I love brussels sprouts, and am always looking for new ways to make these. This recipe came from Southern Livings 40 Years of our Best Recipes. It adds the delicate flavors of carrot and celery to the brussel sprouts, with a crunchy cashew topping.

1 1/2 lbs fresh Brussels sprouts
3 cups water
2 chicken bouillon cubes
1 1/2 cups carrots, thinly sliced
1 1/2 cups celery, sliced
1/3 cup butter or 1/3 cup margarine
3/4 cup cashews, dry roasted
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon pepper

Steps:

  • Wash brussels sprouts thoroughly and remove discolored leaves. Cut off stem ends and slash bottom of each sprout with a shallow X.
  • Place water and bouillon cubes in a medium saucepan; bring to a boil. Add brussels sprouts, carrot, and celery; return to a boil.Cover, reduce heat and simmer 12 to 15 minutes or until vegetables are tender. Drain, place vegetables in a serving bowl.
  • Melt butter in a small skillet; add cashews and seasonings. Cook over low heat 3 to 4 minutes or until cashews are lightly toasted; pour over vegetables.

12 oz fresh Brussels sprouts
2 teaspoons olive, canola or soybean oil
1 tablespoon honey
1 teaspoon Dijon mustard
1/8 teaspoon onion powder
1/8 teaspoon dried dill weed

Steps:

  • Trim Brussels sprouts; cut small X in stem end. Cut large Brussels sprouts in half. Place in 2-quart saucepan; add 1/2 cup water. Cover; cook over medium-high heat about 8 minutes or until tender. Drain. Return to saucepan.
  • Add remaining ingredients to drained Brussels sprouts. Stir gently to coat.

1-1/2 pounds fresh brussels sprouts
1/3 cup butter
2 tablespoons lemon juice
1 teaspoon dill weed
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons finely chopped walnuts

Steps:

  • In a large saucepan, bring 1 in. of water and brussels sprouts to a boil. Reduce heat; cover and simmer for 8-10 minutes or until tender. Meanwhile, in another large saucepan, melt butter. Stir in the lemon juice, dill, salt and pepper; cook and stir for 1 minute. Drain sprouts; add to butter mixture and toss to coat. Sprinkle with walnuts.

I get the Vegetarian Times Magazine and this is one of the great recipes I found in the January 2010 edition. The vegetables are so colorful and the flavor of this dish is outstanding.

2 1/2 cups Brussels sprouts (trimmed and halved)
2 small red onions (cut into 8ths, about 1 1/2 cups)
1 medium sweet potato (cubed 1 1/2 cups)
3 small parsnips (sliced 1 1/2 cups)
1 1/2 cups whole baby carrots
10 garlic cloves (slightly crushed and peeled)
2 tablespoons olive oil
2 sheets nori (this is the seaweed you see wrapped around sushi)
1/3 cup hazelnuts (toasted and chopped..I used brazil nuts because I couldn't find hazelnuts)
1 tablespoon walnut oil (toasted if you can find it)

Steps:

  • Preheat oven to 400'F. Coat a baking sheet with cooking spray.
  • Toss the brussels sprouts, onion, sweet potato, parsnips, carrots, and garlic in the olive oil in a large bowl. Make sure all the veggies are well coated.
  • Transfer your coated veggies to the prepared baking sheet and roast 35-40 minutes or until the veggies are tender and browned. Stir them 1/2 way through to ensure the tops of the veggies also get browned.
  • While the veggies are cooking put the nori sheets one on top of the other and roll in a cigar shape. With a sharp pair of scissors cut it in little pieces. When the piece uncoil they should be in long strands. Set them aside.
  • When the veggies are done transfer them to a large baking dish and toss with the hazelnuts, walnut oil and nori strips.
  • Season with salt and pepper if you like.

10 oz bottle zesty italian dressing
2 green onions, sliced
1 Tbsp dill, chopped

Steps:

  • 1. Cook brussels sprouts according to pkg. directions, omitting salt. Drain. Combine brussels sprouts and remaining ingredients. Tossing gently, cover and refrigerate at least 8 hoursto allow flavor to mix. Serve with a slotted spoon. Makes about 8 servings.

