I am always asked to bring these walnuts whenever we have a get together with family or friends. They are perfect on tables at a bridal or baby shower, and no one can ever figure out how they are made. Very addicting!

1 pound shelled walnuts
1 cup granulated sugar
vegetable oil for frying
salt to taste

Steps:

  • Place walnuts in a medium stock pot. Cover with water and boil for 2 minutes. Strain, but do not rinse. Transfer to a bowl, and toss with sugar while still hot until well coated.
  • Heat 3 inches of oil in a large saucepan over medium-high heat. When oil appears to shimmer, fry 1 nut to test for heat. Nut should begin to sizzle immediately. Fry 1/3 batch of nuts at a time for 4 to 5 minutes uncovered. Toss nuts before each batch, and repeat. Using a slotted spoon, transfer each batch to a cookie sheet to cool. Season to taste with salt, and break apart when cool.

Fried peanuts will amaze your guests with their crunch and fresh, distinctive flavor. Add different kinds of nuts if you like, as long as they are "raw" to begin with (the industrial shelling process uses enough heat to cook the nuts, at least a little bit). The best raw peanuts are usually found in the fall (peanuts are an exception; the best season for other nuts is spring), when they are fresh and tender. Like any nuts, these are great with drinks, especially beer.

Yield makes 2 cups, enough for 8 as a snack

Number Of Ingredients 3

Peanut or neutral oil, like corn or grapeseed, as needed
2 cups shelled raw peanuts, with skins
Coarse salt to taste

Steps:

  • Put at least 1 inch of oil in a deep, fairly narrow saucepan and turn the heat to medium-high. When the oil reaches 300°F (this is on the cool side for frying; be careful not to overheat), add the peanuts and cook, stirring occasionally, until they are a rich golden brown, about 5 minutes.
  • Remove the peanuts with a slotted spoon, drain on paper towels, and sprinkle with salt. Strain and save the oil (covered and refrigerated) for another use; it will be great for using in stir-fries. Serve at room temperature.
  • Cook the peanuts with 6 unpeeled garlic cloves and 4 small dried red chiles. Drain and season with salt and fresh lime juice to taste.
  • Combine 1 teaspoon curry powder (pages 592-593), 1/2 teaspoon superfine sugar, and salt and cayenne to taste. Cook the peanuts as directed and sprinkle on the spice mixture. Taste and adjust the seasoning.
  • Combine 1 teaspoon garam masala (page 594) with salt and cayenne to taste. Cook the peanuts as directed and sprinkle on the spice mixture. Taste and adjust the seasoning.

I make these for the Holidays and put them into X-mas tins and give as gifts. I make about 15 to 18 pounds at a time. They're like Lay's potato chips "You just can't eat one". Warning very addictive.

3 lb walnut halves
1 gal peanut oil
4-5 c sugar, more or less
salt

Steps:

  • 1. Put walnuts into a pot and cover with water. Bring to a boil.
  • 2. While waiting for the nuts to boil, heat up oil in a deep fryer to 360 - 375 degrees.
  • 3. After nut come to a boil, drain hot water and add sugar to hot walnuts (enough to make a nice glaze on the nuts.
  • 4. When oil is up to temperature, add a couple of scoops of the nuts at a time into the fryer basket, lower basket slowly into oil, cook for about 2min.(Keep checking to make sure the nuts don't get too dark) you want a med.to dark brown color. adjust cook time from that.
  • 5. When the walnuts are done cooking, lift basket and drain. Spread on a foil lined cookie sheet. Sprinkle salt to taste. let cool and put into a container.

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).

2 c Lard
2 c Peanut Oil
1 Lb Green Peanuts in shell
2 T Spice Blend (see below)
Spice Blend
1/4 c Chili Powder
2 T Kosher Salt
1 1/2 T Onion Powder
1 T Ground Cumin
1 1/2 tsp Paprika
1 1/2 tsp Garlic Powder
1 1/2 tsp Brown Sugar
1/2 tsp Cayenne Pepper
1/4 tsp Dry Mustard

  • 1.In a heavy pot, heat lard and peanut oil to 350 degrees. 2.Submerge peanuts in oil until crispy (about 5 minutes). 3.Drain well and toss with 2 tablespoons of spice blend. 4.Serve warm.

Fried Brussels Sprouts with Walnuts and Capers image

Canola oil, for deep-frying
1 clove garlic, minced
4 salt-packed anchovy fillets, rinsed, filleted and minced
1 serrano chile, seeded and minced
1/4 cup red wine vinegar
1 tablespoon honey
2 scallions, white and green parts, thinly sliced on the bias
1/2 cup walnut pieces, toasted and coarsely chopped
1/2 cup extra-virgin olive oil
1 pound Brussels sprouts, trimmed and quartered lengthwise
2 cups loosely packed flat-leaf parsley leaves
2 tablespoons salt-packed capers, rinsed and patted dry
Kosher salt and freshly ground black pepper

Steps:

  • Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 350 degrees.
  • While the oil is heating, whisk together the garlic, anchovies, serrano, red wine vinegar, honey, scallions, walnuts and extra-virgin olive oil in a bowl large enough to toss all of the Brussels sprouts. Keep the bowl near the stovetop.
  • Working in batches, deep-fry the Brussels sprouts until the edges begin to curl and brown, about 3 minutes. To the last batch, add the parsley and capers (stand back-the capers will pop and sputter!). Give the contents of the pot a stir. When the color of the parsley becomes a deeper, more saturated shade of green, about 30 seconds to 1 minute, remove the contents of the pot with a skimmer and place directly in the bowl of dressing. Toss to coat. Add salt and pepper to taste.
