2 cups carrots, grated
1 cup unsweetened pineapple, crushed,drained
1/2 cup raisins
1 (8 ounce) carton plain low-fat yogurt

Steps:

  • Combine carrots, pineapple and raisins; mix well.
  • Chill for 2 to 3 hours.
  • Stir in yogurt and serve on lettuce leaf, if desired.
  • Serving may be exchanged for 1 fruit and 1 vegetable.

Fast, easy, and very colorful. Still one of my favorites after all these years-an easy recipe that I could help make w/ my Nonnie. Can't get any easier than this-5 ingredients! I normally use red delicious apples but have tried all varieties-especially if they are on sale! Adjust ingredients to your liking-just add enough mayo to make creamy. Also, you can sub dried cranberries for raisins for a change. Cooking time is chill time in the fridge, Hope you enjoy this salad as much as my family and I do!!!

1 carrot, grated
1/4 cup raisins
1/4 cup mayonnaise, Hellmans is what I use
fresh ground black pepper, just a sprinkle on top

Steps:

  • Mix all ingredients and chill at least 1 hour or more.
  • (This recipe will feed an army so just adjust to your needs-normally, 1 apple is good for 2 servings.).

3/4 to 1-1/2 cups raisins
1/4 cup mayonnaise
2 tablespoons sugar
2 to 3 tablespoons 2% milk

  • Mix the first 4 ingredients. Stir in enough milk to reach desired consistency. Refrigerate until serving.
