QUICK AND SIMPLE MEATBALLS

- Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

Steps:
- MEATBALLS: Except for the cooking oil, mix all ingredients well. Form into balls about 1 inch in diameter. Fry in oil, turning gently, until brown. Pour off all except about 2 tbspns of drippings. Makes about 40 meatballs SAUCE: Add flour to drippings, and stir untl slightly brown. Reduce heat, add half and hald, red wine, mustard and pckts of seasonings. Stir will until thickened. Place meatballs in sauce. Cover. Simmer for 10 minutes. Serve over noodles
