Aunt Eleanor started making these when she was working in the 60's. They are so easy to make. A little sticky rolling them into balls and then the coconut but Oh So Worth It. If you love dates and want a cookie that is not real sweet, this is the one for you.

Number Of Ingredients 8

2 - eggs
1 cup(s) sugar
1 1/2 cup(s) copped dates
1/4 cup(s) butter, room temperature
1 teaspoon(s) vanilla extract
1/4 cup(s) chopped nuts
1/4 teaspoon(s) salt or sea salt
3 cup(s) rice krispies

Steps:

  • In a double boiler, slowly boil all ingredients except Rice Krispies turning for 10 min. Remove from heat.
  • Stir in 3 cups Rice Krispies. I usually put the Rice Krispies in a larger bowl and por the mixture over it and mix it together.
  • Drop from Teaspoon into coconut and form into balls. Enjoy!

These are a very good holiday treat and easy to make.

Number Of Ingredients 5

1 1/2 stick(s) butter
8 ounce(s) pkg. chopped dates
3 cup(s) rice krispies
1 cup(s) sugar
1 cup(s) pecans (chopped)

Steps:

  • Mix butter, sugar and dates; let come to a good boil. Add nuts and Rice Krispies. Mix well. Sprinkle a cookie sheet with powdered sugar. Spread mixture thin and cover with powdered sugar. Cut in squares. YUM!
