  • Heat a large skillet over medium heat. Brush some of the mustard glaze onto one side of the ham steaks. Place glazed-side down in the skillet. Brush some glaze on top of the ham steaks. Cook, turning frequently and brushing on more glaze, until heated through and the glaze has thickened, about 10 minutes.

1 tablespoon Dijon mustard
2 tablespoons green peppercorns, packed in brine

Pommes Frites, recipe follows
2 (12 to 16-ounce) boneless New York cut shell steaks, tenderized
2 tablespoons Dijon mustard
Coarsely ground black pepper, to cover both sides of steak
Olive oil, for sauteing
Salt, to taste
4 tablespoons whole, unsalted butter
2 cloves garlic, minced
1/4 cup shallots, minced
8 ounces white mushrooms, sliced
1 cup beef stock
Garlic Aioli Sauce, recipe follows
Fresh Vegetable Relish, recipe follows
2 to 3 large russet potatoes
Vegetable oil, for frying
Salt and pepper to taste
1 to 2 cloves garlic, minced
2 lemons, halved
4 to 6 egg yolks*
Olive oil
1 to 2 celery stalks, diced
4 Roma tomatoes, diced
1 cucumber, diced
1 red onion, diced
1 to 2 carrots, diced
Feta cheese, crumbled
Fresh dill, chopped

Steps:

  • Use a meat mallet to slightly reduce the thickness of each steak. Spread both sides of each steak with a thin coating of Dijon mustard. Sprinkle with salt and cover both sides with coarsely ground black pepper. Heat olive oil in a large, heavy skillet over medium-high heat and cook the steaks 3 to 4 minutes on each side. The steaks should be rare at this point. Set them aside and lightly cover them so they stay warm. Do not wash out the pan.
  • Mushroom, Green Peppercorn and Dijon sauce: Heat the butter in a medium sized saute pan over medium-high heat and saute the garlic and shallots for approximately 1 minute. Add the mushrooms, raise the heat to high, and cook for an additional 5 minutes. Add beef stock, cream, and mustard, and then reduce the sauce by 1/2. Once the sauce is made, reheat the skillet, in which the steaks were cooked, to medium-high heat. Add the steaks and cook for another 2 minutes on each side for a medium-rare steak. Transfer them to dinner plates, which have been coated with the mushroom Dijon sauce. Once you plate the steaks, spoon more of the sauce on top of each steak. Serve with Pommes Frites, Aioli, and Vegetable Relish.
  • Thoroughly clean the outer surface of the russets and peel the skin using a vegetable peeler. Slice the potatoes lengthwise into thick strips. Pour enough vegetable oil in a pot to cover the potato slices. Once the oil is hot, carefully put the potato strips into the pot and fry them until they are brown and crispy. Remove the potatoes from the pot and drain the excess oil onto paper towels. Salt and pepper, to taste, while the potatoes are still hot. Serve with a fresh Garlic Aioli Dipping Sauce.
  • Finely mince 1 or 2 cloves of garlic in a food processor. Add in the egg yolks and then squeeze the juice from a couple of lemons into the processor bowl. Blend the ingredients together until they fully integrate. While the mixture processes, slowly drizzle in olive oil until the sauce emulsifies.
  • Dice all of the ingredients and combine them in a medium sized bowl. Stir the diced vegetables together, until they are fully integrated.

1 tablespoon honey
1/4 cup extra-virgin olive oil
1.5 cups mixed greens

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the Dijon, juice of 1 lemon, thyme, garlic powder, 1/2 teaspoon pepper and 2 tablespoons of the vegetable oil in a small bowl; whisk until combined and homogenous.
  • Remove 2 tablespoons of the marinade and rub all over the steak for 1 minute. Let sit for 10 minutes at room temperature.
  • Meanwhile, whisk the juice of the remaining 1/2 lemon and the honey into the remaining marinade until the honey is blended. Season with salt. While whisking slowly, add the olive oil. Whisk constantly for 2 minutes; set aside to dress the salad later.
  • Heat a large ovenproof saute pan over high heat for 2 minutes 30 seconds. Season the steak all over with 1 teaspoon salt.
  • Add the remaining 2 tablespoons vegetable oil to the hot pan, then add the steak. Cook until crusty and browned, about 1 minute on each of the 4 long sides of the steak.
  • Place in the oven for 3 minutes. Remove the steak from the pan and let rest for 2 minutes before serving.
  • Meanwhile, toss the mixed greens with the dressing. Slice the steak and serve alongside the salad.

