medium-high heat in a deep, heavy skillet with a close-fitting cover.
  • Add diced onion, celery, diced bell pepper, and garlic, and saute until well-browned, stirring often.
  • Add sausage and chicken livers. Cook, stirring often, until sausage is well-browned.
  • Add reserved liquid from mushrooms and scrape bottom of pan.
  • Add thyme, red pepper flakes and black pepper. Stir in mushrooms, chopped onion, and chopped bell pepper. Cook until onions are slightly softened.
  • Stir in rice. Cook, stirring, about 1 minute.
  • Add stock, stir, and add shrimp.

6 canned whole plum tomatoes (from one 28-ounce can), crushed
1 can (14 1/2 ounces) low-sodium chicken broth

1/2 teaspoon coarse salt

Steps:

  • Melt butter in a large Dutch oven over medium heat. Add flour, and stir until light brown, 3 to 4 minutes. Add bell peppers, onion, and celery; cook, stirring occasionally, until softened, about 7 minutes. Add tomatoes, broth, parsley, spices, salt, and hot sauce.
  • Bring to a boil; reduce heat, and simmer until vegetables are soft and mixture is slightly thickened, about 30 minutes. Stir in shrimp, and cook until pink and cooked through, 3 to 5 minutes.

1 cup cherry tomatoes
2 teaspoons olive oil
3/4 cup frozen diced potatoes
1/2 cup ground beef or 1/2 cup vegetarian beef

1/2 cup white wine

Steps:

  • Saute celery and potatoes on medium heat.
  • cook rice as instructions say.
  • If necessary de-shell or devein and/or thaw the shrimp.

I'd like to think of this as a Cajun shrimp fried rice. Dirty rice is a classic Cajun dish made "dirty" by cooking the rice with minced livers or gizzards. I created a healthier version using brown rice and lean ground beef in place of the chicken livers that normally make dirty rice "dirty". But don't worry, this healthier version does not skimp on flavor! It has plenty of spices and a bit of kick, you can adjust the heat to your taste but don't be shy with the cayenne if you can handle it!
