Drizzle this bright, herby sauce over grilled fish, poultry, grain bowls or roasted vegetables. It also makes a tangy dip for crudités or poached shrimp. We like the combination of parsley and chives here, but feel free to use any soft herbs like basil, cilantro, dill or mint. Baby spinach is the key to giving this yogurt-based sauce a lovely green color, but you can also use baby arugula or kale.

Number Of Ingredients 9

1 cup loosely packed fresh flat-leaf parsley leaves
1 cup loosely packed baby spinach
1 cup 2-percent or whole milk plain Greek yogurt
1/4 cup chopped fresh chives
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Dash of hot sauce
1 clove garlic, smashed
Kosher salt

Steps:

  • Combine the parsley, spinach, yogurt, chives, olive oil, lemon juice, hot sauce, garlic and 1 teaspoon salt in a blender or food processor until smooth and bright green. Transfer to a bowl or container, cover and chill for at least 1 hour before serving.

PLAN/PURCHASE
1/2 c mayonnaise, plain variety
3 Tbsp brown mustard, i prefer grey poupon
1 1/2 Tbsp pickle relish, dill variety
1 Tbsp dill weed, finely chopped
1 tsp rice wine vinegar
1 tsp hot sauce, i prefer frank's
1 tsp dehydrated onions, ground to a powder
1/4 tsp white pepper freshly ground
1/4 tsp smoked spanish paprika

Steps:

  • 1. PREP/PREPARE
  • 2. I do not usually add salt to this recipe; however, the option is yours to choose. Remember good chefs, taste their food before serving, and season accordingly.
  • 3. If you have the time, this recipe really benefits from spending the night in the fridge. It gives the ingredients a chance to get to know each another.
  • 4. Not all hot sauces are created equal. The reason that I like Frank's Hot Sauce so much is that it is not as screamingly hot as other brands, and it has this unique vinegary taste to it that compliments recipes, such as this one. If you are using another type of hot sauce, add a small bit at a time, and then taste. You can always make it hotter, but it would be extremely difficult to reverse the heat.
  • 5. I love the flavor that smoked Spanish paprika brings to this dip; however, you do not have that brand, use whatever one you have handy.
  • 6. Gather your Ingredients (mise en place).
  • 7. Add the ingredients to a small mixing bowl.
  • 8. Thoroughly mix all the ingredients together, and do a final tasting for proper seasoning.
  • 9. Store in a tightly sealed glass container in the fridge, until ready for serving.
  • 10. Chef's Note: If properly stored, it should stay fresh for 7 - 10 days.

  • 12. I love serving this sauce with chicken tenders, but I think it would also work drizzled over a nice sautéed piece of trout. Enjoy.

An all purpose sauce to serve with seafood, baked potatoes and a green salad for dinner, or use it as a party dip with shelled shrimp, lobster or crabmeat, fried fish sticks, or fresh cut-up vegetables or baked potato wedges. Adjust the seasonings to taste.

1 small onion, chopped
3 garlic cloves, medium-size, finely chopped or 1 1/2 teaspoons garlic, minced
1 cup mayonnaise or 1 cup Miracle Whip
1/2 cup vegetable oil
1/4 cup chili sauce (Heinz)
3 tablespoons lemon juice
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1 tablespoon water
1 teaspoon paprika
1 teaspoon fresh ground pepper
1/2 teaspoon salt (to taste)

Steps:

  • In a food processor or blender, finely chop the onion and garlic together.
  • Add the rest of the ingredients; mayonnaise, vegetable oil, Chili sauce, lemon juice, prepared mustard, Worcestershire sauce, water, paprika, pepper, and salt.
  • Puree until smooth.
  • Chill in a covered bowl.