4 each 10 ounce rib eye steaks
2 tablespoons coarse ground black peppercorn
1 tablespoon coarse ground white peppercorn
1 tablespoon coarse ground green peppercorn
1 tablespoon coarse ground red peppercorn
1/2 tablespoon szechwan peppercorn
Salt to taste
4 heads roasted garlic
2 tablespoons dijon mustard
2 egg yolks
2 cup canola oil
Juice of 1/2 lemon
Salt and black pepper to taste
6 large baking potatoes, washed and wrapped in foil and pricked (Can use leftover mashed potatoes)
8 garlic cloves
1 cup chopped scallions
1 cup heavy cream
2 tablespoons butter
2 cups AP flour
3 eggs, beaten
2 cups panko
Salt and black pepper to taste
2 large, ripe tomatoes, sliced 1/16"
Extra virgin olive oil
Balsamic vinegar
Fleur de sel
Cracked black pepper

Steps:

  • Mix the peppercorns together on a plate. Season the steaks with salt then press lightly into the peppercorns on both sides. Place on a hot grill. Cook for 6-8 minutes, turning once for medium-rare. Let rest 3 minutes before serving.
  • For the aioli: In a food processor, add roasted garlic cloves, dijon and yolks. While processor is on, drizzle in oil, slowly at first until it emulsifies then more quickly. Add juice, salt and pepper and pulse to incorporate. Check for seasoning. Store in fridge.
  • For the fries: Bake the potatoes until fully cooked (about 45 minutes at 350 degrees, knife should slide off potato when pricked). In a sauce pan, add cream and garlic and reduce by 50 per cent on low heat, about 15 to 20 minutes. With a hand blender, mix well and check for seasoning. When the potatoes can be handled, scoop out flesh into a bowl. Fold in the cream, scallions and butter and hand mash. You can use a mixer fitted with a paddle. Check for seasoning. Spread mash on 1/2 sheet tray, 1/2" thick. Cover with plastic, top with another tray and press firmly. Chill overnight in the fridge. You may freeze the mash in 4 hours. Slice rectangular 'fries' (3x1/2x1/2). Dredge in flour, egg then panko. Fry at 350 degrees until GB & D, about 5 minutes. Season with salt.
  • For the salad: On 4 large plates, spread out the tomato like carpaccio slices. Drizzle lightly with oil and vinegar and season with Salt and pepper.
  • Plating: On the above tomato plates, stack the fries up and place steak in front. Serve the aioli in a ramekin for both the steak and fries.

2 teaspoons shallot, minced
1 tablespoon dijon mustard
½ teaspoon worcestershire sauce
1 teaspoon honey
2 tablespoons extra virgin olive oil
¼ cup red wine vinegar
1.25 lb boneless new york strip steak, about 1¼ inches (3 cm) thick
1 head red leaf lettuce, washed, dried, and cut into ½-inch (1.25 cm) pieces
½ cup walnuts, toasted, chopped
¼ cup gorgonzola cheese, crumbled

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • Spread the sliced onion on half of the baking sheet and arrange tomatoes on the other half. Drizzle each side with 1 tablespoon olive oil and season with salt and pepper. Toss to coat.
  • Roast in the oven for 10-15 minutes, or until the onion is caramelized and the tomatoes are browned in spots and just beginning to burst. Remove from oven and let cool.

