4 tablespoons olive oil, divided
6 cloves garlic, crushed
3 cups whole peeled tomatoes with liquid, chopped
1 ½ teaspoons salt
1 teaspoon crushed red pepper flakes
1 (16 ounce) package linguine pasta
8 ounces small shrimp, peeled and deveined
8 ounces bay scallops
1 tablespoon chopped fresh parsley

Steps:

  • In a large saucepan, heat 2 tablespoons of the olive oil with the garlic over medium heat. When the garlic starts to sizzle, pour in the tomatoes. Season with salt and red pepper. Bring to a boil. Lower the heat, and simmer for 30 minutes, stirring occasionally.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat. Add the shrimp and scallops. Cook for about 2 minutes, stirring frequently, or until the shrimp turn pink. Add shrimp and scallops to the tomato mixture, and stir in the parsley. Cook for 3 to 4 minutes, or until the sauce just begins to bubble. Serve sauce over pasta.

6 cloves garlic, crushed
¼ cup olive oil, divided
6 cups canned whole tomatoes with juice, chopped
2 teaspoons red pepper flakes
2 teaspoons chopped fresh oregano
2 teaspoons chopped fresh basil

1 (16 ounce) package linguine
½ pound small shrimp, peeled and deveined

Steps:

  • Heat crushed garlic and 2 tablespoons olive oil in a large saucepan over medium heat until garlic starts to sizzle. Stir in tomatoes, red pepper flakes, oregano, basil, and salt. Bring to a boil, reduce heat to low, and simmer for 30 minutes, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.

1/2 cup onion, diced
1/2 cup red bell pepper, diced

1 tablespoon white wine vinegar
2 teaspoons sugar

Steps:

  • Saute prosciutto in oil in a large nonstick skillet over medium high heat until crisp, 3-4 minutes.
  • Add onion and bell pepper, saute 5 minutes.
  • Stir in tomato paste and garlic, cook 2 minutes.
  • Deglaze with wine, reduce until nearly evaporated.
  • Add remaining ingredients (except salt).
  • Bring to a boil and simmer 8-10 minutes.

This is a quick weeknight meal, and with the right tools, you'll have a fabulous meal on the table in under 30 minutes! I used a ginger tool by microplane to cut my garlic into thin slices, it's best to also use the microplane glove if using this method.

¼ cup olive oil
6 cloves garlic, thinly sliced
1 (28 ounce) can whole Italian plum tomatoes (such as San Marzano)
1 teaspoon red pepper flakes
½ teaspoon salt, or to taste
1 pound gemelli pasta
6 (4 ounce) tuna steaks
¼ cup freshly chopped parsley
2 tablespoons heavy cream
8 leaves basil chiffonade (thinly sliced fresh basil leaves), divided

Steps:

  • Heat a heavy skillet over medium heat. Add oil and wait until it shimmers. Add garlic and cook quickly, being careful not to burn, about 1 minute. Carefully transfer garlic slices to a paper towel-lined plate. Set aside.
  • Add tomatoes, red pepper flakes, and salt to the same skillet. Stir and crush down tomatoes with a wooden spoon. Cover and cook for 5 minutes.
  • Meanwhile, bring a large pot of salted water to a boil and cook pasta until tender yet firm to the bite, about 8 minutes. Drain and set aside.
  • Remove lid from sauce and stir. Add in tuna steaks. Cover and cook until tuna flakes easily with a fork, 8 to 10 minutes. Add 1/2 of the fried garlic, parsley, cream, and 1/2 of the basil.

