DIABETIC CHRISTMAS PUDDING

This is a good Christmas Pudding, I think it came from the Australian Diabetic Association. It's best made a couple of weeks before eating or even up to a couple of months before and stored in the fridge. Traditionally there is a number of options to finish the pudding before serving: Brandy butter, custard sauce, hard sauce (have posted these recipes separately) On the day reheat by boiling for a further 1 hour or you can slice into serving portions and zap in the microwave for 40 sec in a covered container.

1 large carrot, grated
100 g prunes, pitted, chopped
100 g dried apricots, chopped
340 g mixed dried fruit
1 tablespoon orange zest
1 tablespoon lemon zest
85 g dark brown sugar
100 g butter
2 eggs, beaten
55 g fresh whole wheat breadcrumbs
110 g whole wheat flour
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
200 ml Guinness stout
2 tablespoons black treacle

Steps:

  • Mix together the carrot, prunes, apricots, raisin mixture and grated orange and lemon zest.
  • In a separate bowl beat together the sugar and butter until light and fluffy, gradually beat in the eggs; stir in all the remaining ingredients including the fruit, cover and refrigerate overnight.
  • Spoon into a 900g/2lb pudding basin, cover with a pleated piece of greaseproof paper and secure with string.
  • Steam for 3 hours, ensuring that the pan does not boil dry.
  • Serve hot.

1 packet of sweet-n-low sugar substitute
1/4 teaspoon ground cinnamon
1 teaspoon instant coffee granules

Steps:

  • Place coffee granules into coffee cup/mug.
  • In small saucepan, heat milk, sweet-n-low, and cinnamon over medium-low heat until it reaches a simmer.
  • Pour into coffee cup, stir well and enjoy!

My husband loves rice pudding, but he's diabetic (we both are). This is a simple recipe which only makes enough for two servings. He can't pig out! I usually set aside cooked rice just to make this for him.

1 cup cooked rice
1 cup fat-free evaporated milk
1/3 cup Splenda granular
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg (dash or pinch)
1/3 cup dried cherries, coarsely chopped (see NOTE below)

Steps:

  • Stir all ingredients together in a medium sized saucepan.
  • Heat the mixture until hot but not boiling.
  • Reduce the heat to a simmer and cook for 10 to 15 minutes, stirring often. The pudding will be thick and creamy.
  • Don't cook until dry because it will thicken a bit more when cooled.
  • Divide between two ramekins. Serve warm.
  • Makes two 1/2 cup servings.

1 (2 1/2 ounce) package instant vanilla pudding
1 (2 1/2 ounce) package chocolate instant pudding
3 cups milk
1 cup coffee, chilled. (Any house blend will do, just don't use a flavored coffee.)

Steps:

  • Follow the directions on the package for preparing the vanilla pudding: add 2 cups of cold milk and pudding mix in a bowl and whisk for two minutes.
  • In a separate bowl, prepare the chocolate pudding. The directions call for 2 cups of milk. Instead, put in 1 1/2 cups of milk and 1/2 cup of chilled coffee and pudding mix in a bowl and whisk for two minutes.
  • Transfer about 4 tablespoons of the vanilla and 4 tablespoons of the chocolate pudding to a third bowl. Add 2 more tablespoons of coffee to this batch. Whisk this batch. It should appear a few shades lighter than the chocolate pudding's color. Drink the remainder of the coffee.
  • Layer in cups or parfait glasses. Refrigerate for five minutes. Garnish with whipped cream before serving.

2 cups whole milk
3 tablespoons instant coffee granules
2 tablespoons plus 2 teaspoon cornstarch
1/4 cup plus 2 tablespoon sugar, divided
1/2 cup heavy cream
1/4 teaspoon pure vanilla extract
Cinnamon for sprinkling
Equipment: 4 (4-to 5-ounces) cups or ramekins

Steps:

  • Whisk together milk, coffee granules, cornstarch, 1/4 cup sugar, and a small pinch of salt in a heavy medium saucepan. Bring to a boil over medium heat, stirring occasionally, then boil 1 minute, stirring constantly. Transfer to a metal bowl set in an ice bath and cool, stirring often, about 10 minutes. Pour into cups or ramekins and chill, uncovered, 20 minutes.
  • Beat cream with vanilla and remaining 2 tablespoon sugar using an electric mixer just until soft peaks form. Spoon whipped cream onto puddings and dust cream lightly with cinnamon.

Low fat, low sugar and yummy. This is a small recipe it doesn't make a lot. It helps to place the paper cups into a muffin tin for support until set. The prep time is actually chill time.
