2 tablespoons flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 lb boneless skinless chicken breast, cut into 1 1/2-inch pieces
2 tablespoons canola oil
1 tablespoon curry powder
1 medium onion, sliced
2 garlic cloves, minced
1 cup chicken broth
1/3 cup golden raisin
1 1/2 tablespoons tomato paste
1/4 cup chopped fresh cilantro
1/4 cup plain nonfat yogurt

Steps:

  • Mix together flour, salt and cayenne pepper in a plastic bag; add chicken in small batches, shaking to coat.
  • Heat oil in a large skillet over medium-high heat.
  • Add chicken and cook until lightly browned; then add curry powder and toss to coat.
  • Remove from pan.
  • Add onion and garlic to pan, adding a little more oil if necessary, and cook for 2 minutes, then add broth, raisins, and tomato paste.
  • Return chicken to pan and simmer uncovered for 8 minutes or until chicken is cooked through and sauce has thickened.
  • Garnish with cilantro and a dollop of yogurt.
  • Serve with quick cooking minute rice, if desired.

1 cup onion, chopped
1/2 cup apple, chopped
1 1/2 teaspoons curry powder
2 tablespoons butter
1 (10 ounce) can cream of chicken soup, canned
1 (10 ounce) can cream of mushroom soup, canned
2 1/2 cups cooked chicken, cubed
1/4 cup parsley, chopped
1/2 cup sour cream
3 cups cooked rice
1/8 cup almonds, sliced

Steps:

  • Cook onion and apple in curry powder and butter until onion is transparent (do not brown).
  • Stir in soups and chicken; heat thoroughly.
  • Add parsley and sour cream; heat (do not boil).
  • Serve over rice.
  • Garnish with sliced almonds.

2 whole chicken breasts, skinned &,boned
1/2 lb thinly sliced fresh mushrooms
1/3 cup chopped onion
2 tablespoons oil
2 1/2 tablespoons flour
1 teaspoon salt
1 1/2 teaspoons curry powder (more if you REALLY like curry)
1 cup finely chopped apple
1/4 cup snipped parsley
1 cup milk
3/4 cup chicken broth

Steps:

  • Cut chicken into bite size pieces.
  • Saute chicken, mushroom and onion in oil in large skillet until chicken is lightly browned on all sides and completely cooked, about 10 minutes.
  • Stir in flour, salt, and curry powder.
  • Add apple and parsley.
  • Stir in milk and broth.
  • Simmer, stirring constantly for three minutes or until apple pieces are crisp tender.
  • Serve over rice.

1 tablespoon corn oil or 1 tablespoon olive oil
1 medium onion, sliced
1/3 cup golden raisin (optional)
salt & freshly ground black pepper
1 1/2 teaspoons yellow curry powder (to taste)
1 lb boneless skinless chicken breast
1 cup sour cream
minced fresh cilantro (to garnish) or fresh parsley (to garnish)

Steps:

  • Put the oil in a large skillet over medium high heat. When hot, add the onions (and optional raisins), sprinkle with some salt and pepper, and cook, stirring occasionally, until translucent, about 5 minutes. Turn the heat down to medium, sprinkle with half of the curry powder, and continue to cook a minute or two.
  • Meanwhile, season the chicken with salt and pepper to taste and sprinkle it with the remaining curry powder. Move the onion to one side of the skillet and add the chicken in one layer. Cook for about 2 minutes on each side. Transfer to a plate.
  • Add the sour cream and stir constantly over medium-low heat until the mixture is nice and thick. Return the chicken to the skillet and cook for a couple more minutes, or until cooked through, turning once.
  • Garnish with cilantro or parsley and serve with rice.

