1 lb chicken liver, rinsed and well drained
1/2 cup milk
1 egg, beaten
1 cup flour
1 tablespoon salt
1 1/2 teaspoons pepper (or to taste)
1 teaspoon poultry seasoning

Steps:

  • Dip chicken livers in milk-egg wash (blended together).
  • Roll or toss in seasoned flour; shake off excess.
  • Preheat oil to 375F and deep fry around 7 minutes or until done.
  • The remaining milk-egg wash and seasoned flour are good for cut up chicken, cooked by your favorite method (panfried or ovenfried).

Number Of Ingredients 9

16 ounces chicken livers
1 cup flour
2 teaspoons salt
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon ground ginger
2 eggs, slightly beaten
8 ounces panko breadcrumbs
peanut oil (for frying, at least 2 inches deep in deep fryer)

Steps:

  • Heat oil in deep fryer 325 degrees F.
  • Place flour,salt,cayenne,black pepper,and ginger.
  • in a shallow dish. Mix well.
  • Put eggs in a shallow dish.
  • Pour Panko crumbs into a shallow dish.
  • Coat livers with seasoned flour and shake off excess.
  • Dip in beaten eggs and then coat with Panko bread crumbs.
  • Fry a few at a time and cook until golden brown and
  • livers are done. Serve with coleslaw or fresh salad.

1 pound chicken liver
cornstarch
oil for deep-frying
salt and pepper

Steps:

  • 1. Cut each chicken liver in 2 or 3 pieces. Dredge lightly in cornstarch. 2. Heat oil. Add livers, about half a cup at a time, and deep-fry until golden. Drain on paper toweling. 3. Serve hot, sprinkled with salt and pepper (or with a pepper-salt mix--see Seasonings and Sauces, Basic Pepper-Salt Mix), and with a side dip of hot mustard or lemon juice. NOTE: Chicken livers can be cut in smaller pieces, deep-fried as above, and then served, speared on toothpicks, as hors d' oeuvres. VARIATION: * Instead of dredging livers in cornstarch, toss gently in a mixture of 1 egg white, 1 tablespoon cornstarch, 1 teaspoon sherry and 1/2 teaspoon soy sauce.
