Yield 24 meatballs.

Number Of Ingredients 10

2 large eggs
1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

Number Of Ingredients 18

MEATBALLS:
1 slice day old bread, cubed
1 egg
1/3 cup milk
1 lb ground beef
1 packet brown seasoning or broth
1 tablespoon spicy brown mustard
1 tbsp fresh or dried chopped parsley
1 tablespoon Worcestershire sauce
1/8 tsp pepper
2 tbsp cooking oil
SAUCE FOR DEVILED MEATBALLS:
2 tbsps flour
1 cup half and half or evaporated milk
1/2 cup water
1/4 cup dry red wine (optional)
2 tbsps spicy brown mustard
2 pkgs Rich Brown Seasoning and Broth

Steps:

  • MEATBALLS: Except for the cooking oil, mix all ingredients well. Form into balls about 1 inch in diameter. Fry in oil, turning gently, until brown. Pour off all except about 2 tbspns of drippings. Makes about 40 meatballs SAUCE: Add flour to drippings, and stir untl slightly brown. Reduce heat, add half and hald, red wine, mustard and pckts of seasonings. Stir will until thickened. Place meatballs in sauce. Cover. Simmer for 10 minutes. Serve over noodles
