CLASSIC DEVILED EGGS

6 large eggs
2 tablespoons mayonnaise
1 1/2 tablespoons sweet pickle relish
1 teaspoon prepared mustard
1/8 teaspoon salt
Dash of pepper
Garnish: paprika

Steps:

  • Place eggs in a single layer in a saucepan; add water to depth of 3 inches. Bring to a boil; cover, remove from heat, and let stand 15 minutes.
  • Immediately drain and fill the saucepan with cold water and ice.
  • Firmly tap each egg on the counter until cracks form all over the shell. Peel under cold running water.
  • Cut eggs in half lengthwise, and carefully remove yolks. Mash yolks with mayonnaise. Add mustard, relish, salt, and pepper. Stir well.
  • Spoon egg yolk mixture into egg whites. Garnish with paprika, if desired.

12 large eggs (see Cook's Note)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 to 2 dashes hot sauce, optional
Kosher salt and freshly ground black pepper
Finely chopped chives, for garnish
Smoked paprika, for sprinkling

Steps:

  • Place the eggs in a single layer in a wide saucepan, cover with 1 inch of water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely, then carefully peel them.
  • Dip a clean kitchen towel in a small bowl of warm water. Wipe the blade of your knife with the towel to warm it up and to wet the blade. Slice the eggs in half lengthwise, one at a time, wiping the blade clean between each egg. (The warm, wet blade will give you clean cuts.) Remove the yolks to a medium bowl. Mash the yolks with a whisk. Add the mayonnaise, mustard, hot sauce if using and salt and pepper to taste. Whisk until very smooth. Transfer to a large resealable plastic bag or disposable pastry bag and snip off one corner with scissors.
  • Place the egg whites on a platter. Pipe the filling evenly into the egg whites. Top with chives and a sprinkle of paprika. Refrigerate for 20 to 25 minutes prior to serving.

1/4 cup mayonnaise
1 teaspoon white vinegar
1 teaspoon yellow mustard
1/8 teaspoon salt
Freshly ground black pepper
Smoked Spanish paprika, for garnish

Steps:

  • Place eggs in a single layer in a saucepan and cover with enough water that there's 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
  • Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.
  • Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

This recipe is adapted from ''U.S.A. Cookbook," a tribute to classic all-American dishes, written by Sheila Lukins, a co-author of the Silver Palate cookbooks that were popular in the 80s and 90s. There are no newfangled ingredients here - no lemongrass or curry or pesto - just eggs, mustard, mayonnaise, a dash of Tabasco and a festive sprinkle of paprika (if you're feeling fancy, garnish with chives). They are basic, but spectacular, and always a welcome addition to the picnic table.

1 teaspoon Dijon mustard
1 to 2 dashes Tabasco sauce, to taste
Salt, to taste
1/4 teaspoon freshly ground black pepper
1 tablespoon snipped fresh chives
3 tablespoons mayonnaise
Paprika, for garnish
Whole fresh chives, for garnish

Steps:

  • Rinse eggs with warm water, and place in a small saucepan. Cover with cold water, place the pan over medium-high heat and bring to a boil. Turn off heat, cover and let sit for 10-12 minutes. Drain, rinse under cold water and peel. Cool in the refrigerator, loosely covered, for 15 minutes.
  • Halve eggs lengthwise, and carefully scoop out yolks. Place yolks in a bowl, and mash with a fork. Add mustard, Tabasco, salt, pepper and snipped chives. Stir in mayonnaise.
  • Fill each egg white with about 1 1/2 teaspoons of the egg-yolk mixture and dust the top with paprika. Arrange in a spoke design on a platter; garnish with whole chives.

I saw this on Allrecipes.com and HAD to post it! I don't even LIKE Jello and this made me giggle. It's like taking my two least favorite foods and combining them! HAHA! However, think of the fun these bring! A great idea for a snack or dessert! You can also use Sugar-Free Jello, light whipped topping, and sugar free pudding.

1 (6 ounce) package flavored gelatin mix, any flavor
1-1/2 cups boiling water
1 (8 ounce) container frozen whipped topping, thawed
1 (3.5 ounce) package instant vanilla pudding mix
1 tablespoon coarse sugar for decorating

Steps:

  • 1. Spray 2 egg-shaped gelatin molds with cooking spray. Firmly snap the molds together.
  • 2. Pour gelatin mix in a large heatproof glass measuring cup with a spout; stir in boiling water until gelatin has dissolved.
  • 3. Slowly pour gelatin into prepared molds. Refrigerate molds until gelatin has set, about 3 hours.
  • 4. Unsnap the molds and remove the gelatin eggs; cut each egg in half lengthwise with a sharp paring knife.
  • 5. Mix whipped topping and instant vanilla pudding mix in a bowl until smooth. Scoop the pudding mixture into a piping bag or plastic bag with a snipped corner.
  • 6. Pipe about 1 tablespoon of filling into the middle of each egg half for the "yolk." Sprinkle decorating sugar over each yolk. Chill until ready to serve.

JELL-O EGG JIGGLERS Egg Mold
1-1/2 cups boiling water (do not add cold water)
1 pkg (8 serving size) JELL-O Brand Gelatin (any flavor)
1 small container Cool Whip topping

Steps:

  • Wipe inside of Jigglers mold and along rims with vegetable oil, using a paper towel. Close molds, matching up egg sides. Snap shut at each egg to seal.
  • Stir boiling water into gelatin, mix 3 min until completely dissolved. Using measuring cup with pour spout, fill each egg mold at fill spout.
  • Refrigerate 3 hrs or until set.
  • Using a dull, flat knife, pry open each egg mold, hold upside down over plate and gently shake to unmold. Cut each egg in half along the length. With a small melon baller, scoop out inside of egg, be careful not to go all of the way through the middle of the egg, just enough to make a small "well". Set aside what is scooped out. Take a fork or other utensil to "mash" what was scooped out. Add a small spoon of Cool Whip (a little or a lot, depending on how much "fluff" you want to add to filling and depending on how many eggs you are making) to "mashed egg". Then use a spoon to "fill" the "deviled egg". Refrigerate until ready to serve.

1 tsp. multi-colored sprinkles

Steps:

  • Add boiling water to gelatin mixes in medium bowl; stir 3 min. until completely dissolved. Pour into 13x9-inch dish sprayed with cooking spray.
  • Refrigerate 3 hours or until firm.
  • Cut into 24 egg shapes using 2-inch cookie cutter, being careful to cut all the way through gelatin to bottom of dish. Remove JIGGLERS from dish; top with COOL WHIP and sprinkles.