  • Heat a cast-iron skillet over medium-high heat. Add the remaining tablespoon of olive oil to the hot skillet. When the oil is smoking, add the steak to the pan. Sear for 5 minutes, or until a deep golden brown crust forms. Flip the steak and cook another 5 minutes on the other side. Sear the sides of the steak until golden brown, another 3-4 minutes total.
  • Transfer the pan with the steak to the preheated oven for about 5 minutes, or until an instant-read thermometer inserted into the center of the steak reads 125-130˚F (51-54˚C) for medium-rare. Remove the steak from the oven and let rest for 10 minutes before slicing.
  • Add the lettuce to a large bowl. Add the roasted tomatoes, roasted onion, walnuts, Gorgonzola, and sliced steak. Toss well. Divide the salad between serving bowl and drizzle over the dressing.

  • Soak the onions in a bowl of cold water for 10 minutes (this helps remove some of the pungent bite).
  • Pierce the steaks with a fork and sprinkle with salt and pepper. Coat them in 3 tablespoons of the French Style Dijon Balsamic Vinaigrette in a shallow bowl or baking dish. Set aside while you prepare the blue cheese butter and salad.

1 lb boneless beef top sirloin steak, cut 1-inch thick
3 tablespoons salad oil
3 tablespoons white balsamic vinegar or 3 tablespoons white wine vinegar
2 teaspoons Dijon mustard
1 teaspoon dried oregano, crushed
6 cups boston lettuce, Bibb lettuce or 6 cups romaine lettuce, shredded
1 1/2 cups halved grape tomatoes or 1 1/2 cups chopped seeded tomatoes
1 medium avocado, pitted, peeled and cut into wedges
3/4 cup crumbled blue cheese
6 slices bacon, crisp-cooked, drained, and crumbled
3 hard-cooked eggs, sliced
1/3 cup white balsamaic vinegar or 1/3 cup white wine vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/3 cup olive oil

Steps:

  • For steak marinade: In a screw-top jar, combine oil, vinegar, mustard, and oregano. Cover and shake well. Place steak in a reseable plastic bag and pour marinade over steak slices. Seal bag; turn to coat steak slices; set in a shallow dish and marinate in the refrigerator for at least 6 hours or up to 24 hours, turning bag occasionally.
  • Preheat broiler. Drain steak slices, discarding marinade. Slash fat edges of steak at 1-inch intervals, being careful not to cut into the meat. Place steak on the rack of an unheated broiler pan. Broil 3 inches from heat for 15 to 17 minutes or until medium doneness (160 degree), turning once halfway through broiling. At this point season with salt and pepper, if desired. Cool slightly; cut into thin slices.
  • To serve: Arrange shredded lettuce in a chilled large bowl. Place steak slices, tomatoes, avocado, cheese, bacon, and eggs on top of the lettuce. Drizzle some of the Dijon Vinaigrette over salad.
  • To make Dijon Vinaigrette: In a small bowl, white balsamic vinegar or white wine vinegar; Dijon mustard; garlic, minced, sugar, salt and pepper. Add olive oil in a slow steady stream, whisking constantly.

1 lb trimmed sirloin, about 1 inch thick
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup port wine (or other sweet red wine)
1/4 cup minced shallot
1 teaspoon minced garlic
1/2 cup low sodium beef broth
1 tablespoon Dijon mustard
1/2 teaspoon fresh thyme leave

Steps:

  • Cook noodles according to package directions; drain and keep warm.
  • Meanwhile, heat a nonstick skillet over med-high heat.
  • Sprinkle both sides of steak with salt and pepper; lightly coat steak with cooking spray.
  • Add steak to pan; cook 4 minutes on each side or until desired degree of doneness.
  • Transfer meat to platter; keep warm.
  • Add port to pan, scraping to loosen browned bits.
  • Stir in shallots and garlic; cook 45 seconds, stirring often.

2 Tbsp. oil
1 pkg. (16 oz.) baby carrots
1 large onion, sliced
1/3 cup fat-free reduced-sodium beef broth
2 Tbsp. GREY POUPON Dijon Mustard

Steps:

  • Sprinkle meat with pepper; press into meat with back of spoon. Heat oil in large skillet on medium-high heat. Add meat, in batches; cook 2 to 3 min. on each side or until browned on both sides. Drain.
