Macaroni Pasta Salad is an old Southern classic recipe. Great for home, picnics, potluck dinners, any old place. Can be prepared a day or two ahead of time if needed and travels well. Best if served chilled.

1 8oz. package Elbow Macaroni, cooked and drained.
1 cup Duke's Mayonnaise
2 Tablespoon Apple Cider Vinegar
1 Tablespoon prepared Mustard
1 teaspoon Sugar
1 teaspoon Salt
1/4 teaspoon Black Pepper
1/2 cup Celery, sliced
1/2 cup Green or Red Sweet Pepper, chopped
1/4 cup Onion, chopped

Steps:

  • Prepare macaroni pasta according to package directions.
  • Drain pasta, set aside.
  • Place Dukes mayonnaise In a large mixing bowl.
  • Add vinegar.
  • Add mustard.
  • Add sugar.
  • Add salt.
  • Add black pepper.
  • Mix together well.
  • Add the drained pasta.
  • Add celery.
  • Add peppers.
  • Add onion.
  • Toss everything to coat well.
  • Cover bowl. Refrigerate for 2 or more hours to chill.
  • Enjoy!

8 oz Ditalini pasta (1/2 of a 16 oz bag, or 1-1/2 cup raw)
1/2 c fine diced purple onion
3/4 c fine diced celery
8 pimento stuffed queen olives, diced
DRESSING
1 c mayonnaise
1/2 c sour cream
1 Tbsp yellow mustard
1 Tbsp olive juice (from jar)
1/2 oz vodka (optional)
1/2 tsp salt
1 tsp pepper
1 tsp celery seed
1 dash(es) cayenne pepper (optional)

Steps:

  • 1. Prepare pasta according to package directions. Drain. Allow to cool as you prepare vegetables and dressing.
  • 2. Toss pasta, onions, celery, and olives.
  • 3. Prepare the dressing.
  • 4. Gently fold into macaroni and vegetables. Refrigerate at least 4 hours or overnight.

2 tablespoons sweet pickle relish

4 cups uncooked elbow macaroni
1 cup mayonnaise
¼ cup distilled white vinegar
⅔ cup white sugar
2 ½ tablespoons prepared yellow mustard
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
¼ cup grated carrot
2 tablespoons chopped pimento peppers

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
  • In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.

1 medium lemon
8 pimiento-stuffed olives
8 frilled toothpicks
2 tablespoons kosher salt
2 packages (5 ounces each) spring mix salad greens
2 medium tomatoes, chopped
1 small red onion, thinly sliced
1/4 cup sliced pimiento-stuffed olives
DRESSING:
1 shallot, halved
6 pimiento-stuffed olives plus 1/4 cup juice from the jar, divided
1/4 cup white wine vinegar
1/4 cup vodka or additional white wine vinegar
1 tablespoon lemon juice
1 cup olive oil

Steps:

  • Cut lemon in half lengthwise; cut one half into eight thin wedges. Thread olives and lemon wedges onto toothpicks for garnishes; set aside., Using the lemon half, moisten the rims of eight large cocktail glasses. Sprinkle salt on a plate; hold glasses upside down and dip rims into salt. Divide the salad greens, tomatoes, onion and sliced olives among prepared glasses. Top each with a prepared toothpick., In a food processor, combine shallot and olives; cover and process until finely chopped. Add the vinegar, vodka, olive juice and lemon juice; cover and process until blended. While processing, gradually add oil in a steady stream. Divide among eight shot glasses; serve with salads.

1 cup mayonnaise
¼ cup white vinegar
2 tablespoons Dijon mustard
2 teaspoons kosher salt, or more to taste
½ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
1 tablespoon white sugar, or more to taste
1 cup finely diced celery
¾ cup diced red bell pepper
½ cup grated carrot
½ cup chopped green onions, white and light parts
¼ cup diced jalapeno pepper
¼ cup diced poblano pepper
1 (16 ounce) package uncooked elbow macaroni
1 tablespoon mayonnaise
1 tablespoon water

Steps:

  • Whisk 1 cup mayonnaise, vinegar, Dijon mustard, salt, black pepper, and cayenne pepper together in a bowl until well blended; whisk in sugar. Stir in celery, red bell pepper, carrot, onions, and jalapeno and poblano peppers. Refrigerate until macaroni is ready to dress.
  • Bring a large pot of well salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through, 8 to 10 minutes. Drain but do not rinse. Allow macaroni to drain in a colander about 5 minutes, shaking out moisture from time to time. Pour macaroni into large bowl; toss to separate and cool to room temperature. Macaroni should be sticky.
  • Pour dressing over macaroni and stir until dressing is evenly distributed. Cover with plastic wrap. Refrigerate at least 4 hours or, ideally, overnight to allow dressing to absorb into the macaroni.
  • Stir salad before serving. Mix 1 tablespoon mayonnaise and 1 tablespoon water into salad for fresher look.