4 -5 tablespoons olive oil, divided
8 garlic cloves, minced
2 shallots, minced
8 ounces tomatoes, diced (can use canned or fresh)
8 ounces tomato sauce
2 teaspoons crushed red pepper flakes (or to taste)
1/2 teaspoon salt
1 cup white wine (something Dry)
1 1/2 lbs scallops
2 tablespoons fresh parsley (chopped, to taste)
2 tablespoons fresh basil (chopped, to taste)
salt & pepper, to taste

Steps:

  • In a large saucepan, heat 2 tablespoons of the olive oil with 7 cloves garlic and shallots over medium heat.
  • DO NOT BURN THE GARLIC -- If you do, Start Again.
  • When the garlic starts to sizzle, pour in the tomatoes and tomato sauce.
  • Season with salt and red pepper.
  • Bring to a boil.
  • Lower the heat, add the white wine and simmer for 30 minutes, stirring occasionally.
  • Add in the Basil at the 15 minute mark!
  • Meanwhile -- have a glass of wine and continune on --
  • In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat.
  • Add the scallops, and 1 clove of garlic. Season with Salt & pepper.
  • Cook for about 4 minutes. 2 minutes per side should be good. You want the Scallop to still have a spring to it when you press on it. Try not to over cook the suckers -- It will ruin your meal. A nice pearly white and a spring to it is an Excellently Cook Scallop
  • Add the perfectly cooked Scallops to the tomato mixture, and stir in the parsley.
  • Cook for 3 to 4 minutes, or until the sauce just begins to bubble.
  • You can serve this sauce over pasta, rice or just eat it plain it's just that good.

4 cloves garlic, chopped
2 Fresno chile peppers, thinly sliced
1 small red onion, finely chopped

2 pints cherry tomatoes, large tomatoes halved and small tomatoes left whole
1 teaspoon dried oregano or marjoram
1 cup fresh basil leaves (about 20), torn
1/4 cup fresh flat-leaf parsley leaves, chopped

1 1/2 pounds mixed seafood, such as shrimp, crabmeat, lobster meat and firm white fish
Freshly ground pepper
Seafood seasoning, such as Old Bay
1 tablespoon EVOO
1/4 cup dry vermouth
1 pound linguine

Steps:

  • For the sauce: Heat the EVOO in a pot or skillet with a lid over medium to medium-high heat. Add the garlic, chiles and onions. Cook, stirring, for 5 minutes. Season with salt and stir in the sherry. Cook until reduced by half. Add the tomatoes and oregano, cover and cook until the whole tomatoes burst, 10 to 15 minutes. Stir in the basil and parsley. Remove from the heat.
  • For the pasta: Bring a pot of water to a boil for the pasta, and season with salt. Pat the seafood dry and sprinkle with salt, pepper and about 1 teaspoon seafood seasoning. Heat the EVOO in a skillet over medium-high heat. Add the seafood and cook until opaque and firm (or heated through for the crab or lobster). Deglaze the pan with the vermouth, scraping up the browned bits from the bottom.
  • Meanwhile, cook the linguine until al dente, then drain.
  • Toss the linguine with the sauce and fold in the seafood.
  • Cook's Notes: Serve the pasta with a green salad dressed with lemon juice and olive oil.
  • You can make the sauce ahead of time and store it in the refrigerator; reheat it over medium heat.

Grilled Oysters with Fra Diavolo Sauce image

2 tablespoons canola oil
3 very ripe large beefsteak tomatoes, halved, seeded and coarsely chopped
3 cloves garlic, smashed
2 shallots, thinly sliced
1/4 to 1/3 cup olive oil
3 tablespoons chopped fresh flat-leaf parsley, plus leaves for garnish
2 tablespoons red wine vinegar
2 teaspoons honey
2 teaspoons chopped fresh oregano
1/4 teaspoon red chile flakes (or more if you prefer it really spicy)
Salt and freshly ground black pepper
20 to 24 medium to large oysters, such as Blue Point or Gulf Coast
2 cups kosher salt, for serving

Steps:

  • Heat the oil in a medium saute pan over medium heat. Add the tomatoes, garlic and shallots and cook, stirring occasionally, until softened and juicy, but with no color, about 5 minutes.
  • Transfer the mixture to a blender, add a few tablespoons olive oil, the parsley, vinegar, honey, oregano and red pepper flakes and blend until slightly chunky; season with salt and pepper. If too thick, pulse in a bit more olive oil. Transfer the sauce to a bowl. (Can be made 1 hour before and kept at room temperature.)
  • Preheat the grill for high direct heat.
  • Remove the top shells of the oysters. Loosen the oysters from the bottom shells but do not remove, taking care not to spill the liquor. Put the oysters on the grill, cover and cook just until the edges start to curl, about 1 minute.
  • Meanwhile, wet the kosher salt with water just until it clumps together. Spoon little mounds of salt onto a large platter. Place a cooked oyster on each salt bed and top each with some vinaigrette. Scatter the parsley leaves over the platter and serve.

