DEL MONTE'S TEXAS CHILI



Del Monte's Texas Chili image

I know this isnt really a traditional Texas chili, but that's what the original recipe from Del Monte is called and so I am keeping it's name intact. I usually use a roll of Bob Evans Original sausage in place of the pork for more flavor. Really easy and quick to make.

3/4 lb ground pork
3/4 lb ground beef
1 cup onion, chopped
1 cup celery, chopped
1 garlic clove, minced
1 (15 ounce) can del monte tomato sauce
1 (8 3/4 ounce) can del monte sweet whole kernel corn
1 (8 ounce) can kidney beans
1/3 cup water
2 teaspoons chili powder
1 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon salt

Steps:

  • In a Dutch oven, brown pork and beef; drain.
  • Add remaining ingredients.
  • Cover and simmer for 30 minutes.

I got this recipe off Del Monte's Zesty Chunky Tomatoes Chili Style can. It easy and quick. Any brand of chili style diced tomatoes and tomato sauce works just as well! (Sometimes I add an extra can of kidney beans to use both dark red and light red kidney beans.)

My Daddy, 'born and bred' in Texas, came up with this recipe and the name for it. It took some convincing, but I got him to allow me to share the recipe. We love it and hope you do to. Enjoy!!

3 tablespoons bacon drippings
2 large onions, chopped
8 pounds beef stew meat, or coarse ground chili beef
5 cloves garlic, finely chopped
4 tablespoons ground red chile pepper
4 tablespoons mild chili powder
1 tablespoon ground cumin
¼ cup sweet Hungarian paprika
1 teaspoon dried Mexican oregano
3 (10 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
3 cups water
2 tablespoons salt
¼ cup dried parsley
1 fresh jalapeno peppers
1 cup masa harina flour

Steps:

  • Melt the bacon drippings in a large heavy pot over medium heat. Add the onions and cook until they are translucent.
  • Combine the beef with the garlic, ground chile, chili powder and cumin. Add this meat-and-spices to the onions in the pot. Break up any meat that sticks together as you cook, stirring occasionally, about 30 minutes, until meat is evenly browned (very browned, not just gray). Sprinkle in Hungarian paprika and oregano.
  • Pour in the tomato sauce, tomato paste, water, salt, parsley and jalapeno. Bring to a boil, then lower the heat and simmer, uncovered, for 1 hour. NOTE: True Texans DO NOT add beans to their chili, but my husband loves them, so this is the point where you can add as many cans of drained and rinsed pinto beans as you wish (I add 2 cans, but shhhhhh don't tell my Daddy!!!).
  • During cooking you may squeeze the jalapeno as it softens against the sides of the pot to release more heat if desired.
  • Mix in the masa harina, and cook while stirring for 30 minutes longer, or until desired consistency is achieved. Taste and adjust seasonings.

1 (15 1/4 ounce) can white and yellow corn, drained, Del Monte
1 (14 1/2 ounce) can diced tomatoes, Del Monte
1 (15 ounce) can red kidney beans, rinsed and drained
1 (4 ounce) can diced green chilies, drained
3/4 cup elbow macaroni, dried
2 teaspoons chili powder

Steps:

  • Cook beef in large skillet until brown; drain. Stir in corn, undrained tomatoes, beans. chilies, uncooked macaroni, chili powder, and 1 cup water.
  • Bring to a boil; reduce heat. Simmer, covered, 12 to 15 minutes or until macaroni is tender.
  • Sprinkle with 1/2 cup cheddar cheese, if desired. Cover and let stand 5 minutes.

My Triple Cook-Off Winning Chili image

This recipe had the right amount of heat! The flavors blend well and it has fast become a favorite of many on the Crew!

Number Of Ingredients 22

SAUTE, DRAIN GREASE:
3 lb lean hamburger
1 green bell pepper, diced
1 red bell pepper, diced
4-8 fresh jalapenos, diced small (add as many as you like for heat, but add at least 4 for mild for the kiddos. *i usually add all 8 for hotter!)
1 large onion, diced large
salt, pepper, and garlic powder to taste (start with about a tsp each salt and garlic powder and a 1/2 tsp pepper; you'll be adding more later)
DUMP INTO CROCK POT OR LARGE STOCK POT AND ADD:
1/3 c good chili powder
1 3/4 c ketchup, I use Heinz
3 Tbsp lemon juice concentrate
1/3 c dark brown sugar, can sub light but I just don't even buy that kind anymore because it always turns into a brick
1 Tbsp Worcestershire sauce, I use Lea & Perrins
2 tsp regular white vinegar
1 1/2 tsp yellow table mustard, French's
1 1/2 Tbsp cumin
3 c spicy hot V8 juice
1 (16 oz.) can(s) dark red kidney beans, rinsed and drained first in a colander til no longer foamy/bubbly
2 pkg fresh sliced mushrooms, 8 oz. each
2 can(s) Del Monte original stewed tomatoes, with the juice; crush tomatoes with hands as you add; 14 1/2 oz. each can
1 c beef bouillon, i use superior touch better than bouillon beef base (dissolve 1 tsp. beef base into 1 cup hot water to make 1 cup bouillon)
*more salt, pepper and garlic powder to taste

Steps:

  • 1. Saute hamburger, green pepper, red bell pepper, jalapenos in a pan. Add 1 teaspoon (each) of salt, pepper, and garlic powder. Add 1/2 tsp black pepper.
  • 2. Drain the grease.
  • 3. Into a large stock pot or Crock Pot, add the sauteed hamburger meat. Then add the rest of the ingredients.
  • 4. Stir all and bring just to a low simmer. Reduce heat and cook for at least 1 1/2 hours on low. Stir gently and occasionally. You can do this on the stove or in a large Crock Pot. Either way works.
  • 5. Thick, rich, slightly sweet/slightly hot chili! Very unique! Enjoy!! :D

Reduce heat; simmer, uncovered, for 15 minutes. , Freeze option: Transfer cooled chili to freezer containers. Freeze up to 3 months. To use, thaw in the refrigerator.
