2 packages (8 ounces each) cream cheese, softened
2 ounces unsweetened chocolate, melted and cooled
Sugar substitute equivalent to 1 cup sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans

Steps:

  • In a small bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Press into an 8-in. square dish lined with foil. Cover and refrigerate overnight. Serve chilled.

1 (8-ounce) package cream cheese, softened
4 cups powdered sugar, sifted
1 (4-ounce) package unsweetened chocolate, melted
1/2 cup chopped walnuts
1 teaspoon vanilla

Steps:

  • Spray an 8-inch square pan with cooking spray or line with parchment paper, leaving an overhang on the edges.
  • In a large bowl, beat the softened cream cheese at medium-low speed until smooth and creamy, about 2 minutes.
  • Gradually beat in the sugar until it's smooth and lump-free.
  • Pour the melted chocolate, chopped walnuts, and vanilla, and beat on low speed for about 3 minutes.
  • Spread the fudge mixture into the prepared pan. Refrigerate it for at least 3 hours or until firm. Slice it into squares. Enjoy!

I found this recipe for a good fudge without many calories and less sugar to make it for my husband, who is diabetic, and it is very good. Enjoy it.

1 (14 1/2 ounce) can low-fat evaporated milk
3 tablespoons powdered cocoa mix
1/4 cup light margarine
1/2 cup Splenda granular
1/4 teaspoon salt
1 teaspoon vanilla
2 1/2 cups graham cracker crumbs
1/4 cup finely chopped pecans

Steps:

  • Combine milk and cocoa in saucepan. Beat well. Add margarine, sugar and salt. Bring to boil.
  • Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes.
  • Divide mixture into 32 balls and roll in remaining cracker crumbs and chill.
