DEVILISHLY DIFFERENT GREEN DEVILED EGGS

I was bored with traditional deviled eggs and had been trying to find more ways to cook with avocados. I made these for a Kentucky Derby party and all 24 were gone within minutes! Next time I will need to make a double batch.

12 eggs
2 avocados - halved, pitted, and mashed
1 small white onion, diced
1 plum (Roma) tomato, seeded and diced
3 tablespoons finely chopped fresh cilantro
1 lime, juiced
1 jalapeno pepper, seeded and minced
2 teaspoons chopped garlic
salt and freshly ground black pepper to taste
24 pickled garlic cloves (such as Sonoma Farm Tex-Mex Sweet & Hot Garlic Cloves®)
8 pickled jalapeno pepper slices, minced

Steps:

  • Place eggs in a saucepan; cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
  • Stir together mashed avocado, onion, tomato, cilantro, lime juice, jalapeno, and chopped garlic; season with salt and pepper. Refrigerate guacamole, tightly covered, for 1 hour.
  • Drain pickled garlic cloves and minced pickled jalapeno on a plate lined with paper towels.
  • Cut each egg in half lengthwise; set yolks aside for another use. Clean away any remaining yolk from egg white halves with a wet paper towel. Place egg whites cut-side up on a serving platter.
  • Spoon a generous amount of guacamole into each egg white half; top each deviled egg with a pickled garlic clove. Sprinkle minced pickled jalapeno, salt, and black pepper over deviled eggs.

8 hard-boiled eggs
1 (8 ounce) container soft-spreadable cream cheese
2 tablespoons sweet pickle relish
1/2 teaspoon dry mustard
salt and pepper

Steps:

  • Peel eggs and halve lengthwise; place yolks in a mixing bowl and set whites aside.
  • Mash yolks with the cream cheese, then add the relish and the dry mustard; substitute 2 tsp prepared yellow mustard if dry mustard powder is not available; stir well.
  • Taste filling and add salt and pepper to taste.
  • Fill whites, either with a teaspoon or get fancy and use a pastry bag with a star tip, and chill until serving.
  • Traditional garnish is a sprinkling of paprika.

This is an easy appetizer good for any occasion. There are many different ways to do Deviled Eggs but this one happens to be a personal favorite!

12 eggs hard boiled
4 Tbsp cottage cheese
3 Tbsp ranch dressing
2 Tbsp regular or dijon mustard
2 Tbsp chives or dill weed
4 Tbsp sweet relish
paprika

Steps:

  • 1. Boil the eggs in a saucepan with enough water to cover the eggs. Boil for 15 minutes; drain and let the eggs cool in cold water. ( I usually put them in the freezer for 15 minutes ) Remove and discard the egg shells.
  • 2. Slice eggs lengthwise in half. Remove egg yolk reserving 4 yolks. Discard remaining yolks or use them for something else. Place egg whites cut sides up on a serving platter.
  • 3. In a medium bowl combine cottage cheese, ranch dressing, mustard, relish and the 4 egg yolks. Smash and mix with a fork until smooth. Stir in chives. Spoon the mixture into each egg white. Cover and chill 1 hour.
  • 4. Remove eggs before serving and sprinkle with Paprika.

6 eggs hard-cooked,* halved lengthwise
3 1/2 tablespoons mayonnaise real
1 ounce sweet pickle finely chopped (2 tablespoons)
1/2 teaspoon celery seed
1/4 teaspoon horseradish prepared
1/4 teaspoon salt, to taste
1/8 teaspoon parsley
1/4 teaspoon pepper, to taste

Steps:

  • 1. Remove yolks from eggs and place in a medium bowl set whites aside. Mash yolks. Add mayonnaise, pickle, celery seeds, horseradish and salt and pepper to taste mix until smooth. Taste for additional seasoning. Fill egg whites with yolk mixture. Dust tops with paprika.
