2 tablespoons flour
4 tablespoons curry powder
1 tablespoon chili powder
1 teaspoon red pepper flakes
1/2 teaspoon red cayenne pepper
2 tablespoons vegetable oil
1 lb boneless tri-tip steak, cut into 1 inch chucks
2 medium russet potatoes, peeled and chopped into 1 inch chucks
1 large green bell pepper, chopped into 1/2 strips
1 (13 1/2 ounce) can coconut milk
1 (1 ounce) envelope Lipton Onion Soup Mix
1 1/2 cups baby carrots, peeled
salt and pepper
2 tablespoons vegetable oil
1/2 chinese snow peas, trimmed
1 1/2 cups medium grain rice, cooked according to package directions

Steps:

  • In a medium bowl, mix flour, curry powder, chili powder, red pepper flakes and red pepper. Add beef; toss to coat.
  • In a large nonstick skillet, heat oil over medium-high heat.
  • Add coated beef to skillet and brown all sides of meat, turning constantly, for about 5 minutes.
  • In a slow cooker, add coconut milk, potatoes, bell pepper and onion soup mix. With a slotted spoon, transfer cooked beef to slow cooker. Stir to mix thoroughly.
  • If you want the carrots to be very soft, add them at this time. If you prefer crisper carrots, wait until 1 hour of cooking time remains and then add the carrots.
  • Cover and cook on LOW for 4 to 5 hours or on HIGH 2 to 3 hours until the mixture is bubbling.
  • In a sauté pan, heat oil. Add snow peas and toss for one minute. Add 2 tablespoons of water and cook until crispy.
  • To serve, place beef curry on top of rice and spoon with sauce. Place snow peas on top of plate.

This is an authentic, richly flavoured Indian dish, guaranteed to impress any curry fan. It's even better the next day, so feel free to make it ahead of time. It makes a great meal served over a bed of rice and accompanied by a vegetarian curry or two. It's also wonderful with fresh baked naan bread (I recommend recipe #56245). Modified from Pranati Sen Gupta's "The Art of Indian Cuisine". IMPORTANT: Please take into consideration that this recipe was designed for tenderizing tough, lean cuts of beef (e.g. outside round, and other stewing cuts). If using a more tender cut, you must reduce the simmering time accordingly. For example, for sirloin steak, you should simmer the meat in the coconut milk for no more than 15 minutes.

1 (400 ml) can coconut milk
2 lbs lean stewing beef, cut into 2 . 5cm cubes
3 tablespoons ghee
2 large yellow onions, sliced and quartered
6 garlic cloves, minced
1 1/2 teaspoons ginger, minced
1 1/4 teaspoons ground cumin
1 1/4 teaspoons coriander, freshly ground
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
1/4 teaspoon garam masala
2 green cardamom pods, crushed
2 bay leaves
6 cm cinnamon sticks, broken in half
1 1/2 tablespoons tomato paste
1 teaspoon salt
1 cup plain yogurt
1/2 cup cilantro, chopped

Steps:

  • Bring coconut milk to a boil in a large heavy-bottomed pot (Dutch oven) and add beef cubes. Cover and simmer over low heat for about 40 minutes, or until almost tender. Lift out beef cubes and reserve in large bowl. Skim off any visible oil in the coconut milk, then pour over beef to keep the meat moist.
  • Clean and dry the heavy-bottomed pot, place it back on the stove and heat ghee on medium-low. Fry onion slices and garlic cloves until light golden, lift out and set aside.
  • Add all spices to remaining ghee in pan. Fry over low heat for one minute, stirring carefully to avoid scorching. Add beef cubes, reserving coconut liquid, and tomato paste, and fry until the mixture turns a rich brown colour, or about 8-10 minutes.
  • Stir in yogurt, add salt and fried onions, cover and simmer for 20 minutes to blend flavours. If curry becomes too thick, add reserved coconut liquid as is necessary.
  • Remove from heat, top with cilantro and enjoy!

Another ricecooker site recipe! They have some great ones over there. I loev steak and I love snow peas, so any chance to put them together is a treat. Lots of ginger here - so be warned. This would be best served over rice of your choice. Cooking time includes marinating time.

1 lb lean sirloin steaks, fat trimmed
3 tablespoons dry sherry
2 tablespoons dark sesame oil
1 tablespoon grated fresh gingerroot
1 tablespoon minced garlic
1 teaspoon safflower oil
2 green onions
3/4 lb asparagus
1/2 cup red bell pepper, julienned
2 tablespoons oyster sauce
2 tablespoons arrowroot
1 cup trimmed whole snow peas

Steps:

  • Cut steak into thin strips and place in a large bowl with sherry, sesame oil, gingerroot, and garlic. Marinate 15 minutes.
  • Cut green onions into 1/2-inch pieces, trim asparagus and cut into 1-inch lengths.
  • Heat wok over medium-high heat and add safflower oil.
  • Stir-fry green onions, asparagus, and bell pepper for 2 minutes, then remove to a platter and keep warm in oven.
  • Add steak AND marinade to wok, stir-frying for 3 minutes.
  • In a small bowl combine oyster sauce and arrowroot.
  • Add to steak and cook for 1 minute.
  • Add vegetable mixture and cook for 1 minute, stirring constantly.
  • Toss in snow peas, cover wok, and cook for 1 minute.
  • Serve immediately.

1 lb beef rump, sliced thinly (500gm)
1 onion, sliced thinly
2 teaspoons ginger, grated
1 garlic clove, crushed
1/3 cup mild curry paste

150 g green beans, halved

Steps:

  • Heat half of the oil in wok; stir fry beef, in batches, til browned all over.
  • Heat remaining oil in wok, stir fry onion til softened. Add ginger, garlic and curry paste, stir fry til fragrant.

2 garlic cloves, minced
1 -2 tablespoon vegetable oil
2 -4 tablespoons minced fresh ginger
1 -2 tablespoon red curry paste
1 (14 ounce) can unsweetened coconut milk
1/3 cup water
1 stalk lemongrass, first outer layer removed cut in half
4 teaspoons fish sauce
2 tablespoons brown sugar
1 lb beef, cut into bite size strips
chopped green onion

Steps:

  • Brown beef in little bit of the oil.
  • Pepper and salt meat.
  • Set aside.
  • In same large pan saute ginger and garlic.
  • Add the curry paste and saute for another minute, then add the coconut milk, whisk.
  • Now add all other ingredients, except the green onions and whisk.
  • Bring to a slow boil for a few minutes (5-10min), then discard the lemongrass.
  • Add the beef and reheat for a few minutes.
  • Serve over Jasmine rice and top with green onion.

1 lb lean ground beef
1 tablespoon vegetable oil
1 onion, chopped
1 jalapeno pepper, seeded and minced (optional)
1/4 cup mild indian curry paste
1 (28 ounce) can diced tomatoes
2 potatoes, peeled and diced
1/2 teaspoon salt
1 cup frozen peas
1/4 cup fresh coriander, chopped
1 tablespoon of fresh mint, chopped (or 2 tsp dried)

Steps:

  • in nonstick skillet saute beef over med-high heat, breaking up with a spoon until no longer pink, about 5 minutes.
  • drain off fat.
  • transfer to a bowl. add oil to pan, fry onion, and jalapeno (if using) until golden, for about 4 minutes. add curry paste, cook stirring until fragrant, about 1 minute.
  • stir in beef, tomatoes, potatoes and salt, cover and simmer until potatoes are tender, about 15 minutes.
  • add peas, half of the coriander and the mint, heat through.
  • sprinkle with remaining coriander and serve.
