- In a large saucepan, heat butter over medium heat. Add onion; cook and stir until tender, 3-5 minutes. Add garlic; cook and stir 1 minute longer. Stir in flour until blended; gradually whisk in broth and wine until blended. Stir pickles, sugar, vinegar, Worcestershire sauce, salt, dill, curry powder, pepper and bay leaves. , Bring to a boil, stirring constantly; cook and stir 3-5 minutes or until thickened. Reduce heat; stir in milk. Remove bay leaves. If desired, stir in food coloring and serve with croutons.

- In a large saucepan or soup pot with cover, combine stock, pickles, pickle liquid & potatoes. Bring to a boil, reduce heat and cook covered, over low heat until potatoes start to get soft (about 10 minutes).
- Combine flour and milk, add to broth, bring to a boil and remove from heat.
- Combine egg and butter and stir into broth.
- Return pot to the stove and heat through without boiling. Season with salt and pepper. Garnish with sour cream and or dill.

- In a large saucepan or soup pot with cover, combine chicken broth (or stock), bouillon, carrots, potatoes and celery.
- Bring to a boil, reduce heat and cook covered, over low heat, til potatoes start to get soft (about 10 minutes).
- Do not over cook. Add pickles and continue cooking about 15 minutes.
- In a small bowl, beat milk and flour til smooth and stir in a small amount of the hot soup (to temper) and add to soup.
- Bring to the boil and cook til slightly thickened.
- Remove from heat.
- In a small bowl, beat egg with sour cream till smooth and stir in a small amount of the hot soup.
- Add to soup and stir til smooth.
- Keep soup warm but DO NOT BOIL (the soup will curdle).
- Salt and pepper to taste
- Garnish with parsley and dill (optional).

- Combine 5 cups water, the butter, the carrots and potatoes in a saucepan. Bring to a boil and cook until the potatoes are tender. Add the pickles and continue to boil.
- Meanwhile, whisk together the flour, sour cream and salt in a separate bowl. Add enough water to make a paste, then slowly, to avoid curdling, add the mixture to the soup to thicken. Bring to a boil, then remove from the heat. Add pickle juice, to taste.

- Heat 2 tablespoons butter in a pot over medium heat; cook and stir onion and dill pickle until onion is translucent and soft, 5 to 10 minutes. Add water and bring to a boil for about 30 seconds.
- Transfer pickle mixture to a blender; add dill pickle juice and dill. Blend mixture until smooth; add half-and-half and blend until smooth. Pour soup back into the pot.
- Stir celery salt into soup and bring to a simmer.
- Combine 1 tablespoon butter and flour together in a skillet over medium heat; cook and stir until roux is smooth and lightly browned, about 5 minutes. Stir roux into soup until thickened.

CHICKEN-DILL PICKLE SOUP

- Preheat the oven to 375˚ F. Microwave 3 tablespoons butter in a microwave-safe bowl until melted, about 1 minute. Toss with the bread cubes on a baking sheet; spread in a single layer. Bake, stirring occasionally, until crisp, 20 to 25 minutes.
- Meanwhile, melt the remaining 3 tablespoons butter in a large pot over medium-high heat. Add the leek and cook, stirring, until softened, 2 to 3 minutes. Add the garlic and cook until softened, 1 to 2 minutes. Add the potatoes, chicken broth, 1 cup pickles and 2 cups water; cover and bring to a boil. Reduce the heat to a simmer, cover and cook until the potatoes are tender, 10 to 12 minutes. Stir in the chicken and cook until heated through, 2 to 3 minutes.
- Stir the dill and 1 tablespoon pickle brine into the soup; season with salt and pepper. Add more pickle brine to taste. Divide the soup among bowls and top with the croutons, the remaining 1/4 cup pickles and sour cream.

- Add potatoes; cook until soft, about 20 minutes.

POLISH DILL PICKLE SOUP
We were at a Polish restaurant recently and they had fantastic Dill Pickle Soup. This is my attempt at a recreation! I thought it tasted more pickley that the original, hubby thought it tasted less pickley. See what happens when you get old?!

