CHEESY PORK AND RICE SKILLET
This Cheesy Pork and Rice Skillet is all made in just one pan for a quick and easy weeknight dinner!

Steps:
- Heat the olive oil in a large skillet over medium heat. Saute the pork with the garlic and onions, until the pork is browned and the onions are tender (about 5 to 7 minutes).
- Add the rice, Italian seasoning, frozen peas and carrots and chicken broth tot he skillet. Bring to a boil, reduce heat to a simmer and cover. Cook for about 18 minutes or until rice is tender, stirring occasionally.
- Stir in the sour cream and 1/2 cup of the cheese until combined. Top with the remaining cheese. Cover with the lid for an additional 2 to 3 minutes, until the cheese melts. Or optionally, you can place the skillet under your oven's broiler for about 2 minutes until cheese is bubbly and melted. Enjoy!

- Remove fat from pork. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet about 5 minutes, turning once, until brown.
- Add broth, potatoes, carrots and onions to skillet. Sprinkle with salt and pepper. Heat to boiling; reduce heat. Cover and simmer about 30 minutes or until vegetables are tender and pork is slightly pink when cut near bone. Sprinkle with parsley.

- Heat butter in a skillet over medium heat; cook pork chops in the melted butter until cooked through, 10 to 15 minutes. Remove pork chops from skillet and cut into bite-sized pieces.
- Pour water and long grain and wild rice mix with herbs into the same skillet; stir well. Layer pork chop pieces over rice. Pour corn over pork chops layer; top with tomatoes. Cover skillet and simmer until rice is tender and liquid is absorbed, 30 to 40 minutes.

- Heat a large skillet over medium-high heat. Add pork; saute until golden brown, 6 to 7 minutes. Remove to a plate. Add onions and peppers to the skillet and saute until browned, 6 to 8 minutes. Stir in pork, diced tomatoes, chicken broth, and garlic. Add vinegar, garam masala, curry, salt, black pepper, cumin, mustard, basil, and oregano. Simmer for 10 minutes.
- Add mushrooms and simmer for 10 minutes more. Stir water and cornstarch together in a small bowl and pour into the skillet. Cook and stir until thickened, 2 to 3 minutes. Season to taste.

DICED PORK SKILLET DINNER RECIPE

- Heat wok or large frying pan on medium. Add first amount of cooking oil. Add next 4 ingredients. Stir-fry for about 3 min. until vegetables are soften. Transfer to bowl. Add second amount of cooking oil to hot wok. Add eggs. Break yolks. Cook, without stirring until starting to set. Turn over. Cut egg with straight edge of pancake lifter in 1 direction. Cut across in opposite direction to make small diced pieces. Add pork and peas. Stir-fry for 1 to 2 min. until peas are thawed. Add rice, salt and pepper. Stir-fry for about 5 min. until rice is separated and heated through. Add mixhroom mixture. Add soy sauce slowly, stirring until mixture is combined and evenly coloured. Sprinkle with onion. Makes 7 cups
