GRANDMA'S OLD FASHIONED DILL BREAD



Grandma's Old Fashioned Dill Bread image

Gorgeous golden brown loaves of old fashioned dill bread served piping hot out of the oven, smothered with butter and sprinkled with coarse sea salt. An ultimate temptation that fills the house with aromas of dill seed and minced onions and is extremely hard to resist.

1 package Active Dry Yeast
1/2 teaspoon Sugar
1/4 cup warm Water
1 cup small curd Cottage Cheese
2 tablespoons Sugar
1 tablespoon melted Butter
1 tablespoon Minced Dried Onions
2 teaspoons dried Dill Seed
1 teaspoon Salt
1/4 teaspoon Baking Soda
1 Egg, beaten
2 1/4 cups All-Purpose Flour
Butter, for brushing on baked loaves
Coarse Sea Salt, for sprinkling

Steps:

  • Dissolve yeast and sugar in the warm water. Let it sit for 10 minutes until the foam on top is doubled in size.
  • Heat the cottage cheese in a small pan to lukewarm.
  • Combine the cottage cheese and the yeast mixture together.
  • Add the remaining ingredients until combined.
  • Butter a large bowl and place the dill bread dough. Roll the dough around the bowl to butter it.
  • Place a dish towel over the bowl and set it in a warm place (microwave works great). Let the dough rise for about one hour or until it is doubled in size.
  • Press the dough down and shape it into either one regular loaf size or three mini loaves.
  • Place the shaped dough into the loaf pan(s). And again set them in a warm place, cover them with a dish towel and let them rise for another hour or until doubled in size.
  • While the dough is rising for the second time preheat the oven to 350°F.
  • Bake the regular sized loaf for 40-45 minutes or until golden brown. Bake the mini loaves for 25-30 minutes.
  • Take out of the oven and let sit for no longer than 5 minutes in the pan(s). Remove the bread from the pan(s) and set them on a wire cooling rack.
  • Brush lots of butter on the top and sides of the loaves. Sprinkle with coarse sea salt.

2 tablespoons parmesan cheese
1/2 teaspoon dry dill weed
1 (12 ounce) package Pillsbury refrigerated biscuits
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • Preheat oven to 400°F
  • Lightly grease 8-inch round cake pan.
  • In small bowl, stir Parmesan cheese and dill weed until combined.
  • Cut biscuits into quarters. Add a few biscuits at a time to melted butter or margarine, separating pieces with fingers.
  • Add cheese mixture and toss with fingers until all pieces are coated.
  • Arrange in one layer in prepared pan.
  • Bake 12-14 minutes, or until golden brown.
  • Turn upside down on serving plate.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup 2% cottage cheese
1/4 cup snipped fresh dill or 4 teaspoons dill weed
1 tablespoon butter, melted
1-1/2 teaspoons salt
1 teaspoon sugar
1 teaspoon dill seed
1 large egg, room temperature, lightly beaten
2-1/4 to 2-3/4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. In a small saucepan, heat cottage cheese to 110°-115°; add to yeast mixture. Add fresh dill, butter, salt, sugar, dill seed, egg and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; shape into a 6-in. circle. Transfer to a greased 9-in. round baking pan. 12 rhodes dinner rolls or 1 loaf rhodes bread dough, thawed to room temperature
1 tablespoon garlic salt
3 tablespoons chopped fresh dill
1/2 cup grated fresh parmesan cheese

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine 4 rolls and roll into a 10-12 inch rope. Repeat with remaining rolls to make 3 total ropes. If using bread, cut loaf in 3 equal pieces and roll each piece into a rope. Combine garlic salt, dill and cheese and sprinkle onto countertop. Roll ropes in the mixture to cover.
  • Press one end of the ropes together firmly and braid the ropes. Press remaining ends firmly together. Place braid on sprayed baking sheet. Sprinkle any remaining mixture over the braid. 2 packages dry yeast
2 cups warm water
2 eggs
1 (18 1/4 ounce) package yellow cake mix
1 cup Grape-nuts cereal
1 cup shredded swiss cheese
1/2 cup grated parmesan cheese
1 tablespoon dill seed
4 cups all-purpose flour

Steps:

  • In large mixing bowl, dissolve yeast in warm water.
  • Add eggs beating until well blended.
  • Add dry cake mix, grape nuts, swiss cheese, parmesan and dill seed.
  • Beat well.
  • Gradually add flour until well blended.
  • Divide batter between 2 well greased 8x4x2 inch loaf pans.
  • Cover and let rise in a warm place for 1-1 1/4 hours or until nearly double in size.
  • Bake@ 350 degree oven for 55-60 minutes or until bread sounds hollow when lightly tapped.
  • Cover bread with aluminum foil for the last 15 minutes to prevent overbrowning.
  • Loosen edges of bread with a spatula and remove to wire rack.
