These homemade fried tortilla chips are awesome with the Mexican-style Hamburger HelperĀ®, salsa, or any kind of Mexican dish.

1 pound white corn tortillas
1 cup vegetable oil for frying
1 pinch salt to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
  • Slice tortillas with a pizza cutter into desired sizes.
  • Fry 1/2 of the tortillas in the hot oil until golden brown, 3 to 5 minutes. Transfer to paper towels to drain excess oil. Season with salt. Repeat with remaining tortillas.

2 nice size thin filets (cut into 2x2 pieces)
canola to deep fry
1 tsp salt,pepper and everglade seasoning
1/2 c milk
1 c yellow cornmeal

Steps:

  • 1. SOAK FISH IN MILK FOR ABOUT 30 MINS THEN DRAIN.
  • 2. PUT CORNMEAL IN A BOWL WITH A LID AND PUT THE SEASONINGS AND SHAKE.REMOVE LID PUT THE FISH IN ,PUT THE LID ON AND SHAKE.
  • 3. DROP IN HOT OIL COOK ABOUT 5 MINS.TOTAL.
  • 4. SERVE WITH LEMON,TARTER SAUCE AND FRIES.ENJOY!!!!

A very great and tasty way to cook salmon:) I love making this anytime I get my hands on salmon:) I am sure you will all enjoy it as well:)

4 eggs, wash for dipping
2 tablespoons season salt or 2 tablespoons lemon salt
4 cups flour
6 lbs salmon
2 tablespoons sweet basil
1 tablespoon black pepper

Steps:

  • First fillet salmon, and then skin salmon very carefully, with a sharp fillet knife, trim salmon, with no bones attached.
  • When fillet is done, slice salmon into thin strip width lenght not tail to head length.
  • Mix all dry ingredients togther.
  • mix all eggs into a bowl, scramble
  • take strips of salmon, dip into the flour mixture first then into the egg wash and then back into the flour mixture.
  • then carefully use a home deep fryer and cook until golden brown color, serve with homemade fries and lemons.
  • various dry herbs can be used to your liking, this is just a beginning of what you can use for the flour mixtures.

Deep-Fried Sweet Potato Chips With Mozzarella image

Although you could slice these by hand a mandoline is recommended for this, it is a lot easier as the sweet potatoes have to be sliced paper thin. I have made these using Gorgonzola cheese also, and sprinkled them with seasoning salt, you can really use any kind of cheese that you desire. Of course you can use more than 5 sweet potatoes. These are really good.

5 lbs sweet potatoes or 5 lbs yams, peeled
peanut oil (for deep frying, you can use vegetable oil in place of peanut oil)
coarse salt
black pepper (optional)
3 cups mozzarella cheese, shredded (or use any cheese for this)

Steps:

  • Using a mandoline slice the sweet potatoes into 1/16-inch thick slices, and pat them dry with paper towels.
  • In a deep fryer heat enough oil to measure about 3 inches; heat oil to about 380 degrees (can be a little less).
  • Fry the sweet potato slices in batches until they are golden brown.
  • Transfer the chips to a paper towel to drain fat.
  • Place on a baking sheet and sprinkle with coarse salt and black pepper if desired.
  • Set oven to broil heat.
  • Sprinkle the shredded cheese evenly on top of the fried sweet potatoes.
  • Broil for about 4 minutes, or until the cheese melts.
  • Place onto a serving dish.
  • Delicious!

Steps:

  • Cut potatoes into ~10mm square chips
  • Cook chips at 140C in ~8cm of oil for 8minutes, making sure they're cooked through but before they start to colour
  • Take out and drain, and heat oil to 180C (you could pause the cooking for a little while)
  • Cook the chips until coloured nicely, if doing a lot you might need to cook in batches to avoid the oil cooling down too much.
  • Remove with a slotted spoon and drain in a colander and salt.