- 1. Melt butter in a soup pot. Add onion, saute for 2 minutes then add carrots and celery. Sauté for about 5 minutes over medium-high heat. (Don't let veggies brown.) Add garlic and cook for a couple minutes more.
- 2. Once veggies have softened, add potatoes, broth, grated pickle, and bay leaf. Bring to a boil and simmer the soup for 20 minutes, or until the potatoes are soft. Remove the bay leaf, and use an immersion blender to puree the soup so that about half of it is somewhat smooth.
- 3. Stir in 1 tablespoon dill pickle juice and the dill. Taste, then add more pickle juice if desired. Salt and pepper to taste.
- 4. NOTE: If you want, left over American fried potatoes or other left over potatoes can be used!
POLISH DILL PICKLE SOUP
My Mom in Law found this recipe in a local newspaper and asked me to make it. It's very tasty. We served it with toasted seedless rye bread. If you like dill pickles you will love it.

- 1. Place kielbasa in soup pot. Cover with 1 inches of water. Bring to a boil. Lower heat and simmer 1/2 hour.
- 2. Remove kielbasa from pan saving liquid. Slice kielbasa to desired thickness and set aside.
- 3. In a separate skillet heat the bacon fat or butter and saute the onion till soft. Add that to the reserved juice in the kielbasa pot.
- 4. To the kielbasa pot add 1cup water, pickle juice, salt and pepper. Bring to boil. Add potatoes and carrots. Cook uncovered for 20 minutes.
- 5. Combine sour cream and flour in a medium bowl, then slowly stir in 1/2 cup of the broth until smooth.
- 6. Whisk that mixture back in the sauce pan. Bring just to a boil then remove from heat.
- 7. Stir in the chopped pickles, kielbasa and dill.
- 8. Simmer 5 minutes.
DILL PICKLE SOUP (POLISH)
So is anyone familiar with George Thorogood's song called "I Drink Alone" well I should call this, "I Soup Alone" cause my husband HATES pickles so it's just me & bowl of pickle soup. LOL. - 1. In a large saucepan or soup pot with cover, combine stock, grated pickles, pickle juice & potatoes. Bring to a boil, reduce heat and cook covered, over low heat until potatoes start to get soft (about 1o-15 minutes).
- 2. Combine flour and milk, add to broth, bring to a boil and remove from heat. I added the butter to the soup and tempered the egg into some separated broth and then back into the soup. (These are the main products I added to this recipe and also some heavy cream.)
- 3. This is more of a brothy soup, so I ladled out some of the potatoes and dill pickle from the bottom and then added 2 more scoops of broth on top. This is what the soup looks like with just the first ladle.
- 4. This is a bowl of dill pickle soup with garnishment and is ready to it.
- 5. This recipe makes 2 quarts plus my 2 small bowls that I ate.
CLASSIC POLISH DILL PICKLE SOUP
It sounds strange but I have been told by Polish friends about dill pickle soup in the past so it has to be worth a try if only to try something different.

- Place stock in a 5- to 6-quart soup pot.
- Add pork, reserved bones, pickles and pickle juice.
- Bring to a boil, turn the heat down to a simmer and cook for 30 minutes or until pork is barely tender when tested with a fork.
- Remove bones.
- Add potatoes and ketchup.

- Place the potatoes, carrots, onions, pickles, seasonings, pickle juice and chicken broth into the crockpot. Set on LOW and cook for 5-6 hours or HIGH for 3-4 hours or until the potatoes are tender.
- About 1 hour before the potatoes are done cook up the ground beef and bacon, draining the grease from both. Add both to the crock pot and continue to let cook that remaining hour.
- When the crockpot mixture is ready, add the butter to a skillet and melt over low heat. When melted, slowly whisk in the flour and cook for 1 minute. Whisk in the milk, additional salt and pepper to taste and allow it to thicken (a few minutes).
- Taking a potato masher, smash the cooked potatoes and carrots just a bit to help thicken the soup, leaving it as chunky or smooth as you like.
- Pour the thickened milk into the crockpot and stir. Add in the shredded cheese and stir to combine.
- Cover the crockpot with the lid and allow to cook another 30 minutes on the WARM setting.
- Serve with additional cooked bacon and chopped pickles! Or a side of bread for dunking.
EASY SLOW COOKER DILL PICKLE SOUP RECIPE

To the bowl of a slow cooker, add the remaining chicken broth and the butter, flour and broth mixture and whisk until combined. - 1. Heat olive oil over medium heat in a dutch oven or heavy stock pot. Add onions, celery and carrots and cook for 4-5 minutes; stirring several times.
