EASY FRUGAL ONE POT MAC AND CHEESE WITH HAM FOR THE FREEZER OAMC
Living on a fixed income, I'm always looking for ways to stretch my tiny budget. It gets pretty tight at the end of the month around here! Since I'm cooking only for myself and DH, I thought I should start hitting the sales and putting some food in the freezer for that austere end of the month time. Since it's not included in my budget, there are no buttered breadcrumbs on top, but feel free to remove the foil and add them during the last 10 or 15 minutes of baking, I'm sure they would be great! This is a basic recipe that you can alter to your own liking or to whatever you have available. Change up the cheese combo to whatever your suits your taste: "aged" cheddar cheese mixed with fontina, monterey jack, sour cream, cream cheese, or whatever you prefer or have available. I have also made this with higher quality chopped hot dogs and got no complaints from DH. I have also substituted 1/2 cup non-dairy creamer mixed with 2-1/2 cups of water for the milk, worked fine -just sayin'!

Steps:
- In a large pot, cook macaroni in boiling water until almost (but not quite) al dente, about 3 minutes less than you would like it done if you were going to eat it right now.
- drain in colander and rinse well in cold water to stop the cooking process. set aside to drain in colander some more while you finish preparing the other items.
- over medium-low heat, melt 1-1/2 teaspoons butter or oil (any type) in same pot you just boiled the mac inches.
- add diced onion. cook and stir frequently until onions just start to become translucent.
- add diced ham and stir just till warmed. transfer onions and ham to a dish or paper plate and set aside.
- melt 4 oz butter over medium-low heat in same pot you just cooked onions inches when butter begins bubbling, stir constantly until it stops foaming, 2-4 minutes. (this is step 1 to preventing a grainy, flour taste in the sauce!).
- have your whisk at the ready! dump in the flour. whisk, whisk, whisk until all lumps are gone and butter/flour mixture turns golden, about 3-5 minutes. (the second step to preventing a grainy, raw flour tasting sauce!) do no allow it to turn brown! your cheesy sauce will taste burnt and gross if you let the roux get dark!
- dump the milk in all at once and whisk until there are no longer any lumps. add the nutmeg, black pepper and cayenne. increase heat slightly and using your whisk, stir briskly until mixture boils.keep stirring and let it boil for 1-2 minutes (step three to preventing that grainy, icky flour taste!).
- remove from burner and dump in the onion/ham mixture and the cheeses (or cheese and sour cream/cream cheese). stir to blend.
- let sit for 5 minutes to cool down a bit.
- stir in the macaroni to coat well.
- spoon into buttered pan(s) -- whatever type pan you prefer will work. i got a pack of (4) cheapie aluminum 7" pie pans at the dollar store (perfect size for two people!). i filled (3) for the freezer and still had a good-sized bowl left for hubby to eat tomorrow.
- cover with aluminum foil and put in freezer.
- to heat from frozen: preheat oven to 350f. bake for 40-45 minutes if your pan is small (like mine are!) if you froze the entire mixture in one casserole dish, bake for 1 to 1 - 1/2 hours. stir at the 45 minute mark, replace the foil and continue baking.

- Remove rind from cantaloupe and cut into 1 1/2-inch pieces for a total of 24.
- Lay ham slices on work surface. Cut slices lengthwise into thirds.
- Place one melon piece in center of each piece of ham.
- Sprinkle with lime juice, then cayenne, on each piece.
- Wrap ham around melon, securing together with toothpicks or decorative skewers.
- Serve immediately.

SHEET PAN HOLIDAY HAM DINNER
No stove-top cooking is required for this beautiful holiday dinner, complete with glossy marmalade-glazed ham, herby stuffed mushrooms, roasted garlic green beans and buttery rolls. We used bone-in ham steaks, but you could easily swap in boneless. In just one hour, you can have a full and satisfying dinner spread that's easy, elegant and stress-free--perfect for those smaller festive gatherings.

- Arrange 2 oven racks in the middle part of the oven and preheat to 375 degrees F.
- For the green beans: Add the green beans, olive oil, garlic, 1/4 teaspoon salt and a few grinds of pepper to a sheet pan. Toss to coat and spread out evenly. Bake on the upper rack until starting to get tender, about 15 minutes.
- For the stuffed mushrooms: Meanwhile, pop the stems from the mushrooms and use a measuring spoon to scoop out any remaining stem. Reserve the stems and bits for another use.
- Combine the breadcrumbs, Parmesan, cream cheese and parsley in a medium bowl. Season with salt and pepper. Divide the filling evenly among the caps.
- For the ham: Line another sheet pan with foil and spray with nonstick spray.
- Microwave the marmalade in a microwave-safe bowl until melted, about 45 seconds. Add the orange juice, cornstarch, rosemary, 1/4 teaspoon pepper and 2 tablespoons water and whisk to combine.
- Arrange the ham on the prepared sheet pan and brush the glaze on both sides of each ham steak.
- After the green beans have cooked for 15 minutes, remove them from the oven and push them over to the right side of the sheet pan. Add the mushrooms to the left side and drizzle the filling evenly with the olive oil.
- Place the ham on the upper rack and the green beans and mushrooms on the lower rack. Bake, frequently brushing the ham with the glaze, until the glaze starts to thicken up, about 25 minutes.
- For the rolls: Remove the green beans and mushrooms from the oven. Push the green beans to the middle of the sheet pan and arrange the dinner rolls on the right side. Brush the rolls with the melted butter.
- Bake until the dinner rolls are softened, the ham glaze is thickened and glossy, the green beans are tender and the mushroom filling is golden, about another 10 minutes.
DICED HAM DINNER STARTER (OAMC)
Not really a recipe but having this on hand in the freezer gets dinner on the table in no time flat! Check out my Public Cookbook for recipes to use this in. In addition, you will also need a good knife (electric works best) and 10 medium ziploc freezer bags. **NOTE**I do not add the salt and pepper but I could not submit a recipe with only 1 ingredient so I improvised**

- Cut deli ham into cubes about 1 cm (or less)square. (My kids don't like the skin on the ham so I cut that off too).
- Package cubed ham into bags with approximately 1-2 cups of ham in each bag.
- Press out as much air as possible, label and freeze.
- To serve, add ham cubes to your favourite recipes. Defrost in the microwave if necessary.
