I got this at a Weight Watchers meeting! I don't remember how many points it was, though! I'm sure it could be figured out....

1 (15 ounce) can pumpkin
1/3 cup packed brown sugar
2 teaspoons pumpkin pie spice
2/3 cup fat-free evaporated milk
1/2 cup fat free egg substitute
1 (9 inch) frozen deep dish pie shells

Steps:

  • Adjust oven rack to middle, preheat to 425 degrees.
  • Wisk together the pumpkin, brown sugar and pie spice until smooth.
  • Blend in milk and egg substitute.
  • Pour into pie shell and bake until knife inserted comes out clean, about 1 hour (45 min @ 350).
  • Cool for 2 hours.

1 can Pumpkin Pie filling
1 8 oz. pkg. fat-free cream cheese
1 small tub fat-free whipped cream
1 low fat/low calorie graham cracker pie crust
1/2 tsp. cinnamon
1/4 tsp. pumkin pie spice
1/4 tsp. nutmeg

Steps:

  • In large bowl, blend pumpkin pie filling, cream cheese and spices. Stir in whipped cream. Pour mixture into graham cracker crust. Invert pie crust packaging lid and crimp the foil to seal lid. Chill in fridge at least 4 hours.

1/2 cup skim milk
1 (1 ounce) package sugar-free instant vanilla pudding mix
1 teaspoon pumpkin pie spice
1 (8 ounce) container fat-free whipped topping

Steps:

  • In a medium bowl, mix together the pumpkin, milk and instant pudding mix.
  • Stir in the pumpkin pie spice, and fold in half of the whipped topping.
  • Pour into an 8 inch pie plate, and spread remaining whipped topping over the top.
  • Chill for 1 hour, or until set.