1/2 cup nonfat plain yogurt
1/2 cup fat-free mayonnaise
3 tablespoons finely-chopped onions
1 teaspoon ground ginger
1 teaspoon curry powder
1 lb boneless skinless chicken breast, cut 1/2 ",strips
1 teaspoon paprika
1/2 teaspoon freshly-ground black pepper
2 cups hot cooked brown rice

Steps:

  • In a small bowl, stir together the yogurt, mayonnaise, onions, ginger and curry powder; set aside.
  • Place the chicken in a medium bowl.
  • Combine the paprika and pepper.
  • Sprinkle over the chicken and toss until coated.
  • Spray an unheated, large no-stick skillet with no-stick spray.

2 tablespoons salted butter
4 cloves garlic, minced
1 medium yellow onion, finely diced
1 sweet potato, peeled and finely diced
1 tablespoon curry powder
One 13.5-ounce can coconut milk
1 cup chicken broth
2 tablespoons honey, plus more to taste
1/4 teaspoon kosher salt, plus more to taste
1 rotisserie chicken, meat pulled and skin and bones discarded
1/4 cup fresh cilantro leaves, chopped, plus whole leaves, for garnish
A few dashes of hot sauce, such as sriracha
1/2 lime, juiced, plus 6 lime wedges, for serving
1/2 small mango, diced, for garnish

Steps:

  • Heat the butter in a large skillet over medium-high heat. Add the garlic, onion and sweet potato to the skillet and cook, stirring, for 2 minutes. Sprinkle the curry powder over the vegetables and continue cooking for another minute. Reduce the heat to medium low and pour in the coconut milk and broth, stirring to combine. Mix in the honey and salt. Allow the sauce to heat up until gently simmering.
  • Add the chicken to the sauce, tossing to coat, and allow it to simmer until warmed through, about 3 minutes. Turn off the heat. Mix in the chopped cilantro, hot sauce and lime juice.
  • Ladle the soup into bowls. Garnish with mango cubes, cilantro leaves and lime wedges.

A super easy & very tasty North Indian style curry.

1 cut up whole chicken, skinless, washed & cut into 8-10 pieces
3 tbs oil
2 onions, thinly sliced
GRIND TO PASTE FOR MARINADE-
1 cup yoghurt
1 onion, roughly chopped
2 tomatoes, roughly chopped
1 tbs garlic, minced
1 tbs ginger, minced
2 tsp kashmiri mirch (or 1 tsp paprika plus 1 tsp cayenne powder)
1/4 tsp turmeric
1 tbs ground coriander
5 green cardamoms
1/2 tsp ground cinnamon
1 tbs white poppy seeds (optional)
1/4 cup fresh cilantro, chopped
2 green chilies, roughly chopped (optional, for less heat omit or remove seeds)
2 tsp salt

Steps:

  • 1. Grind all ingredients listed under marinade to a smooth paste in a mixie, blender or food processor.
  • 2. Coat chicken pieces well with marinade paste. Allow chicken to marinate for at least 1 hour up to overnight in an airtight container in the refrigerator.
  • 3. Heat oil in deep, heavy bottomed skillet or kadhai, and fry sliced onions over medium heat until translucent & beginning to brown at the edges.
  • 4. Add chicken pieces with marinade paste to frying onions in skillet or kadhai. Be careful as oil may spatter. Add 1 cup water to mixture & continue to simmer uncovered over medium heat for 20-25 minutes, stirring every 5 minutes. Be sure to simmer this dish uncovered, it may boil over if covered. If mixture begins to burn, scorch, or stick, stir in 1/2 to 1 cup water & reduce heat.
  • 5. When the oil has separated from the marinade mixture & the chicken is cooked through your curry is ready. Salt to taste & serve.
  • 6. Helpful hints- Never cook chicken in a pressure cooker, it gets a rubbery texture from the extreme, high heat. Don't have poppy seeds? Substitute 1 TBS ground almonds or cashews. Don't have Kashmiri mirch? Substitute a mixture of 1/2 cayenne powder plus 1/2 sweet paprika. Don't have yogurt? Use milk or cream.
