These pancakes freeze very well! Make them small for toddlers to hold or larger for the rest of the family. I like to use flavored (blueberry, strawberry, etc) applesauce without any added sugar. If you use a flavored applesauce, you may omit the vanilla flavoring. The flavors are great so that there is no need for syrup! This recipe is adapted from www.wholesometoddlerfood.com

1 cup flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1 tablespoon melted butter
1/2 cup milk
1 egg, beaten
1/2 teaspoon vanilla
1 1/4 cups applesauce

Steps:

  • Sift flour, salt and baking powder into a medium mixing bowl.
  • Combine butter, milk and egg.
  • Stir into dry ingredients.
  • Add vanilla (unless using flavored applesauce) and applesauce; beat well.
  • Spoon batter into a hot, well greased griddle.

3 cups cake flour
3 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
2 1/2 cups milk, plus more if needed
2 cups Applesauce, recipe follows
1 tablespoon vanilla
1/4 teaspoon cinnamon
2 eggs
Butter, for cooking and serving
Maple syrup, warmed, for serving
6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

  • In a large bowl, combine the cake flour, sugar, baking powder and salt. Stir together and set aside.
  • In a separate bowl, whisk together the milk, Applesauce, vanilla, cinnamon and eggs. Slowly drizzle the wet ingredients into the dry ingredients, stirring gently with a spoon as you go. Once combined, if the mixture needs more moisture, splash in a little more milk. The batter should be pourable.
  • Heat a large skillet or griddle over medium-low to low heat. Smear a little bit of butter over the surface and drop tablespoon-sized amounts of batter onto the pan (more if you want larger pancakes). Wait a minute or so, then flip to the other side. The pancakes should be light golden brown and set in the middle.
  • Top with butter and drizzle with warm maple syrup.
  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

Diabetics don't have to give up desserts! This is low in sugar. If you don't want the sugar in the Craisins, rinse them a little in cold water and drain. This removes some of the sweetener on them. Or use raisins instead. Dry buttermilk powder can be found in the baking section of the store. It is great to have on hand for baking. This was adapted from a recipe in "Desserts for Diabetics", by Mabel Cavaiani. NOTE: This is a low-rise cake, like a snack-cake or brownie.

1 cup all-bran cereal (shredded or bud type, not flakes)
1/4 cup Egg Beaters egg substitute
1/4 cup canola oil
1/2 cup Splenda granular (sugar substitute)
4 tablespoons water
2 tablespoons brown sugar, packed
1 cup unsweetened applesauce
1 cup all-purpose flour
1 teaspoon baking soda
2 tablespoons dry buttermilk
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup pecans, chopped
1/4 cup dried sweetened cranberries, chopped (Craisins)

Steps:

  • Pre-heat oven to 375°F.
  • Coat a 9"x5" loaf pan with notfat cooking spray.
  • Place All-Bran, Egg Beaters, oil, Splenda, water, brown sugar and applesauce in a mixer bowl. Stir to blend and let sit 30 minutes. (Don't skip this step!).
  • Stir remaining ingredients (except nuts and Craisins) together in a medium bowl to blend. Add to bran mixture and mix on medium speed to blend well. Add nuts and Craisins.
  • Spread batter evenly in pan and bake about 45 minutes, or until wooden pick inserted in center comes out clean. (Do not overbake breads or cakes made with Splenda or they will dry out too fast!).
  • Cool in pan 10 minutes and then remove from pan to wire rack; cool to room temperature.
  • Cut into 14 equal slices.
