1/4 cup butter, cubed
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1/4 teaspoon salt
2 orange roughy fillets (6 ounces each)
Dash paprika

Steps:

  • In a small saucepan, melt butter. Remove from the heat; stir in the lemon juice, mustard and salt. Remove 2 tablespoons; set aside. Pour remaining marinade into a large resealable plastic bag; add the fillets. Seal bag and turn to coat; set aside for 20 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fish, covered, over medium heat or broil 4 in. from the heat for 7-10 minutes or until fillets flake easily with a fork., To serve, arrange fish on a plate. Drizzle with reserved marinade; sprinkle with paprika.

1/4 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
2 Tbsp. GREY POUPON Dijon Mustard
1/4 tsp. black pepper
4 small salmon steaks (1 lb.), 1 inch thick
3/4 lb. sugar snap peas, trimmed

Steps:

  • Heat grill to medium-high heat.
  • Mix first 3 ingredients until blended. Reserve half for later use; brush fish with remaining mayo mixture.
  • Grill fish 14 to 16 min. or until fish flakes easily with fork, turning after 8 min.
  • Meanwhile, bring 2 inches water to boil in large saucepan. Place peas in steamer basket; place over boiling water. Cover; cook 5 min. or until peas are crisp-tender.
  • Place fish on plate; drizzle with reserved mayo mixture. Serve with peas.

4 (8-ounce) fish fillets such as red snapper
Kosher salt and freshly ground black pepper
8 ounces creme fraiche
3 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons minced shallots
2 teaspoons drained capers

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a sheet pan with parchment paper. (You can also use an ovenproof baking dish.) Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.
  • Combine the creme fraiche, 2 mustards, shallots, capers, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered. Bake for 10 to 15 minutes, depending on the thickness of the fish, until it's barely done. (The fish will flake easily at the thickest part when it's done.) Be sure not to overcook it! Serve hot or at room temperature with the sauce from the pan spooned over the top.

8 tablespoons bread crumbs
