DELICIOUS CHICKEN AND BACON WITH PENNE PASTA IN CREAM SAUCE
I was craving a good, warm, hearty pasta dish on the first cool day of Autumn. I came up with this by accident, just using what I had on hand. The 8oz. box of penne is a guess...I just know it was a regular size box of Mueller's penne...and I just used 1/2 of it!

Steps:
- Put chicken in pot with water and bay leaves. I used about 1 tablespoon of chopped dried bay leaves. Boil the chicken until done. I boil it low so it doesn't get tough and infuses the flavor of the dried bay leaves.
- Meanwhile, fried the bacon low. When almost done, put 1 tablespoon of garlic in with it and about 1/2 teaspoon of onion powder. Take bacon and garlic up when the bacon is done - drain on paper towel. You will reserve one tablespoon or so of the grease, but dump the rest out. Add a little margarine to the bacon grease and then two tablespoons of flour (to make a paste). After the paste is made, slowly add cream while you are stirring. If you add it slowly, a little at a time, you can watch the sauce thicken and doesn't take as long over heat to thicken it. After the sauce is thickened, add a tablespoon of garlic, pepper and salt to taste. Reduce to low heat and stir frequently while you cook the 1/2 box of penne pasta (11 minutes till done). Drain pasta, put that in cream sauce. After chicken is done, chop it and mix that into the pasta and cream sauce. Mix together nicely and top with drained (chopped) bacon! Add some parmesan on top if you wish. Delicious! Serve with a salad.

Greek Chicken Pasta Salad. The perfect summer salad. Begin by cooking pasta according to package directions. Drain and set aside. Season chicken with garlic salt, greek seasoning, and pepper and cook in a skillet over medium high heat, 5 minutes per side.

- Cook pasta according to package directions, drain and set aside to cool.
- Pat chicken dry and season chicken with greek seasoning, garlic salt, and pepper. Heat a large skillet over medium high heat and add 2 tbsp olive oil, the the oil heat for 1 minute.
- Add chicken and cook 5 minutes on each side. Set aside to cool, then slice chicken.
- In a large bowl add cooked pasta, chicken, tomatoes, zucchini, red pepper, feta cheese, and kalmata olives. Mix to combine well.
- In a small bowl to make dressing whisk avocado oil, lemon juice, red wine vinegar, oregano, and minced garlic. Store in an airtight container until ready to serve salad. Then pour over pasta and mix well. Garnish with parsley and more greek seasoning if desire.
CHICKEN AND BROCCOLI WITH PENNE PASTA; DELICIOUS AND EASY ONE PO
Chicken and broccoli are cooked in olive oil flavored with Tuscany seasoning and garlic. They are removed to a holding bowl while while pasta is cooked in the same pan with chicken broth. When cooked al dente, reserved chicken and broccoli are mixed with the pasta along with parmigiana cheese to taste. Make the dish creamy, simply by stirring in cream cheese.

- Cut 2 half chicken breasts into bite sized pieces.
- Sauté garlic in a large frying pan with high sides in the olive oil until tanned. Discard.
- Sauté chicken pieces in the olive oil stirring frequently until just cooked through. Remove to a holding bowl capturing all juices.
- Add a package of frozen broccoli florets and sprinkle with Tuscany seasoning. Sauté until they defrost, brown and are cooked to desired tenderness. Remove them to the holding plate.
- Add the pasta and most of the chicken broth to the pan. Bring to a boil. Add additional broth or water until absorbed and pasta is cooked al dente.
- Mix in the chicken, broccoli, and graded parmigiana to taste.
- To make a creamier sauce, stir in cream cheese desired consistency while the pan is still hot.
MINCE CHICKEN BALLS, SAUCY SPAGHETTI PASTA - SERIOUSLY DELICIOUS
This is seriously good comfort food and a fantastic alternative to the perennial favourite 'spag bol'. I copied it out of an Australian Womens Weekly recipe book years ago . Although the original suggested wholemeal spaghetti, any spaghetti, fettuccine, penne, fussili etc can be used. The recipe also says bottled pasta sauce, but I make my own by cooking onions and garlic in oil for 5 minutes, adding 1 can of chopped tomatoes and 1 cup of chicken stock. Simmer for about 10 mins and then puree - add more stock and tomotoes as needed. Note that you'll need to have 1 cup cooked rice for the recipe.

- Add rice to a saucepan of boiling water and cook for 15-20 minutes, or as per rice packet instructions. Drain and rinse with cold running water.
- In a bowl, combine the minced chicken, 1 chopped onion, parmesan, breadcrumbs, cooked rice and basil. Roll rounded tablespoons of the mixture into balls and place on a tray. Cover and refrigerate for 1 hour.
- Coat a large frypan with the oil spray, add the extra 2 chopped onions and 1/4 cup of the chicken stock, stirring until the onions are soft.
- Add the chicken balls to the pan, and cook - covered - for 10 minutes.
- While the chicken balls are cooking, add the pasta to a large pot of boiling water and boil uncovered until 'al dente' (just tender) - or as per the pasta packet instructions. Drain and set aside.
- Add the remaining stock and pasta sauce to the cooking chicken balls and simmer - covered - for a further 5 minutes.
- Add the chopped parsley to the pan and simmer - uncovered - for another 10 minutes.
- Serve the chicken balls and sauce over the pasta, and sprinkle with extra parmesan and parsley, if desired.

Steps:
- Cut the chicken into thin strips, place in a small bowl and combine thoroughly with 2 teaspoons of the Meat Magic Cook pasta according to package directions.
- Place a skillet over high heat and add the white onions, celery, bell pepper and the remaining 1 teaspoon of Meat Magic.
- Cook over high heat, shaking pan and stirring occasionally (don't scrape!) for 5 minutes.
- Add 1/2 cup chicken stock, start scraping up the browned coating on the bottom of the pan and cook another 4 minutes.
- Stir in the chicken mixture and cook 4 minutes.
- Add the flour and stir well, cooking another 2 minutes.
- Now add the mushrooms and garlic, folding in carefully so the mushrooms don't break.
- Add 1/2 cup chicken stock and scrape up the pan bottom.
- Cook 4 minutes and add another 1/2 cup stock, stirring and scraping.
- Continue cooking another 5 minutes, then add the green onions and the remaining 1/2 cup stock.
- Stir and scrape well.
- Cook 5 more minutes and remove from heat.
DAD'S DELICIOUS CHICKEN PASTA
Steps:
- Begin cooking pasta as per instructions on package. Cook chicken in a large pan. Once it begins to turn white, add some Italian dressing until lightly coated.
- Once chicken has cooked through, add veggies and more Italian dressing. Cook until veggies are sauteed nicely.
- Mix with pasta. Sprinkle parmesan cheese. Season with dressing to taste. Yumm!
