1 pound fresh, frozen or canned whole baby carrots
Water
2 tablespoons butter
1/4 cup brown sugar

Steps:

  • Cook carrots in a small amount of water until tender. Drain. In a saucepan, combine butter and brown sugar; heat until sugar dissolves. Add carrots and toss to coat. Heat through.

Diabetic Sweet Glazed Carrots image

This colorful and sweet side dish is perfect to accompany chicken or pork. It will do nicely with turkey also.

(1) 16oz pkg baby carrots
1/4 c splenda granulated
1/2 c pineapple juice
1 Tbsp molasses (dark)
1 pinch ground ginger
2 drops maple flavoring
2 Tbsp flaked coconut
1 Tbsp dried cranberries

Steps:

  • 1. Preheat oven to 350 degrees F. Boil 1 quart of water in a saucepan over high heat. Add carrots and cook 10 to 15 minutes or until crisp tender and drain. Place in a shallow 1 1/2-quart baking dish,set aside. Combine SPLENDA Granulated,pineapple juice,and molasses in a small saucepan.
  • 2. Bring to a boil over medium-high heat, stirring constantly. Remove from heat and stir in ginger and maple flavoring. Pour mixture over carrots. Sprinkle with 2 tablespoons flaked coconut and cranberries; toss gently. Bake for 40 minutes stirring after 20 minutes. Serve immediately.