I found this years ago online and have made a few changes. The large amount of dill weed may seem over-the-top, but it pays off. People who hate sprouts love these. Well, most of them. These are good hot or cold - if any are left over.

1 1/2 lbs Brussels sprouts
1/3 cup olive oil
1/3 cup red wine vinegar
2 tablespoons dried dill weed
1 1/2 teaspoons lemon pepper
1/2-1 teaspoon salt

Steps:

  • Trim the sprouts and cut them in half.
  • Steam the sprouts for 8-10 minutes, depending on their size; drain them.
  • Let them cool if you want to prepare them ahead of time, up to this point.
  • Line a large baking pan with foil and spray with non-stick spray.
  • Mix the rest of the ingredients.
  • Put the sprouts in a large zip lock bag and add the dressing; mix them well.
  • At this point you may either store them for roasting later in the day, or pour the sprouts and dressing into the prepared baking pan and roast them.
  • Roast at 450 until done the way you like them.
  • Parboiling cuts the roasting time down and helps the sprouts absorb the dressing.

8 ounces baby Brussels sprouts, trimmed and split in halves
1 clove garlic, minced
1/4 teaspoon dried dill weed
1/4 cup low-sodium low-fat vegetable broth or 1/4 cup low-sodium low-fat chicken broth
1/8 cup dry white wine
salt
white pepper
1/2 teaspoon cornstarch, dissolved in
1 tablespoon water

Steps:

  • Steam split brussels sprouts for 15-20 minutes or until tender.
  • Meanwhile, lightly spray a small saucepan with olive oil, and saute garlic briefly on medium heat, stirring.
  • Add dill, stir briefly, and add chicken broth and wine; bring to a boil.
  • Boil to drive off alcohol; season to taste with salt and white pepper.
  • Slowly add cornstarch mixture while stirring, until desired consistency is obtained.
  • Remove from heat.

1 lb Brussels sprout
1 lb asparagus (thin stalks)
1 red bell pepper
1 teaspoon garlic (chopped)
2 tablespoons olive oil
1/4 teaspoon seasoning salt
1 cup water
1/4 cup hoisin sauce
1 teaspoon sweet chili sauce

Steps:

  • Clean and remove hard ends from Brussels Sprouts.
  • Clean and remove stem and seeds from bell pepper.
  • Clean and remove woody sections of asparagus.
  • Course chop Brussels sprouts, asparagus and bell pepper.
  • Heat oil in nonstick wok over medium heat and saute garlic for one minute stirring frequently.
  • Add sprouts, bell pepper, asparagus and salt stirring frequently. Cook 5 minutes.
  • Add water and cook an additional 5 minutes or until vegetables are tender.
  • Stir in Hoison sauce and sweet chili sauce, give a quick stir to mix thoroughly, then remove wok from heat. Serve and enjoy!

2 pounds Brussels sprouts, trimmed and cut in half
5 1-pint canning jars with lids and rings
5 cloves garlic, divided
1 ΒΌ teaspoons red pepper flakes, divided
5 cups water
5 cups distilled white vinegar
7 tablespoons pickling salt

Steps:

  • Soak Brussels sprouts in a large bowl filled with lightly salted water for about 15 minutes. Drain well.
  • Sterilize the jars and lids in boiling water for at least 5 minutes.
  • Divide the drained Brussels sprouts evenly between jars, filling the jars about 3/4-inch from the top.
  • Place 1 garlic clove and 1/4 teaspoon red pepper flakes in each jar.
  • Bring vinegar, water, and pickling salt to a boil in a large pot over medium-high heat until the salt is dissolved, about 5 minutes.
  • Pour the vinegar mixture into the jars, filling the jars to within 1/4 inch of the top.
  • Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles.
  • Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot, and fill stockpot halfway with water.
  • Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary, until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool.
  • Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area, and wait at least 3 weeks before opening.
