Perfect deviled eggs with a creamy, savory filling and just a hint of tang ready for serving in just minutes. These are the perfect picnic staple!

12 large hard-boiled eggs, peeled
⅓ cup mayonnaise
1 tablespoon pickle relish
1 teaspoon Dijon mustard
1 teaspoon yellow mustard
1 teaspoon apple cider vinegar
½ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon ground paprika

Steps:

  • Slice eggs in half lengthwise and remove yolks. Place yolks in a medium bowl and set whites aside.
  • Mash yolks with a fork. Add mayonnaise, relish, Dijon, yellow mustard, vinegar, salt, and pepper; stir until well combined and smooth. Transfer to a large zip-top bag.
  • Arrange egg whites on a tray. Snip off the bottom corner of the zip-top bag. Fill each white with about 1 1/2 to 2 teaspoons filling. Sprinkle with paprika.

The eggs are delicious, and it's easy to make more for larger gatherings. I've added onion and celery for a little more flavor and texture.

6 hard-cooked eggs
2 tablespoons mayonnaise
1 teaspoon white sugar
1 teaspoon white vinegar
1 teaspoon prepared mustard
½ teaspoon salt
1 tablespoon finely chopped onion
1 tablespoon finely chopped celery
1 pinch paprika, or to taste

Steps:

  • Slice eggs in half lengthwise and remove yolks; set whites aside. Mash yolks with a fork in a small bowl. Stir in mayonnaise, sugar, vinegar, mustard, salt, onion, and celery; mix well. Stuff or pipe egg yolk mixture into egg whites. Sprinkle with paprika. Refrigerate until serving.

I came up with this recipe when I tired of the same old thing. My family really enjoys spicey foods and anything with an Asian twist, so this was an instant hit. My CA daughter's landlady loved them after not having deviled eggs since she was four years old.

6+ fresh eggs
1/3-1/2 c duke's mayonnaise, per 6 eggs
wasabi paste to taste. ( it is better to have to add more than to get it too hot to begin with)
salt and pepper to taste

Steps:

  • 1. Start eggs off in a pan of cold water(enameled,glass, or steel) and bring them to a slow boil. Cover and turn off the heat.
  • 2. At the end of the cooking time, pour hot water off the eggs and refill the pan several times with cold water to cool the eggs quickly
  • 3. Crack the eggshells and return the cracked eggs to the cool water for 5-7 minutes. Peel the eggs and place them on a plate.
  • 4. Peel eggs and put them on a plate. Once they have all been peeled, cut the hardboiled eggs in half, Cut the hardboiled eggs lengthwise. Place the yolks in a separate bowl, and arrange the empty halves on your deviled-egg plate.
  • 5. Mash the yolks with a fork, leaving no large lumps. Add mayonnaise, wasabi, and salt and pepper. Mix well.
  • 6. Fill egg-white halves with at least a teaspoon of yolk mixture each. Cover and refrigerate for about an hour or serve them right a way. Enjoy!
