Fresh bananas are simmered in an indulgent cinnamon cream sauce, then covered with rum, ignited with gentle flames and served over a scoop of vanilla ice cream. This easy recipe will help you make flawless Bananas Foster every time!

6 tbsp salted butter
3/4 cup (168g) packed light or dark brown sugar
1/2 tsp ground cinnamon
1 tbsp heavy cream
3 bananas, halved lengthwise, then halved crosswise
3 tbsp dark rum
Vanilla ice cream, for serving

Steps:

  • Add the butter, brown sugar, cinnamon and cream to a large skillet or saucepan over medium heat.
  • Allow the butter to melt and continue to whisk while cooking until the sugar has melted and the sauce is smooth (about 3 to 5 minutes). You don't want to cook on too high heat or it will heat too quickly before the sugar fully melts.
  • Add the bananas and allow to cook 2-3 minutes, to lightly soften the bananas.
  • Remove the pan from heat and pour the rum over the bananas and sauce. Using a long lighter, ignite the rum. Gently shake or swirl the sauce around until the flames burn out, about 30 seconds. The flames will burn blue and can sometimes be very subtle.
  • Spoon warm bananas and sauce over ice cream and serve immediately.

1 orange
2 tablespoons unsalted butter
3 tablespoons packed light brown sugar
1 teaspoon vanilla bean paste
1/4 cup orange liqueur or brandy
Kosher salt
3 ripe bananas, peeled, halved lengthwise and crosswise
1/2 cup dark rum
Whipped cream, for serving (optional)

Steps:

  • Remove 4 strips orange zest with a vegetable peeler. Squeeze the orange and strain the juice.
  • Melt the butter with the sugar, orange zest and vanilla bean paste in a large skillet over medium heat. Cook, stirring, until the sugar caramelizes, about 5 minutes. Remove from the heat and stir in the liqueur, orange juice and a pinch of salt.
  • Return the skillet to medium heat, add the bananas, cut-side down, and cook until glazed and golden, 1 to 2 minutes. Remove from the heat and divide among bowls.
  • Add the rum to the pan and return to medium heat. Bring the liquid to a boil without stirring, then reduce the heat to a simmer. Cook until the sauce thickens slightly, about 4 minutes. Spoon the sauce over the bananas. Garnish with whipped cream if using and the glazed orange zest.

38 ounces creme de banana
38 ounces butterscotch liquor
38 ounces vanilla vodka (recommended: Stoli)
20 ounces creme de coca
52 ounces spiced dark rum (recommended: Captain Morgan)
3/4 gallon heavy cream
1/4 gallon sweet condensed milk
50 edible orchids, cut in 1/2
100 banana slices
Splash 151 to light on fire for flambe

Steps:

  • Mix all together in mixer until blended and pour into Gallon Pitchers. Place in cooler for transport. Line up 100 martini glasses, rim glasses with Banana Praline dust, if time allows, prior to service. Pour 3 1/2 ounces of drink into glasses, float 1/2-ounce of 151 on top and light with a torch. Add ice cube (frozen banana with orchid).
