5 cups low-sodium chicken broth
3 cups water
1 cup chopped zucchini
½ cup frozen corn
3 carrots, sliced
3 red potatoes, cubed
2 stalks celery, diced
½ cup frozen peas
½ cup frozen green beans
¼ cup olive oil
1 pound ground turkey
½ large yellow onion, diced
1 tablespoon minced garlic
1 tablespoon kosher salt
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground turmeric
1 teaspoon tomato paste
2 bay leaves
½ cup uncooked white rice
½ bunch cilantro, chopped

Steps:

  • Combine chicken broth, water, zucchini, corn, carrots, potatoes, celery, peas, and green beans in a large pot. Bring to a boil. Reduce heat and simmer until vegetables are slightly tender, about 10 minutes.
  • Heat oil in a skillet over medium-high heat. Add turkey; cook and stir, breaking it up into small pieces, until browned, 5 to 7 minutes. Add onion and garlic. Season with 1/2 teaspoon salt, cumin, coriander, and turmeric. Pour mixture into the pot with the vegetables. Add the remaining salt, tomato paste, and bay leaves. Reduce heat to low and simmer soup until vegetables are soft, about 1 hour.
  • Stir rice into the soup; simmer until tender, about 15 minutes more. Portion soup into bowls and top each with cilantro.

¼ cup all-purpose flour
1 ½ cups fat free half-and-half
½ teaspoon sriracha chili garlic sauce

Steps:

  • Combine potatoes, mixed vegetables, onions, celery, parsley and Swanson® Chicken Broth in a large saucepan. Bring to a boil over medium heat; reduce heat, cover, and simmer gently until vegetables are tender, about 10 minutes. Stir in turkey and poultry seasoning.

2 carrots, cut into 1/2-inch pieces
2 celery ribs, cut into 1/2-inch pieces
1 large onion, coarsely chopped
1 1/2 pound russet (baking) potatoes, peeled and cut into 1/2-inch pieces
1/2 stick unsalted butter
4 cups water
1 cup whole milk
2 tablespoons chopped dill

Steps:

  • Cook vegetables in butter in a 5- to 6-quart heavy pot, covered, over medium-high heat, stirring occasionally, until beginning to brown and stick to bottom of pot, about 15 minutes. Add water, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper and simmer, covered, until vegetables are tender, about 10 minutes. Transfer 3 cups soup to a blender with milk and blend until smooth (use caution when blending hot liquids). Return to pot, then stir in dill and salt and pepper to taste.

Came up with this one years ago, I have never seen another quite like it. Quick light and easy. If you are short on time this can be approximated with a package of pre-made potato soup with leftover boiled potatoes and lots of dill (dried or fresh) added.

1 tablespoon butter
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves
2 -3 potatoes, sliced thin
20 ounces chicken broth (2 cans) or 20 ounces vegetable broth (2 cans)
1 -3 tablespoon dried dill or 1 -3 tablespoon fresh dill
1/2 teaspoon thyme
salt and pepper
1 cup milk
rye bread

Steps:

  • in a soup pot melt butter and olive oil over medium high heat.
  • Add chopped onion and saute for about 2 minutes.
  • Add garlic and saute for a minute more
  • add potatoes and broth
  • reduce heat and simmer till potatoes are soft.
  • add dill, thyme, and salt and pepper to taste.
  • adjust the seasonings and add milk.
  • bring back to a boil and serve with a soft rustic rye bread.

1 cup sliced leeks (white portion only)
1 celery rib, chopped
1-1/2 teaspoons butter
2 cups chicken broth
1-1/2 cups cubed peeled Yukon Gold potatoes
1 large carrot, finely chopped
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup buttermilk
1-1/2 teaspoons snipped fresh dill or 1/2 teaspoon dill weed
Herb potato chips and finely shredded leeks, optional

Steps:

  • In a large saucepan, saute leeks and celery in butter until tender. Stir in the broth, potatoes, carrot, thyme, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until vegetables are tender. Cool slightly., Transfer to a blender; cover and process until smooth. Return to the pan. Whisk a small amount of soup into buttermilk; return all to the pan, stirring constantly. Add dill; heat through (do not boil). Garnish if desired.
