HOW TO DEEP FRY A HAM
Around the holiday season, many people like to serve deep fried turkey to their guests. Whether you're prepping a Chistmas ham or curating your Thanksgiving feast for a crowd, you can step up your holiday menu with a deep fried ham instead! Follow our step-by-step guide and make a delicious deep fried ham that will not disappoint those around the dinner table.

Steps:
- In a mixing bowl, combine the onion powder, garlic powder, brown sugar, mustard, and apple cider.
- Mix together until dissolved.
- Add oil to the deep fryer, filling the stock pot to three quarters of the way full. Leave enough space so the oil does not overflow when the ham is submerged. Heat until 375 degrees Fahrenheit.
- Fill the marinade injector with brine and inject the ham in multiple spots to disperse the flavor. Use as much of the brine as possible.
- Dry the ham with the lint-free towel so there is no excess moisture on the ham.
- Cut a slit through the ham and slide the ham onto the poultry wrack.
- Lower the ham into the fryer. Cook each pound of the ham for 7 minutes or until the core temperature of the ham is 160 degrees Fahrenheit.
- Remove the ham from the fryer and allow the excess oil to drain off. Carve the ham and enjoy!

- Thaw ham completely and pat dry.
- (When deep frying moisture on the surface will cause a lot of oil popping and splattering, be careful) Marinade (if using) Inject whatever marinade you want to use into several place throughout the ham (I recommend 10-15 spots).
- Place the ham in the steamer basket that comes with most turkey deep fryers and CAREFULLY and SLOWLY lower the ham into the hot oil (350-375 degrees).
- There is a lot of water in the ham!
- Since I couldn't put it in otherwise you must cook the ham about 3 1/2 to 4 minutes per pound depending on the size of the ham and how much it cools down the oil.
- Obviously a smaller ham will take less time if the oil is hotter and a bigger ham will take longer even with the oil hot.
- If when you start the oil cools down don't worry just watch the temp and adjust your cooking time.
- Also for a bigger ham you would want to use less oil in the deep fryer so it doesn't overflow when the ham is lowered inches.

- 1. Combine flour, baking powder a pinch of salt and corn starch blending well.Set aside. Sprinkle chops or ham pieces with Cajun seasoning on all sides. Dip the chops or ham into the buttermilk and then dredge into flour mixture.
- 2. Preheat oil in deep fryer to 350^ degrees. Once the oil is hot, slide the chops or ham pieces carefully into the deep fryer and cook about 6 to 8 minutes, or until nicely browned, making sure the chops are submerged. Do in batches if needed to avoid overcrowding the fryer.
- 3. Mustard Sauce: Mix all ingredients together. Drizzle over cooked meat just before serving, or serve on the side at the table.
DEEP FRIED SPIRAL SLICED HAM
Make your glazed spiral ham crunchy and bacony on the outside while moist and juicy on the inside. Only in TX would we deep fry meat that is already cooked!

- In an outdoor turkey fryer kind of contraption heat several gallons of peanut oil to 375.
- You can use the oil left over from frying a cajun turkey- it is seasoned and hot already and just perfect.
- Lower the ham - unwrapped of course- into the hot oil.
- Do not do anything to the ham- just remove from package.
- As the ham fries it will 'seal' the outside with a type of crust like crispy bacon and seal all the juices inside.
- Fry about 7-9 minutes- longer will give you MORE crust, shorter will produce less crust. You may need to make this recipe a few times before you find the perfect 'doneness' for you.
- Carefully remove from oil and let drain and cool a little.
- Slice as you would any spiral cut ham.
- Serve!

- BRINE: In a large plastic container or bag, mix all of the brine ingredients until dissolved. Place the ham in the brine and refrigerate overnight. Before frying, take out the ham and dry really well. HAM: Prepare the deep fat fryer according to manufacturer directions. Fry for 7-1/2 minutes per pound. Let it stand for 15 minutes once fried. GLAZE: Combine all ingredients in a medium saucepan on low heat and let reduce until syrupy consistency. Let the glaze cool slightly and then pour it over the top of the ham, serve extra glaze on the side at the table.

- On a plate, place enough flour to cover the plate.
- Then rolled your ham in the flour until well coated.