3 tablespoons olive oil
1 onion, finely chopped
4 cloves garlic, finely chopped
1 tablespoon red pepper flakes
3 cups canned plum tomatoes, pureed
1/4 cup dark brown sugar
2 tablespoons white wine vinegar
1 teaspoon honey
Salt and freshly ground pepper
2 porterhouse steaks, about 16 ounces each
1/2 pound cherry peppers
2 tablespoons olive oil, plus 2 tablespoons
Salt and freshly ground pepper
1 red pepper, cored and cut into quarters
1 yellow pepper, cored and cut into quarters
1/4 cup chopped flat-leaf parsley
1/4 cup Basil Vinaigrette, recipe follows
1/2 cup fresh basil leaves
1/4 cup white wine vinegar
1 tablespoon honey
Salt and freshly ground pepper
1/2 cup olive oil

Steps:

  • Heat oil in a medium saucepan on side burners or grates of the grill. Add onion and garlic and cook until soft. Add red pepper flakes and cook for 1 minute. Add remaining ingredients, season with salt and pepper and cook until sauce has thickened, about 25 to 30 minutes.
  • Season steaks on both sides with salt and pepper. Grill until golden brown, about 4 to 5 minutes. Turn over and continue grilling for 4 to 5 minutes for medium-rare doneness. Baste with the sauce during the last few minutes. Remove from the grill and brush with more of the sauce. Let meat rest for 5 minutes then slice into 1/4-inch thick slices.
  • Preheat a grill. Preheat the oven to 400 degrees F. Toss the cherry peppers with 2 tablespoons of the olive oil in a bowl. Season with salt and pepper. Spread the peppers on a sheet pan and roast for 15 to 20 minutes, or until the skin is blistered. Set aside to cool slightly. Remove the stems and seeds from the cherry peppers and roughly chop.
  • Drizzle the red and yellow peppers with 2 tablespoons of the olive oil and season with salt and pepper. Place on the grill and cook until the skin is starting to blacken and blister. Remove from the grill and set aside to cool for 15 minutes. Roughly chop the peppers.
  • In a bowl, combine the cherry peppers, red and yellow tomatoes, parsley, and Basil Vinaigrette. Season, to taste, with salt and pepper. Serve.
  • Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

1/4 cup prosciutto, diced
1 tablespoon olive oil
1/2 medium onion, diced
1/2 medium bell pepper, diced
1 tablespoon tomato paste
2 garlic cloves, minced
1 (14 1/2 ounce) can diced cut tomatoes
1 tablespoon balsamic vinegar
1/4-1/2 teaspoon red pepper flakes
2 tablespoons minced fresh basil
coarse salt, to taste
pepper, to taste
2 cups shredded zucchini
1/2 cup grated onion
1/4 cup seasoned bread crumbs (Seasoned Breadcrumb Mix works well.)
1 egg
1/4 teaspoon baking powder
2 tablespoons extra virgin olive oil
coarse salt, to taste
pepper, to taste
fresh parmesan cheese

Steps:

  • In a medium size saucepan, saute the prosciutto in the olive oil until crisp, add in the onion and bell pepper, cook stirring frequently until crisp tender.
  • Stir in the garlic and tomato paste, cook an additional 2 to 3 minutes, add in the tomato juice from the canned tomatoes and stir mixture scraping up browned bits from bottom of pan.
  • Add the tomatoes, vinegar and red pepper flakes cook until most of the liquid has evaporated add in the fresh basil and season with salt and pepper to taste. Keep warm while preparing the zucchini cakes.
  • Using the large side of the box grater, grate the zucchini and onion. Place in the center of a clean kitchen towel, bring up sides and gently squeeze out the moisture.
  • Place in a medium bowl, add the remaining ingredients and combine well with a spatula.
  • Heat oil in a non-stick skillet over medium heat and when hot drop the mixture into the hot pan forming into 4 equal cakes. Cook the bottom until crisp, turn and gently press down on top. Continue to cook until the other side is crisp and browned.
  • Divide the sauce among 2 plates, top with 2 cakes per each and using a vegetable peeler garnish all with strips of fresh Parmesan cheese.

