Number Of Ingredients 11

1 1/2 cups buttermilk
1/4 teaspoon hot sauce
6 (4- to 6-oz.) catfish fillets
1/3 cup plain yellow cornmeal
1/3 cup masa harina (corn flour)*
1/3 cup all-purpose flour
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon ground red pepper
1/4 teaspoon garlic powder
Peanut oil

Steps:

  • Whisk together buttermilk and hot sauce.
  • Place catfish in a single layer in a 13- x 9-inch baking dish; pour buttermilk mixture over fish. Cover and chill 8 hours, turning once.
  • Combine cornmeal and next 6 ingredients in a shallow dish.
  • Let fish stand at room temperature 10 minutes. Remove from buttermilk mixture, allowing excess to drip off. Dredge fish in cornmeal mixture, shaking off excess.
  • Pour oil to depth of 2 inches into a large, deep cast-iron or heavy-duty skillet; heat to 360°F.
  • Fry fish, in batches, 2 minutes on each side or until golden brown. Transfer to a wire rack on a paper towel-lined jelly-roll pan. Keep warm in a 225°F oven until ready to serve.

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

1 cup Italian-flavored bread crumbs
1 rib celery, finely chopped
2 eggs
2 tablespoons mayonnaise
4 tablespoons (1/2 stick) butter, melted and divided
1/2 teaspoon Worcestershire sauce
3/4 teaspoon black pepper, divided
1/4 teaspoon paprika

Steps:

  • Preheat the oven to 350°F. Coat a 9- x 13-inch baking dish with cooking spray. In a medium bowl, combine the crabmeat, bread crumbs, celery, eggs, mayonnaise, 2 tablespoons melted butter, Worcestershire sauce, and 1/4 teaspoon pepper; mix well. Place the catfish fillets on a work surface and season with the remaining 1/2 teaspoon pepper. Spread the crabmeat stuffing equally down the center of each fillet, roll up, and place seam side down in the baking dish. Brush with remaining 2 tablespoons melted butter and sprinkle with paprika. 2 tablespoons flour
1 teaspoon freshly ground black pepper
1 cup nonfat buttermilk
1 large egg, lightly beaten
5 cups peanut or canola oil
4 farm-raised catfish fillets, 4 ounces
3/4 teaspoon kosher salt, divided
2 applewood-smoked bacon slices
1 tablespoon butter
18 medium shrimp, peeled and deveined (about 1 pound)
1/2 cup finely chopped onion
1 teaspoon minced fresh garlic
1 cup 2% reduced-fat milk
3/4 cup fat-free, lower-sodium chicken broth
1/4 cup sliced green onions

Steps:

  • Preheat oven to 250°F. Place 1 cup flour in a shallow dish or bowl. Combine cornmeal, 2 tablespoons flour, and pepper in a second shallow dish, stirring well with a whisk. Combine buttermilk and egg in a third shallow bowl or dish, stirring well with a whisk. Heat oil to 385°F in a Dutch oven. Sprinkle both sides of fillets with 1/2 teaspoon salt. 4 slices thick bacon fried & crumbled
2 large catfish fillets
1 teaspoon lemon pepper

1/2 teaspoon sea salt

2 tablespoons butter
Meyer Lemon Juice/Zest

Steps:

  • Season catfish, both sides, with lemon pepper, pepper, salt, and Cajun seasoning. Put coconut oil and butter in heavy skillet on medium high heat. Let it get hot. Put catfish in (do not crowd) and cook on each side about 4-5 minutes depending on the thickness of the catfish. Remove and garnish with some bacon crumbles, lemon zest/juice, green onions and your favorite topping.
