Dijon-Tarragon Chicken, Mashed Potatoes with Brie or Camembert and Rainbow Chard with Bacon and Leeks image

Number Of Ingredients 25

4 medium or 3 large russet potatoes
4 large cloves of garlic
Salt
1/4 cup milk or chicken stock
8 ounces ripe Brie or Camembert
White pepper or finely ground black pepper, to taste
4 pieces boneless, skinless chicken breasts
Salt and pepper
2 tablespoons EVOO
2 tablespoons butter
1 large or 2 medium shallots
2 cloves garlic
1 cup white wine
1 cup chicken stock or bone broth
About 1/3 cup creme fraiche or 1/2 cup heavy cream
2 tablespoons Dijon mustard
1/2 lemon
About 1/4 cup stemmed fresh tarragon
About 1 tablespoon olive oil
1 large bundle rainbow chard
6 slices meaty bacon
1 leek, trimmed
Salt and pepper
A little freshly grated nutmeg, to taste
1/2 lemon

Steps:

  • For the mashed potatoes: Peel potatoes and cube into uniform pieces, 8 per potato. Smash two cloves of garlic. Place potatoes and smashed garlic in saucepot, cover with water, cover pot and bring to boil. Season with salt and cook to tender, removing lid once potatoes boil. Return the potatoes and garlic to hot pot after draining, then add milk or stock and cheese and mash. Season with pepper of choice, then keep covered.
  • For the Dijon-tarragon chicken: While potatoes are coming to a boil, remove tenders from chicken and pound the breasts (if they are large) 1/2 inch thick, then cut each into 3 pieces. Season chicken breasts and tenders with salt and pepper.
  • Heat a large cast-iron skillet over medium-high heat with EVOO and melt butter into oil. When it foams, add chicken and brown on both sides, 6 to 7 minutes.
  • Peel and chop shallot and chop or grate garlic.
  • Remove chicken to a plate, add shallots and garlic and stir a minute or so. Add wine and reduce to 1/4 cup, then add stock and bring to boil. Add creme fraiche or heavy cream and simmer at low rolling boil 2 to 3 minutes, then add Dijon and juice of 1/2 lemon. Chop and add tarragon, slide chicken back into pan and leave on warm or cover pan.
  • For the chard with bacon and leeks: While chicken is working, heat a large nonstick skillet over medium-high heat with 1 tablespoon of olive oil, 1 turn of the pan. Stem chard and chop stems; shred the greens. Chop and add bacon to the pan and brown to crisp, 4 minutes. Quarter leek and trim root, then chop; add chard stems and leek to bacon, stir 2 minutes, then wilt in chard greens. Season with salt and pepper and nutmeg to taste, then add juice of 1/2 lemon.
  • Serve chicken alongside mashed potatoes and greens with bacon.

Sour Cream Mashed Potatoes With Roasted Garlic, Dijon Mustard and Bacon image

2 pounds whole russet or Yukon gold potatoes
Kosher salt
1 stick softened butter or 1/2 cup extra-virgin olive oil
1 1/2 cups sour cream
Freshly ground pepper
4 heads garlic
2 tablespoons dijon mustard
1/2 pound bacon, cooked and crumbled

Steps:

  • Put the potatoes in a saucepan; cover with cold water and add 2 tablespoons kosher salt. Bring to a simmer over medium-low to medium heat and cook, uncovered, until tender, about 45 minutes. Drain the potatoes and let sit until just cool enough to handle, then peel and transfer to a bowl.
  • Add the butter to the potatoes. Add the sour cream, 2 teaspoons kosher salt, and pepper to taste; mash with a potato masher or fork.
  • Halve the garlic heads crosswise, put them on a sheet of foil and drizzle with olive oil; wrap and roast at 350 degrees F, 1 hour. Squeeze out the cloves; mash and stir into the potatoes. Fold in the mustard. Spoon the mashed potatoes into a serving dish and sprinkle with the bacon.

¾ cup reduced fat sour cream
½ cup nonfat milk
2 tablespoons Dijon mustard

Steps:

  • Place the cubed potatoes in a pot with enough water to cover. Bring to a boil, and cook 15 minutes, or until tender.
  • Drain potatoes and transfer to a bowl. Mash with a potato masher, and gradually mix in the sour cream, nonfat milk, and Dijon mustard. Season with garlic salt and pepper.

Steps:

  • Cook potatoes, onion and garlic in boiling water in large covered saucepan 20 minutes or until potatoes are tender; drain.

1 pound yukon gold potatoes
Salt
1/2 cup milk
2 tablespoons unsalted butter
Pinch ground nutmeg
1 tablespoon whole grain Dijon mustard
Freshly ground black pepper

Steps:

  • Fill a large saucepan about halfway, with warm water. Bring to a simmer. Peel and slice potatoes, and add them to the simmering water. Add a few pinches of salt, increase the heat, and bring to a boil. Check the potatoes with a knife. If the knife has some resistance, continue simmering the potatoes until the knife comfortably slides through the potatoes. When the potatoes have cooked through about 15 minutes, drain them in a large colander. Add them back to the saucepan. To the saucepan, add the milk and butter, followed by a the nutmeg. Mash potatoes until smooth. Stir in Dijon mustard. Season with more salt and pepper, to taste.

4 medium potatoes (peeled or unpeeled, your preference)
1 tablespoon minced garlic, for potato water (optional)
1 cup milk
3 -4 tablespoons Dijon mustard or 3 -4 tablespoons grainy mustard
1 tablespoon minced garlic
1/8 cup butter
1/4 cup parmesan cheese
salt and pepper

Steps:

  • Cut potatoes into quarters, cover with water and optional garlic and boil until tender- I used red potatoes with skin on.
  • Alternatively, steam potatoes and garlic together.
  • Just before potatoes are done, combine milk, Dijon mustard, garlic, salt and pepper until well mixed in a microwave safe bowl.
  • Cover and heat in microwave for about 2 minutes, stirring half way until heated through.
  • Drain potatoes, return to pot and mash lightly.
  • Add butter, salt, pepper and mash again.
  • Slowly add hot milk and mustard mixture, mashing until the potatoes are creamy and your preferred consistency.
  • Add Parmesan cheese, mix and serve!
  • NOTE- make sure you get some of the mustard grains in when you mash the potatoes.
  • The grains may separate a bit if you pour the milk mixture in, so you might want to spoon in the milk and mustard mixture.

1/2 c milk or half & half (half & half makes them creamier
2 Tbsp unsalted butter
1 pinch ground nutmeg
1 Tbsp whole grain dijon mustard
freshly ground pepper, to taste

Steps:

  • 1. Fill large saucepan halfway with water. Bring to a boil. Add salt.
  • 2. While waiting for water to boil, peel and slice potatoes. Add to water.
  • 3. Cook about 15 minutes and drain when done. Put back in pan, add milk, butter and nutmeg. Mash until smooth. Add mustard. Mix well. Add salt & pepper if needed, to taste
