This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

8 oz. fettuccini, uncooked
1 1/4 cups fat-free or regular chicken broth
4 tsp. flour
1/3 cup light cream cheese spread, in the tub. you can use regular block cream cheese or neufchatel cheese, it all works just fine.
3 tb. grated parmesan cheese, divided
1/8 tsp. nutmeg, optional
2 tb. fresh parsley, chopped
freshly ground black pepper
garlic powder, optional

Steps:

  • 1. Cook pasta as directed on package. Meanwhile, combine broth and flour in a medium saucepan. Stir in cream cheese spread. Whisk and cook for 2 minutes, stirring constantly, or until mixture boils and thickens. Remove from heat and add nutmeg, if using.
  • 2. Toss drained, hot pasta with sauce and 2 TB. of the Parmesan cheese and freshly cracked pepper. Sprinkle with remaining Parmesan cheese and fresh parsley. I use more grated Parmesan, but it's up to you. Dig in!
