A one-pot dish of green beans, red new potatoes, onions, and ham steak. My husband loves this and would eat it every night if he could.

1 (2 pound) ham steak, cut into 1-inch pieces
1 ½ pounds red new potatoes, halved
1 pound fresh green beans, trimmed and halved
1 small onion, coarsely chopped
½ cup butter
water to cover
salt and ground black pepper to taste

Steps:

  • Place ham steak, potatoes, green beans, onion, and butter in a large pot with just enough water to cover. Season with salt and pepper; bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes.

Delicious mustard greens with ham shanks and onions. Serve these tasty mustard greens with fresh baked cornbread and pepper sauce or vinegar.

Number Of Ingredients 10

1 tablespoon vegetable oil
2 to 3 ham shanks, or a meaty ham bone, or ham hocks
1 1/2 cups chopped onion
2 cloves garlic, minced
2 pounds mustard greens, tough stems removed, coarsely chopped
1 1/2 cups chicken broth
2 teaspoons Worcestershire sauce
Pepper vinegar sauce, to taste, optional
Salt, to taste, optional
Freshly ground black pepper, to taste, optional

Steps:

  • In a large pot or Dutch oven, heat oil over medium heat.
  • Add the onions, ham shanks or ham bone; cook, stirring, until onions are wilted.
  • Add the garlic and cook for 1 minute longer.
  • Add the chicken broth and bring to a boil.
  • Add the mustard greens, a few handfuls at a time, adding more as the first batch wilts.
  • Reduce heat to medium-low; add Worcestershire sauce and a dash of hot pepper sauce.
  • Cook, uncovered, for 20 minutes. Cover and simmer for about 30 to 40 minutes longer.
  • Taste and add more pepper sauce, salt, and pepper, as needed. *If you can't find pepper sauce or pepper vinegar in your area, you can make it quickly. Fill a washed and sterilized jar with small hot peppers. Bring about 1 cup of vinegar (as much as will cover the peppers) to a boil and then pour over the peppers. Cover and store in the refrigerator. For hotter pepper sauce, cut a slit in some of the peppers or slice a few of them. Some other types of greens that could be substituted include collard greens , kale , turnip greens , or a mixture of greens .

2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 (32 ounce) containers chicken broth
3 (1 pound) packages collard greens, trimmed
⅓ cup apple cider vinegar
2 tablespoons white sugar
1 ½ teaspoons salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Combine onions, ham hocks, and garlic in a stockpot; add chicken broth. Cook mixture over medium heat until meat is falling off the bone, about 2 hours.
  • Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 more hours.