Mussels:
2-3 lbs mussels
1 tbsp olive oil
1 tsp garlic
1/2 cup white wine
Sauce:
3 (15-ounce) cans diced tomatoes in juice (one or 2 can be fire roasted tomatoes)
6 tablespoons olive oil
2 bay leaves
2-4 cloves garlic, to taste
1/2 or 1 onion diced
1/2 medium carrot, finely diced
1 stalk celery, finely diced
2 teaspoons dried oregano
3 tablespoons tomato paste
1/2 cup white wine
1 teaspoon kosher or sea salt
1 teaspoon freshly ground black pepper
2 teaspoons crushed red pepper
2 (8-ounce) bottles clam juice or 1 15 ounce can of BumbleBee Italian Style White Clam Sauce

Steps:

  • Sauce: In a 5-quart Dutch oven heat the olive oil over medium heat until it is fragrant. Add the onions, carrots, and celery and cook 3 minutes. Add red pepper, garlic, bay leaves and oregano. Cook the vegetables until they are very brown, about 15 to 20 minutes. Stir occasionally, just enough to prevent them from scorching. Add the crushed tomatoes with their juice, the tomato paste, salt and pepper, and the white wine and clam juice and bring to a boil. Lower the heat, and simmer, partially covered until the sauce level has reduced by 2 or 3 inches and the sauce is thick enough to coat the back of a spoon. Cook the sauce for about 1 hour, stirring occasionally so it doesn't stick. Remove from heat, cool down in the pot, then when at room temperature, transfer to a sealed plastic container and refrigerate until ready to use. This sauce will keep 10 days in a well-sealed container in the refrigerator. Mussels and pasta: Cook garlic and a bit of onion in oil, add white wine and mussels and steam 5-7 minutes. Meanwhile, cook pasta. Toss everything and serve.

Salad:
1 large clove garlic, minced
1/3 cup cherry peppers from a jar, stemmed, seeded and cut in quarters
1 red bell pepper, roasted, peeled and chopped
1 cup cherry tomatoes, halved
1/4 cup chopped fresh flat-leaf parsley
1/4 cup olive oil
1 Tbsp red wine vinegar
salt & pepper
Steak:
2 bone-in porterhouse steaks, about 2 lb)

Steps:

  • Make the sauce first. Heat the oil in a saucepan over medium-high heat, and add the onions. Saute until soft but do not brown, about 6 minutes. Add the garlic, red pepper flakes, cayenne and chile powder, and cook an additional minute until fragrant. Add the remaining ingredients and stir well. Simmer until darkened and thick, about 45 minutes. For the salad, simply mix all ingredients together, and set aside at room temperature. Sprinkle the steaks with course salt, and let sit for at least 15 minutes. Heat the grill on high heat. Season the steak with pepper, then place on the grill and cook for 3-4 minutes until lightly charred. Turn the steaks over and brush tops with sauce, lower heat to medium and cook an addition 3 minutes. Brush and turn the steaks for another total 4 minutes or until steaks are cooked to desired doneness. Allow steaks to rest for 5 minutes, lightly tented with foil. (Grill veggies in the meantime if using.) Cut the steak off the bone, and slice thinly. Place on plates, top with pepper tomato salad, and serve remaining sauce on the side.

1/2 c fresh parsley, chopped
1 tsp. basil
1 bay leaf
1 c red wine

Steps:

  • In a deep saucepan heat oil; then add butter till melted. Add onion and garlic; sauté until tender. Stir in tomatoes and other ingredients. Simmer for approximately 1 hour or until tomatoes have cooked down. Remove bay leaf. I always double the recipe and freeze leftovers in 2 to 4 cup containers for future use.
